PINEAPPLE CAKE WITH CRUSHED PINEAPPLE TOPPING
Steps:
- Preheat oven to 350 degrees.
- In a large bowl, beat crushed pineapple (undrained) and cake mix on medium speed for about 1 minute.
- Spread batter evenly into an ungreased 10 inch angel food tube pan.
- Bake for 40 minutes. (The top should be golden brown)
- Once the cake comes out of the oven, immediately invert the cake by placing it upside down on a bottle to cool completely, approximately 2 hours. (Can also use the feet if your tube pan has them instead of the bottle. )
- To remove from the pan, slide a narrow spatula or butter knife gently down the sides of the cake and remove the middle insert. Then, slide your knife around the middle section of the cake to release it from the pan.

- Serve with whipped topping

- Preheat the oven to 350 degrees F. In a large mixing bowl, combine angel food cake mix and crushed pineapple (do not drain) until no dry spots of cake mix are visible. Do not overmix.
- Spread batter evenly in an ungreased 9x13-inch glass baking dish. Bake in preheated oven for 25 to 30 minutes, or until golden brown. It will still be a little jiggly when you pull it out, but it should not be runny. Remove from oven, and allow the cake to cool completely, about 1 hour.
- Spread whipped topping over cooled cake, if you wish. Add pineapple chunks or fresh berries.
ANGEL FOOD PUDDING CAKE / ANGEL LUSH WITH PINEAPPLE
You can use any flavour pudding, fruit etc. I also use Mandarin oranges with shaved bits of chocolate. Delicious and easy dessert.

- Stir dry pudding mix with reserved pineapple juice. Fold in pineapple, then whipped topping. Frost each ring top as you rebuild cake. Frost outside of cake with remaining mixture.

I have had this recipe in my file for years and I'm not sure who I got it from. It is typed on a 3X5 card so I know it is pretty old. It is a very moist cake and you can frost it with cream cheese frosting or just top it whith whipped topping of your choice.

- In heavy saucepan combine cornstarch, all of the sugar and salt.
- Add pineapple with juice and mix well.
