BUFFALO CHICKEN GARBAGE BREAD

Steps:
- Preheat oven to 400 degrees. Open pizza crust and press it into a rectangle on a cookie sheet or parchment paper.
- Spread ranch dressing on top of pizza crust. Add 1/4 cup buffalo sauce on top of the ranch and spread evenly.
- In a small bowl, mix the chicken with the remaining 1/4 cup of the buffalo sauce. Place chicken on top of pizza crust in an even layer.
- Sprinkle the cheddar and mozzarella cheese over all.
- Starting at one of the short ends, roll the crust into a log. Place seam-side down on the baking sheet. Bake for 15-20 minutes or until golden brown. Let cool slightly and serve.

- Preheat oven to 425 degrees F. Spray a 9 x 13-inch baking dish with cooking spray.
- In the prepared baking dish (or in a separate bowl), stir together uncooked pasta, marinara sauce, water, about ¾ of the package of pepperoni, and salt. Cover tightly with aluminum foil and bake for 25 minutes.
- Remove dish from oven, take off cover, and give the pasta a stir. At this point it should be almost done, but still a bit firm ("al dente").
- Sprinkle mozzarella over the top and place remaining pepperoni slices on top of the cheese. Return the dish to the oven and bake, uncovered, for about 5-10 more minutes (or until cheese is melted and pasta is tender).
- Garnish with optional grated Parmesan cheese and fresh herbs, if desired

GARBAGE BREAD

- Preheat oven to 425°. Line a baking sheet with parchment paper and set aside.
- In a large skillet over medium-low heat cook bacon until it's crisp. Remove the bacon from the pan and set aside. Drain most of the grease.
- In the same skillet, heat to medium high. Add the onions and ground beef into the skillet and cook until the the onions are soft and the meat is cooked through. Drain anymore excess liquid/grease from the pan. Place the skillet back on the heat and turn the heat to low. Add bacon back into the pan and season with the steak seasoning. Add in the Velveeta and stirring continuously cook until the cheese is melted. Remove the pan from the heat.
- Roll the pizza dough out onto the prepared baking sheet. The dough should be approximately a 15×10 rectangle. Spread the meat mixture evenly on top, leaving an inch at the edges to allow for spreading. Sprinkle the grated cheese on top of the meat. Roll up the pizza dough, starting with the long sides and pinch the crust together to seal. Bake seam side down for 15-20 minutes, or until golden brown. Allow the bread to cool for 5-10 minutes before slicing.
BEST PIZZA DOUGH RECIPE
I call it the best pizza dough recipe simply because I've been messing with pizza dough recipes for a few years now, and this is my best so far. It has taken quite a lot of trial and error with different flours; all-purpose, bread-flour, whole wheat, unbleached...even cake flower. I also have been trading out ratios for yeast...

- 1. In a large mixing bowl combine flour, salt, yeast and sugar.
- 2. Add water and 2 Tablespoons of the olive oil and mix together with hands. (if you use a stand mixer instead of doing it by hand be sure to grease the paddle of the stand mixer.)
- 3. Kneed with hands until it makes a smooth ball. Side note: If dough is too stiff and breaks apart easy add one Tablespoon of water until it lets up. Or if it is too sticky and won't form a smooth ball add one tablespoon of flour at a time until it behaves.
- 4. Dust a clean counter surface with flour and turn dough out onto the counter.
- 5. Kneed dough for about 5 minutes to get the gluten acting all elastic-like! You have to kneed until the dough is not the least bit sticky and is flexible enough to be pulled thinly. If you hold the dough up to the kitchen light you should be able to pull the dough until it is so thin you can see the light through the dough. That's when you know it is perfect. Beware you can over kneed dough... in which case I say enjoy your yeast rolls, because if you over kneed it to the point the gluten is so taunt that it starts to tear easy when stretched yeast rolls are one of the only options for not wasting the dough.
- 6. Grease a large mixing bowl with remaining 2 Tablespoons of olive oil and place dough ball in bowl and cover with a clean cloth.
- 7. Allow pizza dough to sit in bowl for 2 hours where it will almost double in size.
- 8. Remove dough from bowl and turn back out onto a floured counter top. Cut dough ball equally in half.
- 9. You now have two dough chunks ready to be tossed into 14 inch pizzas!!! :-D
FRENCH BREAD PIZZAS

