How to Make Stovetop Popcorn image

Stovetop popcorn is the most rewarding cooking project: With a pot and a little oil, you can turn a scoop of kernels into a big batch of warm popcorn in less than 5 minutes.

3 tbsp. Canola oil
3/4 c. Popcorn kernels
Salt, to taste

Steps:

  • Place a large (8-quart) pot over high heat and add the oil. The oil should just cover the bottom of the pan. Heat the oil until it's rippling but not smoking, then add the popcorn kernels and shake the pot so the kernels form a single layer on the bottom. Place the lid on the pan and immediately reduce the heat to medium. Once the kernels start popping, shake the pan every so often and listen to the pace of the popping: The kernels should pop rapid-fire and should continue as one long continuous burst. As soon as the popping slows to a few kernels at a time, turn off the heat. (If you find that your kernels are popping just a few at a time for a long time and aren't picking up speed, take a peek and see if the kernels are getting too dark without opening: You might need to start again if they're starting to burn. It'll be worth the redo!)Remove the lid and immediately add salt or other seasonings; tap the pot up and down to distribute the salt. Pour half the popcorn into a large serving bowl, then salt the remaining popcorn in the pan and add to the bowl.

CANDY CORN POPCORN BALLS



Candy Corn Popcorn Balls image

6 tablespoons popcorn kernels
1/4 cup peanut oil
1/2 cup sugar
Cooking spray
1 cup candy corn
1/2 cup salted roasted peanuts
4 cups mini marshmallows (about 2/3 of a 10-ounce bag)
4 tablespoons unsalted butter

Steps:

  • Heat a large pot over medium-high heat; add the popcorn kernels and peanut oil. When the oil starts to sizzle, sprinkle the sugar over the kernels. Cover with a tight-fitting lid and shake the pot until the popping slows down, about 8 minutes. Remove from the heat and set aside to cool. Spray a large bowl with cooking spray and add the popcorn, candy corn and peanuts.
  • Combine the marshmallows and butter in a large pot over medium-high heat. Cook, stirring, until melted and smooth, about 5 minutes.
  • Pour the melted marshmallow mixture over the popcorn mixture and gently toss to coat.
  • Coat your hands with cooking spray, then shape the popcorn into 3-inch balls. Let cool.

MERCANTILE SNACK MIX



Mercantile Snack Mix image

8 cups popped popcorn
6 cups toasted corn cereal squares, such as Chex
4 cups miniature pretzel twists
4 cups salted dry-roasted peanuts
1 1/2 cups packed light brown sugar
1 1/2 sticks (12 tablespoons) butter
1/4 cup plus 2 tablespoons light corn syrup
2 teaspoons vanilla extract
3/4 teaspoon baking soda

Steps:

  • Preheat the oven to 300 degrees F. Line 2 baking sheets with foil.
  • In a large bowl, combine the popcorn, cereal, pretzels and peanuts. In a medium saucepan, combine the brown sugar, butter and corn syrup. Cook over medium heat, stirring, until the mixture comes to a boil. Reduce the heat to medium low and simmer without stirring for 5 minutes. Remove the saucepan from the heat and carefully stir in the vanilla and baking soda. Pour over the popcorn mixture and stir until coated.
  • Divide the mixture between the prepared baking sheets and bake, stirring every 10 minutes, for 30 minutes. Transfer the pans to wire racks and let cool completely, continuing to stir occasionally as the snack mix cools.
  • Serve in individual bags.

SPICY SRIRACHA POPCORN



Spicy Sriracha Popcorn image

3 tablespoons vegetable oil
1/2 cup popcorn kernels
4 tablespoons butter
2 teaspoons sriracha
1 teaspoon kosher salt

Steps:

  • Coat the bottom of a large pot with the vegetable oil. Pour in the popcorn kernels, cover and set over medium-high heat. When you hear the first kernels pop, begin to shake. Continue to cook, shaking, until all the corn is popped. When you no longer hear popping, remove from the heat and transfer to a large bowl.
  • In a pan, melt the butter, add the sriracha and stir. Drizzle over the popcorn and toss. Season with salt.

WHITE CHOCOLATE PEPPERMINT POPCORN



White Chocolate Peppermint Popcorn image

30 peppermint candies
1 pound white chocolate chips
2 tablespoons coconut oil
10 cups store-bought popped kettle corn
1/4 cup mini semisweet chocolate chips
2 tablespoons red sprinkles
2 tablespoons green sprinkles
2 tablespoons red sanding sugar
2 tablespoons green sanding sugar

Steps:

  • Line 2 baking sheets with waxed paper.
  • Place the peppermint candies in a large resealable plastic bag. Crush with a rolling pin until you have a mix of smaller chunks and crumbs. Set aside.
  • Place the white chocolate chips and coconut oil in a microwave-safe bowl. Microwave in increments of 15 to 30 seconds (this will depend on your microwave), stirring after each, until completely melted and smooth.
  • Place the kettle corn in a large bowl. Pour the white chocolate mixture over the popcorn and fold with a spatula until evenly coated. Transfer the popcorn to the lined baking sheets in a single layer. Working quickly, sprinkle the popcorn with the crushed peppermint candies, mini chocolate chips, red and green sprinkles and red and green sanding sugar. You can you use more or less of each topping based on what you like.
  • Allow the popcorn to dry to the touch, about 15 minutes, before packing in bags as gifts or storing in an airtight container.

1/2 c. Brown Sugar (or Coconut Sugar. If You Prefer Natural Sweetness)
1/2 tsp. Cinnamon
Generous Pinch Of Sea Salt
2 c. To 3 Cups Apple Chips, Crushed Into Bite-Sized Pieces

Steps:

  • Place popped popcorn in a very large bowl.Melt butter in a small saucepan over medium low heat. When butter is mostly melted, add sugar, cinnamon, and salt. Increase heat to medium-high and bring the mixture to a low boil. Let it bubble and boil for about 2 minutes, then remove the caramel from the heat. Drizzle caramel over the popcorn and add apple chips. Stir well, spreading the caramel throughout the popcorn.Serve.
