I created this recipe for my mother who loves Pistachios. Since the first slice was served I get requests for this cake all the time. Friends and family actually get mad when I don't bake one for a party or cook-out. The cake comes out extremely moist and the frosting is to die for. I use the frosting method for all frostings, by changing the pudding flavor (chocolate pudding for chocolate frosting etc...). I've always use instant pudding mix in this recipe, so I'm not sure how sugar-free or non-instant puddings will work. Have fun and enjoy, I hope it's as big a hit for you as it is for me.

10 1/4 ounces white cake mix
3 1/2 ounces instant pistachio pudding mix
4 eggs
1/4 cup oil
1/2 teaspoon almond extract
1 1/2 cups water
3 1/2 ounces instant pistachio pudding mix
1 pint heavy whipping cream

Steps:

  • Mix all the cake ingredients together and pour into two 9" cake pans or one bunt pan.
  • Place in oven for 35 -45 minutes at 350 degrees or until a toothpick poked into the center of the cake comes out cleanly. Let the cake cool completely before frosting.
  • Pistachio Icing.
  • Place your bowl and beaters from your electric mixer in the fridge for 10-15 minutes.
  • Once the bowl and beaters are chilled start to mix the heavy cream and one box of Instant Pistachio pudding slowly at first then gradully increase to the maximum speed of your mixer till you have soft peaks. Don't beat it for too long or you'll have Pistachio butter -- LOL.

1 (18 ounce) package yellow cake mix
3 (3 1/2 ounce) packages instant pistachio pudding mix
1 cup water
1 cup vegetable oil
4 eggs
1 teaspoon vanilla extract
1 cup powdered sugar
1 tablespoon butter or 1 tablespoon margarine, softened
2 -3 tablespoons milk

Steps:

  • Add the dry cake mix, pudding mixes, water, oil, eggs, and vanilla to a large mixing bowl.
  • Beat, using an electric mixer, on low speed for 1 minute.
  • Pour batter into a greased 9-inch bundt pan.
  • Bake at 350° for 60-70 minutes or until a wooden pick comes out clean.
  • Cool for 10 minutes in pan; then turn out onto a wire rack to let cool completely.
  • In a small bowl, mix together the glaze ingredients until smooth.
  • Drizzle over cake.

3 egg whites (or package instructions)
1/4 cup oil (or per package)
1 1/4 cups water (or per package)

2 cups whole milk
1/8 cup powdered sugar
8 ounces Cool Whip

Steps:

  • mix and bake cake according to package in 13x9 in pan.
  • while hot poke holes with a small spoon handle or skewer.
  • mix pudding mix with powdered sugar, whisk in milk.
  • while runny immediately pour over the warm cake.
  • cool completely and frost with cool whip or pudding (or mix).
  • refrigerate at least 1 hour, or overnight.

nonstick cooking spray with flour
1 (16.25 ounce) package white cake mix
1 cup water
½ cup vegetable oil
3 large eggs
⅔ fluid ounce green gel food coloring (1 tube)
2 cups cold milk
2 (3.4 ounce) packages instant pistachio pudding mix
1 (8 ounce) container frozen whipped topping, thawed
2 tablespoons chopped pistachios

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch glass baking dish with floured cooking spray.
  • Place cake mix in a large mixing bowl. Add water, vegetable oil, eggs, and food coloring; whisk until smooth. Pour batter into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, 23 to 28 minutes. Remove from the oven and let cool, about 30 minutes.
  • When the cake is almost finished cooling, whisk together cold milk and pudding mix in a bowl for 2 minutes. Let sit until soft and thickened, about 5 minutes.
  • Poke holes all over the top of the cooled cake using the handle of a clean wooden spoon. Pour pudding over the cake, spreading evenly to the edges. Spread whipped topping over the pudding layer. Sprinkle pistachios over top.

Believe it or not, this light cake stays fresh in the fridge up to two weeks assuming it lasts that long! I personally like it any time of the year but it is particularly good in the summer or whenever you need something light and refreshing but without all of the extra calories. Enjoy!

  • Mix all ingredients together.
  • Spray 13 x 9 pan.
  • Bake at 350°F for 30 - 35 minutes. Test cake top by lightly touching the center which should feel slightly firm and will slightly spring back to the touch.
  • (Cool cake completely before frosting.).
  • Mix together frosting ingredients and spread over cake.

  • Beat at medium speed for 2 minutes.
