HONEY-PEPPERCORN BRIE DIP
A little bit sweet, salty and peppery, this 5-ingredient dip is great solo or as an addition to a party cheese platter. Be sure to take your time and stop to scrape down the side of the mixer bowl-that's the key to making the dip smooth and light.

Steps:
- Remove all the rind from the Brie with a small sharp knife and your fingers. (The rind can be bitter, so it's best to be thorough.) Beat the Brie on high speed in a stand mixer fitted with a paddle attachment until completely smooth, scraping down the side of the bowl and paddle as needed (the cheese will be thick and sticky at this point). Beat in the honey and 3/4 teaspoon salt, stopping and scraping as needed. While still beating on high, slowly drizzle in the cream, and beat until the mixture is light and smooth, stopping and scraping as needed. (The dip can be refrigerated for up to 2 hours.)
- Transfer the dip to a small serving bowl, sprinkle with some cracked peppercorns and serve with apple chips, celery sticks, walnut-raisin and/or pumpernickel bread.
PINK BRIE
A fun dip/spread that's savoury, sweet and spicy. I invented this while playing mad scientist in the kitchen. It goes well with crackers and fresh fruit (pears, apples, etc.).

Steps:
- Discard rind from brie.
- Cube brie and cream cheese, and place in medium-sized microwave-safe bowl.
- Microwave on high until cheese melts (about 1 minute).
- Whisk in butter until it melts and mixture is smooth.
- Whisk in hot pepper jelly and watch the color transformation!
- Add the rest of the ingredients and whisk until well combined.
- Chill for at least two hours.
PINK TORTELLINI
This is one of my favorite dishes to order whenever we go to a local Italian restaurant. It's often known as Tortellini in Vodka Sauce or Tortellini Rose or some other fancy names. For me, Pink Tortellini describes it best. It is a nice rich tasting pasta that's easy to make at home!

- Make tortellini as directed on package.
- After draining, place the tortellini on Low heat.
- Add in pasta and alfredo sauce, mix well until the sauce looks pink.
- Cover and let stand on low heat for 5 minutes.
- Add parmesan cheese, mix well, and serve.
