CHINESE PINEAPPLE CHICKEN: READY IN 30 MINUTES OR LESS!

4 boneless, skinless chicken breasts
1 cup flour
1 teaspoon kosher salt
1 teaspoon black pepper
2 cups + 2 tablespoons canola oil
2 tablespoons garlic, chopped
1 cup chicken broth
1 can pineapple, crushed
1/2 cup pineapple juice, reserved from can
1/2 cup sugar
1/2 cup white vinegar
1/4 cup soy sauce
1 tablespoon hot sauce (I like Sriracha, but any hot sauce will do)
2 tablespoons flour

Steps:

  • 2 minutes - Cut the chicken breasts into small, bite-sized cubes and place into a gallon zipper bag.
  • 1 minutes - Scoop flour, salt and pepper into the bag with the chicken. Shake to cover.
  • 5 minutes - Pour 2 cups oil into a medium, stock pot and heat on medium-high temperature until a thermometer reaches 325 degrees Fahrenheit.
  • 10 minutes - Scoop half of the chicken into the pot and cook for 3 to 4 minutes or until golden brown. Remove from the oil and drain on a paper towel. Repeat with the second half of chicken. Set aside.
  • 2 minutes - Pour 2 tablespoons canola oil into a wok or large skillet. Add chopped garlic. Heat on medium temperature until the garlic is sizzling.
  • 2 minutes - Combine crushed pineapple, pineapple juice, sugar, white vinegar, soy sauce, hot sauce and cornstarch in a large mixing bowl.
  • 3 minutes - Pour pineapple sauce into the garlic oil. Whisk to combine. Cook for 2 to 3 minutes or until the sauce begins to thicken.
  • 5 minutes - Add chicken to the sauce and stir to cover. Continue cooking for an additional 5 minutes.

1/4 organic pineapple, chopped
1 cup Tamarind Nomato Sauce {or other prepared nomato sauce}
2 cloves organic garlic, grated
1 tsp organic dried ginger or 1 TB fresh grated organic ginger
1/2 cup brewed chicory root brew {or brewed coffee if successfully reintroduced}
1/2 tsp sea salt
1 organic fryer chicken, cut into pieces

Steps:

  • In a 13x9 3-quart baking dish, mix together pineapple, sauce, garlic, ginger, chicory brew, and sea salt. Arrange chicken pieces and gently toss to coat. Cover and let marinate in the fridge for at least two hours, overnight preferred, flipping the chicken pieces often. Set the baking dish out on the counter 30 minutes before cooking. Preheat oven to 350° F. Bake the chicken in the pineapple "coffee" sauce 1 1/2 hours and let it sit under the broiler for 3 minutes to give the chicken some added color. Serve immediately. * You could easily make this in your slow cooker, just marinate the chicken per the instructions above. Then place everything in the crock and set it to cook on low for 6-8 hours.

3 tablespoons olive oil, divided

1 red bell pepper, cubed
1 bunch scallions, trimmed and sliced into 1/2-inch lengths
1 (12 ounce) can pineapple chunks, drained and juice reserved
1 tablespoon cornstarch

Steps:

  • Combine soy sauce, 2 tablespoons olive oil, paprika, and salt in a bowl. Add chicken strips and let marinate while preparing the remaining ingredients.
  • Heat the remaining 1 tablespoon of olive oil in a wok. Add bell pepper and stir-fry for 3 minutes. Add scallions and cook for 2 more minutes. Remove chicken from marinade and add to the wok; discard marinade. Cook, stirring occasionally, until chicken is cooked through and no longer pink in the centre, 10 to 15 minutes.
  • Combine pineapple juice and cornstarch in a bowl; mix together. Add pineapple chunks to the skillet and cook for 2 to 3 minutes. Pour in pineapple juice mixture and bring to a boil. Simmer until sauce has thickened, about 3 minutes.

