This old fashioned Pineapple Marshmallow Dessert has a light and sweet flavor and is super easy to make. The graham cracker crumbs add a nice touch to the melted marshmallows, whipped topping, and pineapple!

3/4 cup milk
1 container frozen whipped topping (thawed)
4 cups mini marshmallows
20 ounce can crushed pineapple (drained)
3/4 cup graham cracker crumbs

Steps:

Spread graham cracker crumbs in the bottom of a 9 x 13-inch baking dish.
In a saucepan slowly heat milk and marshmallows. Place in large mixing bowl and allow to cool.
Once cooled, stir in crushed pineapple, but reserve a few tablespoons. Then fold in whipped cream.
Garnish by sprinkling remaining pineapple on top. Chill before serving.

6 medium sweet potatoes
1/2 cup butter, cubed
3/4 cup sugar
1 can (20 ounces) crushed pineapple, drained
2 large eggs, beaten
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
15 large marshmallows

Steps:

Place sweet potatoes in a large kettle and cover with water; bring to a boil. Boil gently until potatoes can easily be pierced with the tip of a sharp knife, 30-45 minutes. Drain; cool slightly., Preheat oven to 350°. Peel potatoes and place in a large bowl with butter and sugar; mash. Add pineapple, eggs, vanilla, nutmeg and salt; stir to combine., Spoon into a greased 2-qt. baking dish. Top with marshmallows. Bake, uncovered, until a knife inserted in the center comes out clean, 40-45 minutes.

1 can (29 ounces) cut sweet potatoes, drained
1 can (8 ounces) crushed pineapple
3 tablespoons chopped pecans
2 tablespoons brown sugar
2 tablespoons butter, melted
3/4 cup miniature marshmallows

Steps:

In a large bowl, mash the sweet potatoes. Stir in the pineapple, pecans, brown sugar and butter. , Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 375° for 20 minutes. Sprinkle with marshmallows. Bake 5 minutes longer or until marshmallows are lightly browned.

16 ounces large marshmallows
2 cups milk
1 1/2 teaspoons lemon extract
2 (15 ounce) cans crushed pineapple, well drained
2 cups whipping cream, whipped
2 cups graham cracker crumbs
1/2 cup butter, melted

Steps:

In a heavy saucepan over low heat, melt marshmallows and milk. Remove from heat and cool, stirring occasionally.
Stir in lemon extract, pineapple and whipped cream. Mix well.
Combine graham crumbs and butter. Press 1 1/2 cups into a 13 x 9" pan.
Spread the pineapple mixture on top. Sprinkle with remaining crumb mixture.
Refrigerate 2 - 3 hours before serving.

1 (20 ounce) can pineapple chunks
6 tablespoons all-purpose flour
½ cup white sugar, or to taste
2 cups shredded sharp Cheddar cheese
1 (20 ounce) can crushed pineapple, drained
40 buttery round crackers (such as Ritz®), crushed
½ cup butter, melted, or to taste

Steps:

Preheat an oven to 350 degrees F (175 degrees C).
Drain pineapple chunks, reserving 1/4 cup of the juice. Transfer both chunks and juice into a large bowl.
Add flour, sugar, Cheddar cheese, and drained, crushed pineapple; mix to combine. Pour into a 1 1/2-quart casserole dish.

This is a light refreshing dessert we always had growing up on the 3 holidays. (Thanksgiving, Christmas and Easter) My mom & my aunts would always stay up late cutting up the marshmallows, laughing & talking. I make mine more simply and use the mini marshmallows. :)mmmmmmm Its pretty simple too.

1 (16 ounce) can crushed pineapple in juice
1 (16 ounce) bag mini marshmallows
1 (8 ounce) container Cool Whip

Steps:

In a large serving bowl empty bag of marshmallows.
Open pineapple and pour over marshmallows, and stir well.
Let soak, stirring every couple of hours, to let pineapple juice soak into marshmallows.
About an hour before serving, add cool whip, stir well, and place back in refrigerator for flavors to blend.

3 (15 2/3 ounce) cans yams
1/3 cup brown sugar
1 (10 1/2 ounce) package miniature marshmallows
1 (19 ounce) can chunk pineapple, packed in its own juice

Steps:

Drain yams and pineapple (save the pineapple juice).
In a pot, add pineapple juice, sugar, and '10' marshmallows.
Put yams in a 9x13-inch casserole dish and pour mixture over top.
Top with pineapple chunks.
Put into a 300°F oven for 40 minutes.
Top with remaining marshmallows (or amount you prefer).
Put casserole back into oven for 10 minutes to soften and slightly melt marshmallows.
Watch closely because marshmallows puff up quickly and may burn.
