1 package yellow cake mix (regular size)
1 can (11 ounces) mandarin oranges, undrained
4 large egg whites
1/2 cup unsweetened applesauce
TOPPING:
1 can (20 ounces) crushed pineapple, undrained
1 package (1 ounce) sugar-free instant vanilla pudding mix
1 carton (8 ounces) reduced-fat whipped topping

Steps:

  • In a large bowl, beat the cake mix, oranges, egg whites and applesauce on low speed for 2 minutes. Pour into a 13x9-in. baking dish coated with cooking spray. , Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. , In a bowl, combine the pineapple and pudding mix. Fold in whipped topping just until blended. Spread over cake. Refrigerate for at least 1 hour before serving.

2 packages (1 ounce each) sugar-free instant vanilla pudding mix, divided
4 egg whites
1 cup water
1/4 cup canola oil
1/4 teaspoon baking soda
1 cup cold fat-free milk
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
1 can (20 ounces) unsweetened crushed pineapple, well drained
1 can (11 ounces) mandarin oranges, drained, divided
Fresh mint, optional

Steps:

  • In a large bowl, combine the cake mix, one package of pudding mix, egg whites, water, oil and baking soda; beat on low speed for 30 seconds. Beat on medium for 2 minutes. , Pour into two greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For filling, whisk milk and remaining pudding mix for 2 minutes; let stand for 2 minutes (mixture will be thick). Fold in whipped topping. In a small bowl, combine 1-1/2 cups pudding mixture with pineapple and half of the oranges. , Cut each cake horizontally into two layers; top with a third of pineapple mixture. Repeat layers twice. Top with the remaining layer. Frost top and sides of cake with remaining pudding mixture. Store in the refrigerator. Garnish with remaining oranges and mint if desired.

1 box Betty Crocker™ white angel food cake mix
1 1/3 cups cold water
6 egg yolks
1 cup sugar
2 teaspoons cornstarch
2/3 cup orange juice
Pinch salt
3/4 cup butter or margarine, cut into pieces
1 cup whipping cream
1 tablespoon grated orange peel
Orange peel twists, if desired

Steps:

  • Move oven rack to lowest position (remove other racks). Heat oven to 350°F. In extra-large glass or metal bowl, beat cake mix and cold water with electric mixer on low speed 30 seconds. Beat on medium speed 1 minute. Pour into ungreased 10-inch angel food (tube) cake pan. (Do not use fluted tube cake pan or 9-inch angel food pan or batter will overflow.)
  • Bake 37 to 47 minutes or until top is dark golden brown and cracks feel very dry and are not sticky. Do not underbake. Immediately turn pan upside down onto glass bottle until cake is completely cool, about 2 hours.
  • Meanwhile, in 2-quart saucepan, beat egg yolks, sugar, cornstarch, orange juice and salt with wire whisk until blended. Add butter; cook 2 to 3 minutes over medium heat, stirring frequently, until boiling. Boil 3 to 5 minutes, stirring constantly, until thickened and mixture coats the back of a spoon. Immediately pour orange mixture (orange curd) through fine-mesh strainer into medium bowl. Cover with plastic wrap, pressing wrap directly onto surface of orange curd. Refrigerate about 1 hour or until completely chilled.
  • In medium bowl, beat whipping cream on high speed until stiff peaks form. Fold whipped cream and grated orange peel into orange curd.
  • On serving plate, place cake with browned side down. Cut off top 1/3 of cake, using long, sharp knife; set aside. Scoop out 1-inch-wide and 1-inch-deep tunnel around cake. Set aside scooped-out cake for another use. Spoon 1 1/3 cups orange cream into tunnel. Replace top of cake to seal filling. Frost top and side of cake with remaining orange cream. Refrigerate at least 2 hours before serving. Garnish with orange twists. Store covered in refrigerator.