1/2 cup onion, thinly sliced
1/3 cup sugar
1/4 teaspoon garlic powder
1 cup ketchup
1 (20 ounce) can pineapple chunks, drained, reserving 3/4 cup liquid
2 tablespoons lemon juice
2 tablespoons soy sauce
6 boneless skinless chicken breasts, cut into 3x1-inch strips
1/4 cup flour
2 tablespoons oil
1 tablespoon sesame seeds
hot cooked rice

Steps:

  • Heat oven to 375°.
  • In medium saucepan, combine onion, sugar, garlic powder, ketchup, 3/4 cup reserved pineapple liquid, lemon juice and soy sauce,.
  • Bring to a boil.
  • Reduce heat: cover and simmer 15 minutes. stirring occasionally.
  • In plastic bag or shallow bowl, toss chicken strips with flour to coat.
  • In large skillet over medium heat, cook chicken in hot oil 4 to 5 minutes or until lightly browned.
  • Arrange cooked chicken and pineapple in 12X8-inch (2 qtr) baking dish.
  • Top with sauce; sprinkle with sesame seeds.
  • Bake for 20 to 25 minutes or until chicken is hot and sauce is bubbly.
  • Serve over hot cooked rice.

I got this recipe from Taste Of Home years ago and it was a family favorite for a long time. For some reason I had not made it in forever. We got back from Hawaii and I wanted to make a dish commemorating the trip and remembered this recipe. I made it and it was as delicious as I remembered. I hope you all enjoy it as much as we do!

4 boneless skinless chicken breast halves (1 pound)
1 teaspoon dried thyme
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon vegetable oil
1 (20 ounce) can unsweetened pineapple slices
1 tablespoon cornstarch
1/4 cup Dijon mustard
1/4 cup honey
2 garlic cloves, minced
hot cooked rice

Steps:

  • Sprinkle chicken with thyme, salt and pepper.
  • In a skillet, brown chicken in oil. Meanwhile, drain pineapple, reserving the juice.
  • Cut pineapple rings in half and set aside.
  • Combine cornstarch and 2 tablespoons juice until smooth; set aside.
  • Combine mustard, honey, garlic and remaining pineapple juice; mix well.
  • Add to pan; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until chicken juices run clear.
  • Remove chicken and keep warm.
  • Stir cornstarch mixture and add to pan; bring to a boil. Boil and stir for 2 minutes.
  • Return chicken to pan. Top with pineapple; heat through.
  • Serve over rice.

2 teaspoons baking powder
1 egg
1 cup milk

Steps:

  • Cream sugar with butter.
  • Sift flour and baking powder.
  • Add to creamed mixture alternately with egg/milk mixture. (place egg in cup and add milk to make 1 cup).
  • Spread in 9x13 pan.
  • Cover with well-drained pineapple.
  • Mix topping ingredients till crumbly and sprinkle over pineapple.

1/3 cup low-sodium soy sauce
1/3 cup low-sodium chicken stock
1/3 cup hoisin sauce
1/2 cup brown sugar
1 tablespoon minced fresh garlic
2 teaspoons cornstarch
1 tablespoon olive oil
8 boneless, skinless chicken thighs, cut into 1-inch cubes
Kosher salt and freshly ground black pepper
1 cup diced pineapple
1/2 cup roasted salted cashews, optional
Cooked rice, for serving

Steps:

  • Whisk the pineapple juice, soy sauce, stock, hoisin sauce, brown sugar, garlic and cornstarch together in a medium saucepan. Bring the mixture to a boil and cook until the mixture has reduced to about 1 cup and is the consistency of thick syrup. Set the sauce aside.
  • Add the oil to a large nonstick skillet and place over medium-high heat. Add the chicken and season it with salt and pepper. Cook, stirring, until the chicken is no longer pink, about 5 minutes. Drain off any liquid, then add the sauce to the skillet and stir until combined. Add the pineapple and cashews if using; cook, stirring, for an additional 1 minute. Serve the chicken on a bed of rice.