- For the pizza base: Preheat the oven to 375 degrees F.
- Lay the rolls cut-side up on a large baking sheet. Top each half with marinara sauce (or pesto for the tomato basil pizzas), followed by the mozzarella. Then add your toppings of choice. See below for directions for assembling specific pizzas.
- Once the pizzas are assembled, put the baking sheet on the lowest rack for 8 to 10 minutes. Then turn up the heat to 425 degrees F and put the sheet on the highest rack until the cheese starts to bubble a bit and turns golden. Remove and serve immediately! Cut the pizzas in half right across the middle so there are mini French bread pizzas for everyone.
- Pizza Varieties:
- For the Canadian bacon and pineapple pizzas: Top with the Canadian bacon slices and pineapple and bake according to the directions above.
- For the Greek salad pizzas: Leave off the sauce and brush the sliced rolls with 2 tablespoons of the olive oil; sprinkle with salt and pepper. Top with the mozzarella and bake according to the directions above.
- While the pizzas are baking, toss together the olives, feta, tomatoes, cucumbers, parsley, the remaining 3 tablespoons olive oil and salt and pepper to taste in a medium bowl. Top the cooked pizzas with the chopped Greek salad.
- For the pepperoni and jalapeno pizzas: Top with the pepperoni and jalapeno slices and bake according to the directions above.
- For the tomato basil pizzas: Use pesto instead of the marinara sauce, and top with the tomato slices. Drizzle with the olive oil and sprinkle with salt and pepper. Bake according to the directions above. Top the cooked pizzas with basil leaves.
- For the hamburger pizzas: Heat the olive oil in a skillet over medium-high heat. Add the ground beef, red pepper flakes and salt and pepper and saute until the beef is no longer pink. Top the rolls with the sauteed ground beef and bake according to the directions above.
- For the hamburger taco pizzas: Top with the Cheddar and ground beef and bake according to the directions above. Top the cooked pizzas with the chopped lettuce and tomatoes.
BUBBLE PIZZA
This is my granddaughter's most requested meal when she comes to visit. It's a meal in itself, but a salad would go nice with it. Have fun experimenting with your favorite pizza toppings.

- Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking dish. Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Stir in pepperoni, and cook until browned. Drain excess fat. Stir in pizza sauce. Remove from heat, and set aside.

- Cook rigatoni as directed on box & drain.
- Brown ground beef, pepper, and onion in skillet, drain, and then mix with rigatoni.

- 1. Pizza Dump Bread Take 2 frozen bread doughs, thaw, let rise. Then spread out to almost the size of the cookie sheet. Next, add your toppings. (sliced pepperoni, provolone cheese, capacola, hard salami slices, or your choice - about 12 slices ea.) Roll the filled dough to form a Jelly Roll. - Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
- Heat a large skillet over medium heat. Add the beef and cook, stirring to break it up into small crumbles, until cooked through, 8 to 10 minutes. Meanwhile, roughly chop half of the cheese, leaving other half as slices. Set aside.
- Using a slotted spoon, remove the beef from the skillet and transfer to a large bowl; discard the fat and liquid in the pan. Let the beef cool completely in the bowl, then stir in the chopped cheese.
- On a lightly floured work surface, roll the dough into a 20-by-14-inch rectangle. Arrange the beef and cheese mixture evenly on one half of the dough, starting on the shorter end and leaving a 1-inch border on the sides. Drizzle 2 tablespoons ketchup evenly over the beef mixture and the uncovered half of the dough; repeat with all the mustard, and then the red onion. Lay down the remaining cheese slices evenly over the half of the dough with no beef mixture, leaving a 1-inch border on the sides. Arrange the bacon pieces and 24 dill pickle chips just over the beef mixture.
- Working from the short side with the beef mixture, tightly roll up the dough into a log, jelly-roll style. Pinch the open ends together to seal, then tuck them underneath the log. Transfer the log, seam side-down, to the prepared baking sheet, brush all over with water and sprinkle with sesame seeds. Bake, rotating the pan halfway through, until the bread is golden brown, about 40 minutes.
- While the bread bakes, whisk together the mayonnaise, onion flakes, sugar, a pinch of salt and pepper and the remaining 3 tablespoons ketchup, 2 tablespoons finely chopped dill pickle chips and 1 teaspoon pickle brine in a small bowl. Taste, and season the special sauce with additional salt if needed. Let the bread cool for 10 minutes. Slice into 8 pieces and serve warm with the special sauce.
