CHICKPEA SHAWARMA PITAS WITH HUMMUS-DILL DRESSING
Covered in spices and roasted to crispy perfection, chickpeas are a natural swap in these Mediterranean-inspired shawarma pitas. For a "cook once, eat twice" approach, transform any leftovers into a chickpea shawarma salad: Layer the vegetables with roasted chickpeas and top it with dollops of hummus-dill dressing.

Steps:
- For the chickpeas: Preheat the oven to 425 degrees F. Combine the chickpeas, olive oil, cumin, coriander, paprika, cayenne pepper, cinnamon and a pinch each of salt and pepper in a large bowl. Toss to coat.
- Spread on a rimmed baking sheet and roast until browned and slightly crispy, 25 to 30 minutes.
- Wrap the pitas in foil and place in the oven for the last 2 minutes of cooking to warm.
- For the hummus-dill dressing: Meanwhile, whisk together the hummus, lemon juice, dill and garlic. Thin with water, if needed, for desired consistency.
- For serving: Divide the cucumber, lettuce, tomato and red onion among the pitas and top with chickpeas. Drizzle with hummus dressing, wrap pitas around the filling and serve.

Steps:
- Combine chickpeas, tahini, water, lemon juice, garlic and tamari in food processor and process until well blended and smooth.
- Stir in the parsley.
- Toast pitas until they begin to puff; slice almost completely through into two circles.
- Spread 1/3 cup tahini mixture over half of each pita; top with 1/6 of the sliced scallions and slices of 1/2 a tomato. Top with other pita circle and serve.

HUMMUS, ARTICHOKE, AND TOMATO PITA SANDWICH
This sandwich is a combo of all my favorites...hummus, tomatoes, artichokes,pita bread, and cheese. What's not to love?! I like it both cold or warm, just depends on what I'm in the mood for. Its perfect for a light lunch or cut it into wedges and serve as an appetizer. Make sure you don't bypass toasting the pita bread. I'm not sure why, but it makes all the difference in taste and texture. I've used both commercially prepared and homemade hummus. They both work fine, but if you have the time definitely go with your own mix. Otherwise give Gingerbee's Hummus Amongus (#22060) a whirl...yum! If you don't have gruyere cheese, any plain old swiss works just fine. Enjoy!

- Toast pita bread rounds (I just place them in my toaster over, two at a time).
- Spread 2 tbsp hummus on two of the toasted pitas.
- Sprinkle snipped green onions over hummus
- Divide drained artichokes and tomato slices and layer them on the pitas.
- Place 1 slice of gruyere on each
- For cold sandwich, place remaining pitas on top of each and serve.
- For warm sandwich, put the layered pita back in oven/toaster oven until cheese is melted. Place remaining 2 pitas on top and serve.

PITA PIZZAS WITH HUMMUS, SPINACH, OLIVES, TOMATOES & CHEESE
These are inexpensive, easy, quick to put together and can be served room temp or right out of the oven. Cut into wedges like small pizza slices. They never last long and you can really use any toppings. I like to make my own hummus, but it isn't difficult if you want to make your own. But I get a small container which is enough for about 8 pitas for under $3, a roasted red pepper hummus right from the grocery store so why not. Then my favorite toppings are black or kalamata olives, goat or feta cheese, carmelized onions, fresh basil, fresh baby spinach, diced tomato or sundried tomatoes. You can add anything. Just lightly toast in the oven top, cook again for just 5 minutes and done! Slice like a pizza and serve. Great easy treats.

- Pitas -- Brush with a little olive oil, salt and pepper on each pita. Lightly toast in a 400 degree oven until slightly brown.
- Top -- Top with hummus, then your favorite toppings. I like olives, baby spinach, tomatoes, feta, a little black pepper and some Italian seasoning. But NOTE -- you can add any of your favorite toppings.
- If you add onions, mushrooms, peppers, zucchini, artichokes, etc., I pan saute lightly first so they are pre-cooked before adding to the pizza. The pizzas are only cooked a few minutes so just have everything ready.
- Bake -- Another 5 minutes in the oven, just to heat everything up and soften the cheese.
- Finish -- Mix the balsamic vinegar and olive oil and just simply drizzle over the top after it comes out of the oven. Perfect finishing touch. Just cut in Pizza slices and serve. I like to use my pizza cutter and 6 slices per pita.
- ENJOY a very simple inexpensive quick appetizer.
