This roasted red pepper pasta recipe comes to us from The Pioneer Woman herself. It's one of the easiest dinners you can make!

12 ounces whole wheat pasta
4 tablespoons butter
1/2 onion, finely diced
3 cloves garlic, minced
15 1/2 ounces roasted red peppers, drained and chopped
1 cup vegetable oil
salt, to taste
black pepper, to taste
1/2 cup heavy cream
1/2 cup parmesan cheese, shaved

Steps:

  • Cook pasta in water with salt, based on package directions. Melt two tablespoons butter in a large skillet over medium-high heat. Mix in the onions and garlic and saute for two to three minutes or until starting to soften. Add the chopped red peppers and cook for two to three minutes, until very hot. Remove the skillet from the heat. Carefully transfer the contents to a food processor or blender. Now puree the pepper mixture until totally blended (there will still be some texture to the peppers.) Heat the other two tablespoon butter back to the skillet over medium heat. Pour the pepper puree back into the skillet. Add in the broth, salt, and pepper, and stir until heated. Splash in the cream and stir to combine. Always be tasting and always adjust if need be. Drain the pasta and add it to the skillet. Add Parmesan and parsley/basil, then stir it together to coat the pasta. Serve in bowls with extra parmesan and a sprinkling of parsley on top. ENJOY!

Number Of Ingredients 17

Kosher salt
1 pound fettuccine
2 tablespoons salted butter
2 tablespoons olive oil
6 multi-colored mini sweet peppers, sliced into rounds, a few rounds reserved for garnish
3 cloves garlic, minced
1 medium yellow onion, diced
1 red bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1 poblano pepper, seeded and thinly sliced
1 jalapeno pepper, seeded and thinly sliced
Freshly ground black pepper
1/2 cup clear tequila
2 cups vegetable broth
1 cup heavy cream
3 tablespoons adobo sauce from canned chipotle peppers, plus more if needed
1/4 cup fresh cilantro, chopped

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions, then drain and set aside.
  • Meanwhile, in a large skillet, heat the butter and olive oil over medium-high heat. Add the mini sweet peppers, garlic, onion, red and orange bell peppers, poblano and jalapeno and season with a pinch of salt and pepper. Cook, stirring, until the onions and peppers begin to darken, about 3 minutes. Transfer the vegetables to a plate and set aside.
  • Return the skillet to the heat and allow it to come back up to temperature. Turn off the heat and pour in the tequila. Turn the heat back on and let it cook for 1 minute while scraping the bottom of the skillet to loosen any browned bits. Add the broth, bring to a simmer and simmer until reduced slightly, 3 to 5 minutes.
  • Reduce the heat to medium low and pour in the cream. Add the adobo sauce, stirring constantly. Cook until the sauce starts to thicken, another 4 to 5 minutes.
  • When the sauce is thick, add the vegetables to the skillet, making sure to include all the juices that have drained onto the plate. Stir and cook until the mixture is bubbly and hot, 1 to 2 minutes. Taste and add salt, pepper and/or adobo sauce if needed.
  • Add the drained pasta to the sauce and toss to combine. Transfer to bowls and garnish with fresh cilantro and a few reserved mini pepper rings.

12 oz. weight Pasta Of Your Choice (I Prefer Short Ones Like Rigatoni, Penne, Etc.)
4 tbsp. Butter
1/2 whole Large Onion, Finely Diced
3 cloves Garlic, Minced
1 jar (15.5 Ounces) Roasted Red Peppers, Drained And Roughly Chopped
1 c. Vegetable Or Chicken Broth
1/2 tsp. Salt, More To Taste
Freshly Ground Black Pepper
1/2 c. Heavy Cream (more To Taste)
1/2 c. Parmesan Shavings (more For Serving)
Finely Minced Parsley
Chopped Fresh Basil (if You Have It!)

Steps:

3 whole Red Bell Peppers
2 tbsp. Pine Nuts (optional)
2 tbsp. Olive Oil
1/2 whole Medium Onion, Finely Diced
2 cloves Garlic, Minced
1/2 c. Heavy Cream
Flat Leaf Parsley, Finely Minced
Fresh Parmesan, Shaved Or Grated
1/2 lb. (to 1 Pound) Pasta: Orecchiette, Penne, Fusilli, Etc.

Steps:

  • Roast red peppers, and then place in a Ziploc bag to allow to sweat. Peel the charred skins from the peppers, then removed seeds. Set aside.Lightly toast pine nuts in a skillet. Set aside. Puree peppers with pine nuts. Set aside.Cook pasta according to package directions.In a skillet or pot over medium heat, drizzle in olive oil. Add diced onions and garlic and cook until soft. Pour in pepper puree and stir together. Add plenty of salt. Pour in cream and stir to combine. Taste and add more salt, if necessary. Add cooked pasta, and then stir together. Place pasta into a bowl, top with chopped parsley and plenty of shaved Parmesan.Give thanks for Italy.Repeat as necessary.

2 tablespoons finely minced fresh parsley, plus more for serving
Several leaves fresh basil, chopped, plus more for serving
1/2 cup Parmesan shavings, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta according to the package directions.
  • Meanwhile, add the oil and butter to a large skillet over medium-high heat and melt the butter. Add the garlic and onions and saute until starting to soften, 2 to 3 minutes. Add the chopped red peppers and cook until hot, 2 to 3 minutes.
  • Carefully transfer the contents of the skillet to a food processor or blender. Put on the lid and puree the pepper mixture until totally blended (there will still be some texture to the peppers).
  • Pour the pepper puree back into the skillet. Add the broth, 1/2 teaspoon salt and some pepper, and stir until heated. Splash in the cream and stir to combine. Add the parsley and basil and stir to combine. Taste and adjust the seasoning if you need to.
  • Drain the pasta and add it to the skillet. Add the Parmesan, and then stir it together to coat the pasta.
  • Serve in bowls with extra Parmesan and a sprinkling of parsley and basil on top.
