1 lb dried pinto bean, sorted and washed
5 cups water
1 large onion, chopped
4 -8 ounces cooked ham, chopped
3 garlic cloves, minced
1/2 cup chopped green pepper
1 tablespoon chili powder
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano

Steps:

  • Cover beans with water and soak overnight; drain.
  • Place beans in a 5- or 6-quart slow cooker/Crock Pot with water and remaining ingredients.
  • Cover cooker and cook on low setting for 9-10 hours, or until beans are soft and done. Stir a couple of times during cooking, if possible. Serve with cornbread, rice, a green salad or slaw.

14 cups water, divided
2 cups dried pinto beans
1 ham bone with meat
1 large red onion, chopped
2 teaspoons garlic, minced
1 teaspoon ham base (such as Better than Bouillon®)
1 dash hot pepper sauce (such as Tabasco®), or to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Bring 8 cups water and pinto beans to a boil in a large pot. Remove pot from heat, cover, and let stand for 1 hour. Drain and rinse before using.
  • Transfer pinto beans to a slow cooker. Add ham bone, red onion, minced garlic, and ham base. Pour in remaining 6 cups of water, or enough to cover the beans.
  • Cool on Low until beans are tender, about 8 hours.
  • Remove the ham bone, shred meat, and add back to the beans. Discard the bone. Serve hot, seasoned with hot sauce, salt, and pepper.

I learned to make pinto beans from my Grandma, who came from Oklahoma. I've added to the recipe, and my Mother used to say mine were the best beans she'd ever tasted. Serve the Southern way - with cornbread and steamed greens.

1 pound dried pinto beans
6 cups water, or more as needed to cover
1 smoked ham hock
1 teaspoon kosher salt
1 tablespoon brown sugar
1 (6.5 ounce) can tomato sauce

Steps:

  • Cover pinto beans with water in a large bowl. Soak beans for 4 hours, changing water every 30 to 45 minutes. Drain.
  • Bring 6 cups water to a boil in a large pot. Add pinto beans, ham hock, and kosher salt to the pot. Pour in more water if needed to cover ingredients by at least 1 inch.
  • Reduce heat to medium-low and simmer until beans are just tender, 2 to 3 hours.
  • Remove ham hock from beans; cut meat from the bone, chop the ham, and return to pot.
  • Stir tomato sauce and brown sugar into the beans. Continue to simmer until beans are tender and flavors are blended, about 1 more hour.

3 smoked ham hocks
2 lbs dried pinto beans
1/2 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon ground black pepper
1/2 teaspoon salt
2 teaspoons hot sauce
1/2 medium chopped onion

Steps:

  • Boil ham hocks on high heat for 45 minutes.
  • Add all seasonings except hot sauce and onion. Continue boiling for 20 minutes.
  • Add pinto beans, hot sauce, and onion. Boil on medium heat until beans are done to taste (usually I go for about 1 1/2 hours).
  • Serve with rice and a meat side dish. Tastes even better the 2nd day!

2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne
3 thick-cut slices of bacon, cut into thirds
3 cloves garlic
2 bay leaves
1 medium onion, diced
1 red bell pepper, diced
Kosher salt and freshly ground black pepper

Steps:

  • Put the beans in a large bowl, cover with cold water and let soak overnight.
  • Drain and rinse the beans, then put them in a large pot. Cover the beans with water and add the chili powder, cumin, paprika, cayenne, bacon, garlic, bay leaves, onion, bell pepper and some salt and pepper. Bring to a boil, then reduce the heat to low and cook until the beans are tender, 2 to 3 1/2 hours.

