- In an ice-filled glass, add the seltzer, vodka and lime juice; stir. Garnish with a lime wheel.
CUCUMBER VODKA SPRITZ
Steps:
- Add the cucumber to a blender and blend on high until pureed, about 1 minute. (If your cucumber doesn't blend easily, you can add up to 2 tablespoons of water to help it along).
- Pour the cucumber mixture into a strainer over a bowl and press the juice through, leaving the solids behind. (You should have about 1/2 cup juice.)
- In a pitcher, stir together the cucumber juice, vodka, lime juice and agave. Pour in the sparkling water and stir. Fill 4 rocks glasses with ice and divide the spritz among them. Garnish each with a cucumber spear and mint sprig and serve immediately.
PINEAPPLE-CUCUMBER SPRITZ
The pineapple-cucumber base can be made up to 6 hours ahead. Add seltzer just before serving.

- Muddle mini cucumbers, mint leaves, and 1 cup pineapple juice. Stir in 1 more cup pineapple juice; refrigerate until cold. Pour halfway up ice-filled glasses; top with seltzer. Garnish with cucumber ribbons.
- To spike it: Add 1 ounce pisco per serving, before the seltzer.

Steps:
- Chop the cucumber into a few chunks, then put in a blender or food processor with the wine and elderflower cordial. Whizz until well blended, then pour through a sieve set over a large bowl or jug. Tip the contents of the sieve back into the machine, whizz again until pulpy, then sieve again into the liquid already collected. Add 1-2 tbsp of the cucumber pulp from the sieve into the liquid and discard the rest. Chill until ready to serve.
- To serve, fill glasses with a few ice cubes and some mint leaves. Pour in enough cucumber base to come halfway up the glass, then top up with soda water.
