Popular served with tea in Victorian days, scones are making a big comeback. Apricots and nuts are stirred into the batter in this recipe I baked for the theme shower. Spread with Devonshire cream, they delighted the bride-to-be and guests. -Robin Fuhrman, Fond du Lac, Wisconsin

DEVONSHIRE CREAM:
3 ounces cream cheese, softened
1 tablespoon confectioners' sugar
1/2 teaspoon vanilla extract
1/4 to 1/3 cup heavy whipping cream
SCONES:
2 cups all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/3 cup cold butter
1/2 cup chopped dried apricots
1/2 cup chopped pecans
1 teaspoon grated orange zest
1 cup plus 2 tablespoons heavy whipping cream, divided
Jam of your choice

Steps:

  • For Devonshire cream, in a large bowl, beat the cream cheese, confectioners' sugar and vanilla until fluffy. Gradually beat in enough cream to achieve a spreading consistency. Cover and chill for at least 2 hours. , For scones, combine the dry ingredients in a large bowl. Cut in butter until mixture resembles fine crumbs. Add the apricots, pecans and orange zest. With a fork, rapidly stir in 1 cup whipping cream just until moistened. , Turn onto a floured surface; knead 5-6 times. Divide in half; shape each into a ball. Flatten each ball into a 6-in. circle; cut each circle into eight wedges. Place 1 in. apart on an ungreased baking sheet. Brush with remaining whipping cream., Bake at 375° for 13-15 minutes or until a toothpick inserted in the center comes out clean. Remove from pan to a wire rack. Serve warm with Devonshire cream and jam.

2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/2 cup butter or 1/2 cup margarine
3/4 cup maraschino cherry, chopped and drained
1/2 cup pistachio nut, chopped and shelled
1/2 cup milk
1 egg, separated
4 teaspoons raw sugar or 4 teaspoons granulated sugar

Steps:

  • Heat oven to 375°F
  • Grease cookie sheet with shortening or spray with non-stick cooking spray.
  • In large bowl, mix flour, 2 tablespoons sugar, baking powder and cinnamon.
  • With pastry blender or fork, cut in butter until mixture resembles coarse crumbs.
  • Stir in cherries and pistachios.
  • In small bowl, blend milk and egg yolk; add to flour mixture.
  • Stir just until dry ingredients are moistened.
  • On lightly floured surface, gently knead dough several times.
  • Divide dough in half; place on cookie sheet.
  • Pat each half into 6-inch round.
  • Cut each round into 6 wedges; do not separate.
  • In small bowl, beat egg white.
  • Brush top of each round with egg white; sprinkle with raw or granulated sugar.
  • Bake 17-22 minutes or until golden brown.
  • Cool 10 minutes before serving.

These amazing scones can be eaten any time of the day. After playing around with a couple of scone recipes I came up with these "can't get enough" Scones. The apricot honey butter is a absolute tasty bit of creamy deliciousness. Share these mouth watering melt in your mouth delights at your next brunch or treat the office team. They will love you for it.

Number Of Ingredients 14

2 cups all-purpose flour
1/3 cup sugar
2 1/2 teaspoons baking powder
1/3 cup of chopped pistachios
1/3 cup chopped cherry craisins
1 large orange, zest of
1/2 cup mandarin orange, drained
1/2 cup cold butter or 1/2 cup margarine
1/4 cup milk
1 slightly beaten egg
2 tablespoons sugar (for topping)
1/2 cup butter (butter is fresher tasting) or 1/2 cup margarine (butter is fresher tasting)
1 -2 tablespoon of raw wild natural honey
1/3 cup apricot preserves

Steps:

  • Preheat oven to 400 degrees. Mix flour, sugar, baking powder, pistachio's, chopped cherry crasins, and orange zest together. Cut butter into small chunks and mix with dry ingredients. Use pastry cutter or fork and cut butter into dry ingredients until texture resembles course cornmeal. Mix milk, egg, and oranges together. Pour wet ingredients into dry ingredients. Stir until mixture pulls away from the sides. If mixture seems a little wet add a little more flour until it pulls away easily. Pour dough unto floured surface and knead 11 times. Remove dough carefully and place on cookie sheet forming a circle. Do not over handle the dough! Cut into 8 slices but don't separate pieces. Sprinkle with sugar and bake in oven until golden brown about 15-20 minutes. Serve warm with Apricot Honey Butter (recipe below).
  • In small bowl whip butter until light and fluffy. Mix in honey and preserves by hand until blended. Adjust taste by adding a little more honey and preserves if necessary. Spread on warm scones. Store in air tight container in refrigerator.

100g unsalted butter , melted, plus a little extra for the tin
200g light muscovado sugar
½ tsp fennel seeds
1 large egg
120g plain flour
50g pistachios , roughly chopped
1-2 tbsp milk
6 large ripe apricots , halved and stoned
65g golden caster sugar
80g unsalted butter , softened
1 egg
100g pistachios , ground to crumbs

Steps:

  • Heat oven to 200C/180C fan/gas 6 and butter and line a rectangular baking tin, approx 20 x 25cm. To make the frangipane, beat together the sugar and butter until fluffy, then add the egg and pistachios.
  • In a bowl, stir together the muscovado sugar, fennel seeds and melted butter with a pinch of salt. Add the egg and stir vigorously, then tip in the flour and half the pistachios and fold until well combined and no streaks remain. Add the milk to loosen.
  • Spoon two-thirds of the batter into the tin and smooth with the back of a metal spoon or spatula, then arrange the apricot halves on top and press into the batter. Dot the frangipane around the batter too, then top with the remaining spoonfuls of batter so that it's part covering the frangipane and apricots. Scatter over the rest of the pistachios. Bake for 25-30 mins until a skewer comes out with some crumbs that are a little moist, but not raw. Cool completely in the tin, then cut into 12 squares.

  • Mix dry ingredients. Cut in butter then add the wet ingredients, chocolate chips and craisins. Mix just until blended.
  • Flour counter. Knead & pat into 1/2 inch thick circle. Cut like a pizza.
  • Place on lightly butter cookie sheet leaving space between. Sprinkle with granulated sugar. Bake 15-20 minutes at 375 degrees or until golden brown. Makes about 8 scones.

1/2 teaspoon salt

3/4 cup nonfat milk
1/2 cup dried cranberries
1/2 cup chopped pistachio nut

Steps:

  • Preheat oven to 425 degrees.
  • Spray a cookie sheet with non-stick cooking spray or line with parchment paper.
  • In a large bowl, combine the flour, cream or tartar, soda, salt and orange rind.
  • Add butter and with a pastry blender, cut in butter until mixture is crumbly.

My friend loves a good cherry scone, and can't bake or she thinks she can't, so when she pops in for a cuppa, I make her these. It only takes 15 mins and they are lovely with fresh butter. A light touch is all you need.

225 g self raising flour
40 g butter or 40 g margarine
40 g cherries
150 ml milk
1 1/2 tablespoons caster sugar
1 pinch salt
1 little extra flour

  • Pre heat oven to 425f 220c.
  • Sift flour into a bowl.
  • Rub butter into flour.
  • Mix in sugar and salt and cherrys.
  • Add milk a little at a time and mix with a knife.
  • Make sure you don't over mix or your scones will be hard.
  • when your mix is ready it should be moist and not too dry turn out dough on floured surface and roll out to 2cm thick, I don't use a rolling pin I just shape with my hands and use a 4cm pastry cutter.
  • Place the scones on a greased baking sheet.
  • brush with a little milk.
  • Bake in oven for 12-15 mins untill med brown.
  • Enjoy with a nice cup of tea.
