Steps:
- Position the oven rack in the center of the oven and preheat to 450 degrees F.
- Roll out the dough on a lightly floured work surface to 1/2-inch thick. Transfer the dough to a heavy large baking sheet. Using a fork, pierce the dough all over. Drizzle the oil over the dough. Sprinkle with the thyme and salt. Bake until golden, about 15 minutes.
PIZZA BIANCA - WHITE PIZZA SAUCE AND TOPPING IDEAS
Steps:
- Place a small saucepan over medium heat. Add and melt butter. Add flour and whisk until fully incorporated. Cook for a minute.
- Slowly add milk, whisking continuously until fully incorporated. Bring back to the simmer, whisking.
- When the sauce has thickened, whisk in garlic powder (or other flavouring ideas). Remove from heat and whisk in the cheese.
- Season with salt.
- Spread sauce on pizza base (as you would tomato sauce) and top with favourite toppings.
PIZZA BIANCA
Recipe from Cook's Illustrated. This is a VERY wet dough! It will not roll, so don't try. Recipe is designed for an 18x13 baking sheet; a smaller pan can be used but will need a longer baking time. If you don't have a pizza stone, set the rack in the lowest position, preheat oven to 500, and bake an additional 3-5 minutes.

Steps:
- Place towel under stand mixer to prevent wobbling. Mix flour, water and table salt in bowl of stand mixer fitted with dough hook, on low speed, until no dry flour remains, 3-4 min, scraping sides and bottom of bowl occasionally. Stop mixer and allow to stand 20 minutes.
- Sprinkle yeast and sugar over dough. Knead on low speed until fully combined, 1-2 minutes. Scrape sides and bottom of bowl, then turn speed up to high and knead until dough is glossy, smooth and pulls away from sides of bowl, 6-10 minutes. (Dough will only pull away while mixer is running; once mixer is stopped, it will fall back to sides.).
- Smear large bowl with 1 tbsp olive oil with fingers, scraping excess onto a rubber spatula. Use oiled spatula to transfer dough to oiled bowl. Pour 1 tbsp oil over dough. Flip dough once to cover thoroughly with oil. Cover tightly with plastic wrap. Allow to rise at room temperature until nearly tripled in size, 2 to 2 1/2 hours.
- One hour before dough is ready, place oven rack in the middle of the over and position pizza stone on rack. Heat oven to 450.
- When dough is risen, coat rimmed baking sheet or jelly roll pan with 2 tbsp oil. Using rubber spatula, turn dough out onto sheet, along with any oil in bowl. Use fingertips to spread dough to edges of pan, being careful not to tear it. (Dough will not reach corners snugly. If dough resists stretching, allow it to rest 5-10 minutes before trying again.) Let dough rest in pan 5-10 minutes, until bubbly. Prick surface 30-40 times with dinner fork. Sprinkle with kosher salt.
- Bake 10-15 minutes. Sprinkle top with rosemary and rotate pan, then bake another 10-15 minutes, until golden brown. Transfer to cutting board and brush with remaining 1 tbsp olive oil. Slice and serve immediately.

I made this up tonight when I couldn't decide what to have for dinner. Take the ingredient measurements with a large vat of salt.

Steps:
- Preheat oven with pizza stone to 500 degrees F.
- Parbake dough for a little while--no more than 4-5 minutes. Watch it, when it gets a tiny bit done-looking, take it out.
- Toppings: Sprinkle garlic on crust, followed by spinach, then cheese, then sundried tomatoes.
- Sprinkle with EVOO and red pepper flakes and sea salt.
- Bake at 500 degrees till finished (no more than 10 minutes, probably).
- Enjoy!

This is just the pizza for anyone wishing to try something different and delicious. No tomato sauce on this one. A favorite in my house and with guests.

Steps:
- Place ready made pizza crust on baking pan. I use Boboli brand in large or extra large.
- Preheat oven to 450°F.
- Sauté onions and garlic in little olive oil until slightly tender but still crunchy.
- Spread onion and garlic on top of pizza crust and cover with mozzarella cheese. Top with parmesan cheese and red pepper flakes. Bake 10 minutes. Cool a few minutes then cut and serve.

- Preheat your oven to 500 degrees F / 260 degrees C and set a baker’s half sheet to the side. If you are hand-stretching your dough: I like to rub a small amount of olive oil into my hands first; this allows me to shape the dough easier without it ripping accidentally from friction.
- Press the dough down with the palm of your hand into a disk shape, then use your fingertips to gently press down on the dough disk, further flattening it.
- To further extend the dough, I prefer to press one palm on top of one side of the dough and with the other hand lift the alternative side of the dough and gently work the dough outward, pulling very gently with the tips of my oiled fingers (like a very discrete “come hither” motion) to slowly stretch the dough out. Rotate slightly and repeat until the dough is shaped and stretched to your liking. If you find that the dough starts to snap back or is beginning to tear, allow the dough to relax for a minute or two before proceeding again. Transfer your stretched dough to a sheet of parchment paper.
- If you are using a rolling pin: I prefer to place my dough between two sheets of parchment paper to avoid the dough sticking to my rolling pin, but if you prefer you can also sprinkle a bit of flour over the dough ball as well as wiping some over your rolling pin by hand to prevent sticking instead. Once the dough has been rolled to your preferred size and shape, peel the top layer of parchment paper off (if using). The bottom layer that the dough is resting on can be utilized for your baking sheet. If you find that the dough starts to snap back or is beginning to tear, allow the dough to relax for a minute or two before proceeding again. Shape your dough. If you prefer a classic pie-shape with a thicker crust compared to the center of your dough, I suggest hand-stretching your dough. If you prefer your pizza to be an even thickness, I suggest rolling your dough out with a rolling pin.