1 yellow cake mix
1/2 cup oil
4 eggs
11 oz can mandarin oranges (with the juice)
Frosting:
8 oz Cool Whip
1 sm. can crushed pineapple (8 oz)
1 sm. pkg vanilla instant pudding

Steps:

  • For cake: Mix all ingredients together and bake at 350 for 35 minutes. If you make the cake in a bundt pan (rather than a 9X13), the cook time will be closer to 45 minutes.
  • Once the cake is cooled, mix the pineapple and pudding together. Let set for a few minutes until slightly thickened and then fold in the Cool Whip. Spread on cake and keep refrigerated until ready to serve. Enjoy!

1/2 cup unsalted butter (1 stick), melted
2 large eggs
2/3 cup granulated sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon salt, or to taste
1/4 teaspoon baking soda
one 20-ounce can crushed pineapple, drained very well with juice reserved
about 2 cups confectioners' sugar
3 to 4 tablespoons pineapple juice, or as needed for consistency

Steps:

  • Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside.
  • In a large, microwave-safe bowl melt the butter, about 1 minute on high power.
  • Wait momentarily before adding the eggs so you don't scramble them. Add the eggs, granulated sugar, vanilla, and whisk until smooth.
  • Add the flour, salt, baking soda, and stir until just combined, don't overmix.
  • Add the crushed pineapple and stir to combine. (Reserve the juice for the glaze.)
  • Turn batter out into prepared pan, smoothing the top lightly with a spatula.
  • Bake for about 36 to 41 minutes (I baked 39 minutes), or until done. A toothpick inserted in the center should come out clean, or with a few moist crumbs, but no batter.*
  • Set cake on a wire rack to cool momentarily while you make the glaze.
  • In a large mixing bowl, add 2 cups confectioners' sugar, 3 to 4 tablespoons of reserved pineapple juice, and whisk vigorously until smooth and combined. Depending on glaze consistency and preference, you may need to play with the sugar and juice ratios slightly; set glaze aside.
  • Using a small paring knife, poke the cake in about 25 spots, lightly twisting the knife with each poke. You don't need to make craters or get too wild poking because the glaze finds a way to soak in.
  • Evenly pour glaze over the cake. If glaze is pooling near the sides of pan, use a spatula to push it back up into the center and then use the spatula to 'squish' it down into the holes. Even if it looks like there's too much glaze, it eventually soaks in.
  • The longer you can let it soak (overnight is optimal) before slicing and serving the cake, the better.
  • Cake will keep airtight at room temperature for up to 5 days, or in the freezer for up to 6 months.

Steps:

  • In a medium sauce pot, add the following ingredients.
  • Add milk.
  • Add sugar.
  • Add egg yolks.
  • Add butter.
  • Add vanilla.
  • Place sauce pot on a COLD burner, then turn heat on to medium.
  • Cook, stirring constantly to avoid making scrambled eggs, until thick, about 12 minutes.
  • Add the drained crushed pineapple, stir together.
  • Spread frosting between layers, on top, and sides.

1 cup boiling water
1 cup sugar
3/4 cup orange juice, freshly squeezed
1 lemon, juice of
2 cups whipping cream
1 (20 ounce) can crushed pineapple, drained
1 (11 ounce) can mandarin oranges, drained (save 5 oranges for decoration)
8 ounces angel food cake, cut into thin slices
1/4 cup confectioners' sugar
pecans, Chopped, if desired (for decoration)
nonstick cooking spray

Steps:

  • Measure gelatin and sprinkle over cold water; let stand 1 minute. Add boiling water and stir until gelatin is completely dissolved.
  • Add sugar, orange and lemon juice. Chill until consistency of unbeaten egg whites.
  • Whip 1 cup cream and fold into above mixture. Add crushed pineapple.
  • Prepare a 2 or 2.5 quart glass bowl or a 9-inch rectangular glass dish with a non-stick surface. Arrange a layer of angel food cake on the bottom of the dish.
  • Add a layer of pineapple cream and a few mandarin oranges. Continue layering, ending with the pineapple cream. Cover with plastic wrap, and refrigerate overnight.
  • Whip remaining 1 cup of cream and add confectioners' sugar.
  • Unmold the dessert and cover with sweetened whipped cream.
  • Decorate with mandarin oranges and pecans, if desired.
