1 Tbsp. Mrs. Dash® Garlic & Herb Seasoning Blend
1 1/2 lb. potatoes, cooked
1/2 cup low sodium chicken broth
1 Tbsp. unsalted butter

Steps:

  • 1. Combine ingredients in medium saucepan; mix well.
  • 2. Cook over low heat until heated through.
  • 3. Add additional low-sodium chicken broth to thin if needed.
  • 4. Using a potato masher, mash potatoes until smooth and creamy.

2 cups cauliflower, finely chopped fresh or frozen works great
1 tablespoon real sour cream, more to your taste
1 tablespoon butter (not margarine)
salt
pepper or any other of your favorite seasoning, to taste

Steps:

  • Steam or microwave cauliflower until Very soft.
  • Put cauliflower in blender or food processor with butter and sour cream.
  • Process or blend until creamy like mashed potatoes.
  • Add seasonings to taste and serve immediately.
  • Grated cheese or minced chives make a nice topping.

4 large garlic cloves, peeled
3/4 cup low-fat buttermilk
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh chives, for garnish

Steps:

  • Place potatoes and garlic in large saucepan. Add enough water to cover; bring to a boil over high heat. Reduce heat and simmer; uncovered, 20 to 30 minutes or until potatoes are fork-tender. Drain.
  • Place potatoes and garlic in medium bowl. Mash with potato masher or beat with electric mixer at medium speed until smooth.
  • Add buttermilk, salt, and pepper. Stir with fork until just blended. Garnish with chives, if desired.

  • Pre-heat the oven to 425 degrees. Peel and cut the ends off 8 cloves of garlic. In a bowl, toss the olive oil and garlic cloves together. Poor the garlic into a sheet of aluminum foil about 12 x 12 inches. Fold the foil over the garlic 1 side at a time to create a pouch. Roast the entire pouch in the oven for 20-30 minutes or until browned and slightly translucent.
  • While the garlic is roasting, peel and chop the potatoes into 1-inch chunks. Place potatoes in a stockpot and cover with water. Bring to a boil and reduce to a simmer. Simmer until potatoes are fork tender, about 15 minutes.
  • After your potatoes are fork tender, strain them and return them back into the stock pot you boiled them in. Place them back over the heat on low (making sure to keep an eye on them) to draw out a bit more of the moisture, about 2-3 minutes.