1 cup whole wheat flour
1/2 cup vegan sugar (i.e. demerara)
2 teaspoons baking powder
1 1/2 teaspoons Ener-G Egg Substitute
1/2 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons water
1 tablespoon white vinegar or 1 tablespoon cider vinegar
1 cup crushed pineapple in juice, undrained
1/3 cup unsweetened applesauce
2 tablespoons coarse sugar, such as demerara or 2 tablespoons raw sugar
1/2 teaspoon cinnamon

Steps:

  • Preheat the oven to 350°F.
  • Lightly spray or wipe the bottom and sides of a 8 X 8-inch glass baking pan with oil or cooking spray. (You may use metal, but the baking time will vary.).
  • Put the oats into a blender and grind until they are fine. Stir a couple of times to make sure that they're uniformly ground.
  • Mix the oat flour with the other dry ingredients.
  • Add the wet ingredients and stir until moistened and completely combined, but don't overmix.
  • Pour into the prepared pan (batter will be thick).
  • Mix together the sugar and cinnamon topping, and sprinkle it over the top.
  • Bake for 30-40 minutes, until a toothpick inserted in the middle comes out clean.

8 boneless, skinless chicken thighs
2 heaped tsp fine sea salt
500ml buttermilk
200g rice flour
100g cornflour
3½ tsp baking powder
2 tsp hot smoked paprika
2 tsp garlic granules
1 tbsp dried oregano
1 litre vegetable oil, for deep-frying
10g oregano leaves

Steps:

  • Quarter each chicken thigh, then tip into a large bowl. Season well with the salt, then pour over the buttermilk and give it all a good mix. Cover and chill overnight.
  • Combine the rice flour, cornflour, baking powder, paprika, garlic granules, dried oregano, 1 tsp salt and ½ tsp freshly ground black pepper in a medium bowl. Drop in the brined chicken pieces, four at a time, tossing lightly to coat well. Gently shake off any excess, then arrange on a baking tray.
  • Heat the oil in a large, deep saucepan (ensuring it is no more than two-thirds full) to 170C or until a cube of bread dropped in browns within 30 seconds. Fry the chicken in small batches for 3 mins at a time until golden and cooked through. This will help keep the oil at the right temperature and won't overcrowd the pan.
  • Remove the fried chicken pieces to a clean tea towel using tongs to drain off any excess oil, then transfer to a wire rack to ensure they stay crisp. Alternatively, put the fried chicken on a clean baking tray and keep warm and crisp in a low oven. When all the chicken pieces have been fried, drop the oregano leaves into the hot oil and fry until crisp, about 30 seconds- 1 min. Arrange the chicken on a serving platter, scatter over the fried oregano and serve with the pineapple sauce (see 'goes well with', below).

1 large roasting chicken, skinned & and visible fat removed, cut-up*
3 teaspoons brown sugar or 3 teaspoons molasses
2 tablespoons rice wine vinegar
1 tablespoon extra virgin olive oil
3 tablespoons light soy sauce
2 tablespoons fresh squeezed lemon juice
1/4 teaspoon fresh lemon zest
1 cup brewed coffee
1/2 cup ketchup
1/2 cup filtered water

Steps:

  • Bring to a boil,stirring frequently.
  • Reduce heat to simmer and reduce to almost half.
  • Stir frequently as this can burn.
  • Let cool,off heat, 20 minutes.
  • Add chicken and blend well.
  • Marinate no more than 30 minutes in cool place.
  • Turn into baking dish and bake uncovered at 350 degrees for one hour.
  • Baste at least three times while baking.
  • * Cut cholestrol down further by using boneless skinless chicken breasts.

1/4 teaspoon salt
1/3 cup sugar
1/3 cup walnuts, chopped
3/4 teaspoon cinnamon

Steps:

  • Preheat oven to 350*. Coat a 9" round pan with cooking spray.
  • Combine sugar, egg and oil, mixing well.
  • Add carrots, pineapple and orange juice, blending well.
  • Combine dry ingredients and then add to carrot mixture stirring until moist. Spread in prepared pan.

  • Mix all ingredients together and sprinkle over cake batter.
  • Bake @350* for 25-35 minutes.
