6 chicken thighs (boneless, skinless)
6 Pineapple Rings
3 green onions (cut into 1/2" pieces)
1 cup teriyaki sauce (store bought or homemade below)
2 tablespoons cornstarch (optional)
sesame seeds and green onion for garnish (optional)
⅓ cup Soy Sauce
¼ cup Fresh Lime Juice
¼ cup Pineapple juice
⅓ cup Honey
⅓ cup Ketchup
1 teaspoon sesame oil
2 clove garlic (minced)
1 tablespoon fresh ginger root (grated)
1 green onion (minced)

Steps:

  • Combine all sauce ingredients. Set half of the sauce aside and refrigerate.
  • Combine chicken with remaining sauce. Marinate 4 hours or overnight if possible.
  • Thicken Remaining Teriyaki Sauce: Place reserved sauce in a small saucepan and bring to a simmer. Combine cornstarch with 2 tablespoons water. Add cornstarch a little at a time to reach desired consistency, you may not use all of it.

1 can (20 ounces) sliced pineapple
1/2 cup teriyaki sauce
4 boneless skinless chicken breast halves (4 ounces each)
4 slices provolone cheese (1 ounce each)

Steps:

  • Drain pineapple, reserving juice; refrigerate pineapple. In a small bowl, combine teriyaki sauce and reserved juice. Pour 3/4 cup marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat. Refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade for basting. , Drain and discard marinade. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes on each side or until a thermometer reads 170°, basting frequently with some of the remaining marinade. , Grill eight pineapple slices for 2 minutes on each side or until lightly browned, basting with remaining marinade (save remaining pineapple for another use). , Top each piece of chicken with cheese and two pineapple slices. 1 cup low sodium soy sauce
1 tablespoon of grated gingerroot

3 tablespoons parsley
2 teaspoons ground ginger
1/3 cup brown sugar
1 pinch salt

8 chicken thighs, bone-in and skin-on (2 per person)

1 (3 ounce) can unsweetened pineapple juice

Steps:

  • Preheat your oven to 450 degrees Fahrenheit.
  • Rinse and dry the chicken, then season and place into a roasting pan with a rack in the bottom.
  • Pour pineapple juice in the roaster and cover tightly with foil.

  • Chop the parsley.

  • Brush sauce generously on the chicken. Return pan to oven.
  • Broil glazed chicken until the sauce appears sticky ad is slightly bubbly.
  • Remove the roaster from the oven. Serve with desired sides.