1 (16 ounce) package dry pinto beans
2 tablespoons baking soda
1 tablespoon fiesta pinto bean seasoning
1 tablespoon sugar
1 tablespoon vegetable oil
1/2 tablespoon pepper
1 small onion, cut into chunks
ham hocks, ham bone or 2 cups cooked ham

Steps:

  • Sort your beans and remove and broken pieces or pebbles. I use one 16 oz package of beans. Place in a large bowl or pot, covering with water.
  • Add the baking soda to the water, and let the beans soak at least 6 hours or overnight. After 6 hours or overnight drain the water from the beans.
  • Add the beans to a 6 quart crock pot and cover with fresh water. You want the beans to be covered by at least one inch.
  • Add the pinto bean seasoning, sugar, vegetable oil, pepper and onion. Taste the beans after several hours of cooking and add more seasonings if you think it needs it. I used a total of one tablespoons pepper.
  • Add one of the following for additional seasoning, one ham hock, ham bone, or slice of country ham cut into pieces.
  • Place lid on crock pot and cook on high for about 6-8 hours. make sure the beans stay covered with water, so check occasionally. If you need more water, then add it. The beans should have a soup consistency.
  • In 6 hours, test beans and if they are cooked. Remove ham bone and pull of the meat or remove meat from ham hock and serve. Don't forget the wedge of cornbread.

1 small red onion, sliced
1/2 large white onion, sliced
3 tablespoons garlic, minced
1 teaspoon dried basil
1 tablespoon Worcestershire sauce
1 teaspoon liquid smoke
fresh ground black pepper

1/2 teaspoon paprika
1 teaspoon chili powder
2 ham hocks
water (adjustable)

Steps:

  • Soak beans in bowl for several hours or overnight. Rinse twice.
  • Place rinsed beans in large soup pan. Add sliced onion (both red and white), garlic, ham hocks, and basil to pan.
  • Cover beans with water.
  • Add Worcestershire, liquid smoke, paprika, chili powder, salt, and pepper.
  • Cook on low for 3-4 hours, adding water if necessary to keep beans covered.
  • Stir occasionally.
  • Discard ham hocks prior to serving.

In the early sixty's I lived in Yuma Arizona. I was "adopted" by my friend Rick Ramirez's Family. His Mom, Irma, pronounced 'ear-mah' was world champion at making simple ingredients taste Heavenly. This is one of her's.

1 lb pinto beans
2 -3 tablespoons olive oil
2 onions, coursely chopped
3 stalks celery, chopped
1/2 lb baby carrots, quartered lengthwise
4 jalapenos, whole
4 cloves garlic, minced
1 tablespoon oregano, crushed
2 teaspoons freshly ground cumin seeds
1 teaspoon dried thyme
2 smoked ham, shanks (like ham hocks but less fat-more meat)
2 quarts vegetable stock
3 cups cooked basmati rice

Steps:

  • Sort and wash Beans.
  • cover with water (they will double in bulk.) Cover the pot and let soak overnight in frig.
  • In the morning bring the Stock to a boil on the stovetop.
  • Drain and rinse the Beans.
  • Meanwhile, Char the Jalapenos to remove the skins.
  • Pierce the stim end with a bamboo skewer to use as a handle.
  • Hold over a gas flame or use a propane tourch.
  • Remove the stem, quarter, remove the seeds and vains.
  • Finely mince.
  • Saute all of the vegetables'til tender.
  • Place all ingredients in crock pot and top off with boiling Stock.
  • Stir.
  • Cover, cook on low 8-10 hours.
  • Remove Ham Shanks, trim skin and fat, debone and cut meat into bite-sized pieces. Return to pot and mix well.
  • Serve on a bed of cooked rice, topped with Creme Fraiche or Sour Cream and fresh chopped Cilantro.

A simple yet delicious classic with slow cooked flavor and no fussing.

16 ounces pinto beans
1/2 gallon water (more may be needed as the beans simmer)
3/4 tablespoon coarse sea salt (start with half as much table salt if using)
2 ounces country ham (a heaping 1/4 cup, or 2 small "biscuit" slices)

Steps:

  • Add dried beans to a bowl and cover with water. Sort through the beans by letting them fall between your fingers and remove any stones or dirt. Drain the water.
  • Cover the beans with clean water at least 2" over the beans. Let the beans soak overnight or for 8-12 hours.
  • After 12 hours, drain the water and move the beans to a large pot. Add the ham and cover with 2-3 inches of fresh water. Bring to a very gentle simmer over medium low/low heat and simmer 2 1/2 hours stirring gently only once or twice an hour.
  • Add salt (half to start), stir, wait 5 minutes and taste; adjust seasoning to your preference. Simmer an additional 30 to 45 minutes until the beans are tender throughout.
