Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Toldeda Shutt

1/2 cup butter
1 cup light brown sugar, packed
1 egg
1 teaspoon vanilla
3/4 cup crushed pineapple, undrained
2 cups flour, sifted
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup seedless raisin

Steps:

  • Cream butter until light and fluffy.
  • Gradually add sugar and beat well.
  • Beat in egg and vanilla.
  • Stir in pineapple, sifted dry ingredients and raisins.
  • Drop by teaspoon onto greased cookie sheet.
  • Bake at 375 degrees for 12 minutes or until brown.

8 ounces crushed pineapple
1/2 cup butter
1 cup brown sugar (packed)
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups confectioners sugar
1/4 teaspoon teaspoon lemon zest

Steps:

  • Preheat oven to 325 degrees.
  • Drain pineapple reserving 3 tablespoons of juice for the frosting.
  • In a mixing bowl, cream together butter and brown sugar until light and fluffy.
  • Beat in egg, pineapple, and vanilla.
  • In another bowl combine flour, baking powder, baking soda, and salt and stir or whisk until thoroughly mixed.
  • Gradually add dry ingredients to the creamed butter and sugar.
  • Grease a cookie sheet with non-stick spray.
  • Use a cookie scoop to drop cookie dough onto the baking sheet about 2 inches apart. These cookies will spread.
  • Bake at 325 degrees for 17 to 20 minutes or until golden.
  • Transfer cookies to wire racks to cool.
  • Place powdered sugar, lemon zest, and 2 tablespoons pineapple juice in a small bowl. Stir to combine. Add more pineapple juice, about ½ teaspoon at a time, if needed to achieve spreading consistency.
  • Spread the frosting on the cooled cookies.

8 oz cream cheese, softened
1 teaspoon vanilla
8 oz frozen whipped topping, thawed
1/2 cup powdered sugar
1 1/2 cup walnuts (coarsely chopped)

Steps:

  • Drain pineapple well in a mesh strainer.
  • Combine pineapple, cream cheese, and vanilla; mix well.
  • Gently fold in whipped topping.
  • Stir in powdered sugar and walnuts.
  • Chill several hours and serve cold.

1/2 cup walnuts, coarsely chopped
1 to 2 tablespoons mayonnaise, or to taste
1 tablespoon fresh lemon juice
1 pinch of salt, or to taste
1 head lettuce, iceberg or butterhead; washed and leaves separated

Steps:

  • Gather the ingredients.
  • In a bowl, combine the drained pineapple chunks, celery, and walnuts. Chill thoroughly for 2 hours.
  • Just before serving, add enough mayonnaise to moisten, along with the lemon juice and a dash of salt, to taste. Gently stir pineapple salad ingredients to blend.
  • Serve on lettuce leaves or mixed salad greens.
  • Enjoy!

This is a no bake frozen desert that was handed down from a family friend 30 years ago. It disappears as soon as it hits the table!

1 (12 ounce) package vanilla wafers, finely crushed
1 cup butter (sweet, unsalted only)
1 cup sugar
12 ounces thawed Cool Whip (or 2 8oz.)
2 teaspoons vanilla
2 cups crushed pineapple, well drained
1 cup walnuts, finely chopped

Steps:

  • Crush vanilla wafers to fine crumbs. Set aside 2 Tbls. Cream butter on mixer to consistency of mayonnaise; add sugar gradually while continuing to cream. Add thawed Cool Whip. Do not mix too much or it will go flat. Add vanilla and mix well. combine pineapple and walnuts and stir until well mixed.
  • Cut a piece of wax paper to fit the bottom of a 9" spring form pan. Press 1/3 of the wafer crumbs onto the bottom of the pan. Spread with 1/3 of the pineapple mixture and continue to alternate and layer, ending with the pineapple on top. Scatter the reserved 2 Tbls. of wafers on top. Cover with foil and freeze until ready to use. Remove from freezer about 1 hour before serving time.
  • (you can also use a 2 quart glass casserole dish, 8" x 11.5" x 2").

1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
4 cups all-purpose flour

1/2 teaspoon baking soda
1/2 teaspoon salt
1 can (8 ounces) unsweetened crushed pineapple, drained
1 cup chopped walnuts
1/4 cup chopped maraschino cherries

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda and salt; gradually add to the creamed mixture and mix well. Stir in the pineapple, walnuts and cherries. , Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 425° for 7-9 minutes or until lightly browned. Remove to wire racks to cool.

1 (16 ounce) carton Cool Whip (or use reduced fat)
1 (8 ounce) package cream cheese, softened (or use reduced fat)
1 (20 ounce) can crushed pineapple, drained
1 cup walnuts, chopped

Steps:

  • Mix Cool Whip and cream cheese with a mixer. Fold in pineapple and walnuts. Pour into a dish, garnish with chopped walnuts and chill overnight.
  • FOR VARIATIONS: a small package of pistachio pudding (or any other flavor you like), and some small marshmallows can be added to the ingredients above and its taste is excellent, too.
  • Another option is to add a small package of lime or lemon jello dissolved in a cup of boiling water. Let it set and add the ingredients above. Serve and decorate with some cherries on top.
