HERBALICIOUS BREAKFAST CASSEROLE

Steps:
- Generously butter a 9-by-13-inch baking dish.
- Tear the onion rolls into chunks and place them in the bottom of the baking dish. Sprinkle the roasted peppers on top, then tear the cream cheese over the peppers. Sprinkle with the mozzarella, then cut the butter into pats and scatter over the top.
- Mix together the milk, pesto, parsley, oregano, salt, pepper and eggs in a large bowl and pour slowly over the top of the dish, making sure to get it all around and into the crevices. Wrap tightly with plastic wrap, then foil. Freeze for up to 2 months.
- To cook from frozen: Preheat the oven to 350 degrees F.
- Remove the foil and plastic wrap, then re-cover the casserole with the foil. Bake for 45 minutes, then remove the foil and continue baking until firm and set, about 10 minutes more. Portion and serve immediately.
- To cook from thawed: The evening before serving, remove the casserole from the freezer and thaw overnight in the refrigerator.
- Preheat the oven to 325 degrees F.
- Remove the foil and plastic wrap, then re-cover the casserole with the foil. Bake for 45 minutes, then raise the temperature to 350 degrees F, remove the foil and continue baking until firm and set, 10 to 15 minutes. Portion and serve immediately.
CINNAMON BAKED FRENCH TOAST

- For the French toast: Grease the baking pan with butter. Tear the bread into chunks, or cut into cubes, and evenly distribute in the pan. Crack the eggs in a big bowl. Whisk together the eggs, milk, cream, granulated sugar, brown sugar and vanilla. Pour evenly over the bread. Cover the pan tightly and store in the fridge until needed (overnight preferably).
- For the topping: Mix the flour, brown sugar, cinnamon, salt and some nutmeg in a separate bowl. Stir together using a fork. Add the butter and with a pastry cutter, and mix it all together until the mixture resembles fine pebbles. Store in a re-sealable plastic bag in the fridge.
- When you're ready to bake the casserole, preheat the oven to 350 degrees F. Remove the casserole from the fridge and sprinkle the topping over the top. Bake for 45 minutes for a softer, more bread pudding texture or for 1 hour or more for a firmer, crisper texture.
- Scoop out individual portions. Top with butter and drizzle with warm pancake syrup and sprinkle with blueberries.
TATER TOT BREAKFAST CASSEROLE

- Line up the tater tots in a buttered 9-by-13-inch baking dish.
- Add the olive oil to a large skillet over medium heat. Add the sausage and onion and cook, breaking the sausage up with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Set aside to cool slightly, then sprinkle it over the tater tots.
- In a large bowl, mix the milk, half-and-half, seasoned salt, cayenne, eggs, bell peppers, half of both cheeses and some salt and pepper. Pour over the tots and sausage mixture, then top with the rest of the cheese. Cover with foil and refrigerate overnight.
- Preheat the oven to 350 degrees F.
- Bake, covered, for about 25 minutes. Remove the foil and continue to bake until the cheese is brown and bubbly and the casserole is cooked through, another 20 to 35 minutes. Cut into squares and serve.
HAMBURGER NOODLE CASSEROLE PIONEER WOMAN

- Grease a 9x13 inch casserole dish lightly and preheat the oven to 375°F.
- In a large, deep skillet over medium heat, cook beef with dried onion, garlic powder, salt, and pepper until browned; breaking it up as it cooks. Drain.
- Bring skillet back to medium-high heat. Stir in 3.5 cups of beef broth, scraping any browned bits from the bottom of the pan.
- Add the egg noodles and corn. Bring to a boil once, then reduce heat to a simmer and cook for 5-8 minutes, stirring frequently, until noodles are just tender (if noodles seem too dry, add up to 1/2 cup more broth).
- Once noodles are cooked (don't overcook!) and most of the broth has been used, turn off the heat.
- Stir in both soup cans, sour cream, and 1 cup of shredded cheese. Transfer to a prepared casserole dish and top with remaining cheese.
- Cook Pioneer Woman Hamburger Noodle Casserole for 20-30 minutes, or until bubbly and cheese has melted.
- Allow cooling on the counter for 5-10 minutes before serving.
