SPICY POTATO SOUP

A substantial winter soup by Gary Rhodes that packs a bit of a punch

2 tbsp sunflower or groundnut oil
knob of butter
1 large onion
1 tbsp medium curry powder
2 large baking potatoes , cut into roughly 1cm cubes
500ml milk
1 vegetable stock cube
1 - 2 tsp mango chutney (optional)
1 tbsp coriander leaves (optional)

Steps:

  • Warm the oil and butter together in a saucepan and add the chopped onion. Cover with a lid and cook over a medium heat for a few mins before adding the curry powder. Add the potato and continue to cook for a further 5-10 mins.
  • Pour the milk and 500ml water over the potatoes, then sprinkle in the vegetable stock cube. Bring to a simmer and cook for 15-20 mins until the potatoes are completely tender. Season with a pinch of salt and blitz in a blender until smooth. For a slightly sweet touch, add the mango chutney, a teaspoon at a time to suit your taste, liquidising until smooth. Divide the soup into bowls, finishing with the coriander leaves if you have them.

3 cups filtered water
3 cups oat milk (preferably Oatly)
2 tbsp rice vinegar
3 cups chopped russet potato, peeled
4 to 5 garlic cloves
1 tbsp sea salt
2 tbsp nutritional yeast
1 tbsp onion powder
1 tbsp garlic powder
1 large shallot, sliced
3 large bay leaves
1 small beet, raw, peeled and cut into fourths
1 large ripe avocado, cut into chunks
1 bunch fresh dill, to garnish
Flaky salt + black pepper, to garnish
Good olive oil, to garnish

Steps:

  • For the soup base combine the water, oat milk, vinegar, potatoes, garlic, sea salt, nutritional yeast, onion powder, garlic powder, shallot, and bay leaves into a large pot and bring to a boil. Once this has come to a boil and the potatoes are tender, remove from heat. Let cool for about 20 minutes.
  • Once cooled, remove the bay leaves and add the mixture to a high-speed blender. Then add in one piece of raw beet. Blend until smooth. Continue this step, adding more beet, until desired color is reached.
  • Serve hot or cold and garnish with avocado, chopped dill, a sprinkling of flaky salt, and freshly cracked black pepper.

Brown lentils are the star of this dish. To boost flavor, we used a classic mirepoix-onion, celery and carrot - as well as thyme, bay and oregano for an herby finish. We found the fresh lemon juice and parsley at the end brightened up the soup and added a nice pop of color.

3 tablespoons olive oil
3 medium carrots, cut into 1/4-inch pieces
1 medium onion, diced
1 large celery stalk (about 2 ounces), cut into 1/4-inch pieces
Kosher salt and freshly ground black pepper
2 tablespoons tomato paste
1 large clove garlic, minced
1 1/2 cups dried brown lentils
4 cups vegetable stock
7 sprigs thyme, leaves stripped (about 1 teaspoon leaves)
1 bay leaf
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
1 teaspoon lemon zest, plus the juice of 1/2 lemon (about 2 tablespoons)
1/2 cup flat-leaf parsley leaves, plus more for garnish, roughly chopped

Steps:

  • Heat the oil in a large heavy-bottom pot over medium-high heat. Add the carrot, onion, celery and 1 teaspoon salt and cook, stirring occasionally, until the vegetables are starting to caramelize and take on a dark brown color, 8 to 10 minutes (this step is important as it will add tons of flavor to your soup!).
  • Stir in the tomato paste and garlic and cook, scraping up the brown bits, until the garlic is fragrant and slightly softened, 1 to 2 minutes. Add in the lentils, stock, 4 cups water, thyme, bay leaf, oregano, red pepper flakes, lemon zest, 2 teaspoons salt and a generous amount of black pepper and stir to combine. Bring to a boil then reduce the heat to low. Cover and cook until the lentils are softened with just a bit of bite, 25 to 30 minutes.
  • Remove the bay leaf. Puree 2 1/2 cups of the soup in a blender until smooth then stir back into the pot. Stir in the lemon juice and parsley. Ladle into bowls and garnish with more parsley.

I don't know where I got this recipe, but I've been making it for 25 or 30 years. My ex-MIL's boyfriend was at the excruciating end of his terminal pancreatic cancer, and I made some for him, in the hope that he could tolerate maybe THIS, as he couldn't seem to tolerate anything else. It did the trick, and he spent his final days having bowl after bowl of this, and loving every spoonful.

3 large potatoes, cubed
1 celery rib, diced fine
1 carrot, diced fine
1 onion, diced fine
4 cups milk
2 teaspoons salt
1/2 teaspoon pepper
1 tablespoon parsley
1 cup sour cream
2 tablespoons flour
2 teaspoons paprika

Steps:

  • Boil potatoes, celery, carrot and onion in 1/2 cup water in a covered saucepan for 20 minutes. **Note per 1st review: If veggies are not diced in a VERY fine dice, this will need more than 1/2 cup water to cook. Use water to cover, more if needed.**.
  • Add milk, salt, pepper and parsley; bring just to boiling point.
  • Mix sour cream, flour and paprika.
  • Remove 1 cup hot mix from pan, stir into sour cream mix, return all to pot.
  • Cook, stirring constantly until bubbly and flour has thoroughly cooked (or soup will have a "floury" taste).

  • Peel the beets. Wash and scrub the potatoes but leave the peels on. Chop the beet and potato so they are roughly the same size. Spread the chopped beet and potato on the baking sheet and roast in the oven for 40-45 minutes until you can just pierce the beet with a fork. The larger you chop them the longer they will take in the oven. When the beets and potato are done set aside and begin the soup.
  • In a large pot, sauté the onion with a few tablespoons of water until the onion begins to soften, about 5 minutes. Add the garlic, thyme, and red pepper flakes and cook for another minute. Now add the roasted beet and potato and vegetable broth and bring to a simmer. Simmer uncovered for a few minutes.
  • Turn the heat off and transfer the soup to a blender. Add the vinegars and ½ teaspoon salt and blend until smooth. Be careful not to overfill the blender, keep it at about ⅔ full. Blend the soup in batches if you must. Taste and reseason as needed
