CHERRY NUT COOKIES

A PRETTY cookie which will make your cookie tray at Christmas look good! The cherry and nut combination in a buttery base is delicious! A rolled type dough which can be made and baked later. These cookies freeze very well for make ahead plans. This basic cookie dough I have tried many times substituting different ad-ins.

Number Of Ingredients 9

1 cup butter, softened
2 cups sugar
2 eggs
3 teaspoons vanilla extract
3 1/4 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup candied cherry, chopped
1 cup pecans, chopped

Steps:

  • Mix softened butter and sugar until fluffy. Add eggs and vanilla, mixing well.
  • Combine flour, baking soda and salt in a separate bowl and add to creamed mixture. Stir in candied cherries and pecans.
  • Shape dough into long rolls about 2 inches in diameter. Wrap in wax paper and chill at least 4 hours. (May be made days ahead before baking and stored in refrigerator or freezer. Let dough thaw slightly before slicing.).
  • Unwrap and cut into 1/4 inch slices; place on ungreased cookie sheet.
  • Bake in a 350 degree oven for approximately 10 minutes.

1 7-ounce tube almond paste
3/4 cup confectioners' sugar
1/2 teaspoon grated lemon zest
1/4 teaspoon salt
1 large egg white
1/3 cup all-purpose flour
1 cup pine nuts
3 tablespoons cherry jam, large pieces chopped

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper. Break up the almond paste and put it in a large bowl. Add the confectioners' sugar, lemon zest and salt. Beat with a mixer on medium speed until the mixture looks like fine crumbs, about 1 minute. Increase the mixer speed to medium high and beat in the egg white until very smooth, about 2 minutes. Reduce the mixer speed to low and beat in the flour until just combined.
  • Scoop tablespoon-size balls of dough and roll in the pine nuts to coat. Arrange 1 inch apart on the prepared pan. Press a thin wooden spoon handle or chopstick into each ball to make a deep indentation in the center.
  • Bake until the cookies are set around the edges but still soft in the center, 22 to 26 minutes. Re-indent the cookies with the back of a small measuring spoon while still warm. Fill with the cherry jam. Let the cookies cool completely on the pans.

1 package (8 ounces) candied cherries, halved
1 package (8 ounces) chopped candied pineapple
1 cup chopped pecans
4 cups all-purpose flour, divided
1-1/2 cups butter, softened
2-1/4 cups packed brown sugar
6 eggs
1 teaspoon vanilla extract
1 teaspoon lemon extract
2 teaspoons baking powder
GLAZE:
1 cup confectioners' sugar
1 tablespoon milk
1/2 teaspoon vanilla extract

Steps:

  • In a bowl, toss the cherries, pineapple and pecans with 1/2 cup flour; set aside. In a large bowl, cream butter and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in extracts. , Combine baking powder and remaining flour; add to creamed mixture. Beat on low speed until well mixed. Fold in cherry mixture until moistened. Transfer to a greased and floured 10-in. fluted tube pan., Bake at 300° for 2 hours or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Combine glaze ingredients; drizzle over cake.

1/2 cup butter, melted
1 jar (10 ounces) maraschino cherries, drained and patted dry
1 can (8 ounces) crushed pineapple, drained and patted dry
1-1/2 cups white baking chips
1 cup sweetened shredded coconut
1 cup chopped walnuts
1 can (14 ounces) sweetened condensed milk

Steps:

  • In a small bowl, combine cracker crumbs and butter. Press into a greased 13-in. x 9-in. baking dish. Sprinkle with the cherries, pineapple, vanilla chips, coconut and walnuts; drizzle with condensed milk. , Bake at 350° for 25 minutes or until edges are golden brown. Cool on a wire rack. 1 (18 1/4 ounce) box pineapple cake mix

  • Preheat oven to 375*.

1 teaspoon ground cinnamon
½ teaspoon baking soda
1 cup butter, at room temperature
1 cup brown sugar, packed
3 eggs
½ cup milk
2 tablespoons vanilla-flavored cream sherry
7 cups chopped mixed nuts
2 cups chopped raisins
2 cups pitted chopped dates
1 pound candied pineapple, coarsely chopped
1 pound red and green candied cherries, chopped

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease several baking sheets. Sift together the flour, cinnamon, and baking soda in a bowl; set aside.
  • Beat together the butter and brown sugar in a large mixing bowl until fluffy, about 5 minutes. Beat in the eggs, one at a time. Gradually beat the flour mixture into the butter mixture, alternating each addition with about 2 tablespoons of milk until all the milk is incorporated and the dough is soft. 1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
4 eggs
1/4 cup oil
1/2 cup chopped pecans
2 oz. (1/4 of 8-oz.pkg.) PHILADELPHIA Cream Cheese, softened
1 Tbsp. milk
1/2 cup powdered sugar
10 fresh mint leaves

Steps:

  • Heat oven to 350ºF.
  • Reserve 5 cherry halves. Drain pineapple, reserving juice. Add enough water to reserved juice to measure 1 cup. Beat cake mix, dry pudding mix, eggs, oil and pineapple juice in large bowl with mixer until blended. Add pineapple, nuts and remaining cherries; mix just until blended.
