- Preheat oven to 350°. In a large bowl, combine pineapple and bananas. Sprinkle with brown sugar and flour; toss to coat. Transfer to an 11x7-in. baking dish coated with cooking spray., In a small bowl, mix the first 5 topping ingredients; cut in butter until crumbly. Sprinkle over pineapple mixture., Bake 30-35 minutes or until filling is bubbly and topping is golden brown. Serve warm or at room temperature.

BANANA SPLITS WITH PINEAPPLE BROWN SUGAR TOPPING
Steps:
- Combine the pineapple with juice, lemon juice, sugar and cinnamon in a medium saucepan. Cook over a medium heat, uncovered, stirring occasionally until the sugar is dissolved and the juice is reduced somewhat, about 3 minutes. Set aside to cool slightly.
- Cut the bananas in half crosswise. Cut each banana half lengthwise, being careful not to cut all the way through. Split the banana halves open and place each one on a small dessert plate. Top each banana with a scoop of ice cream then about 2 1/2 tablespoons of the warm pineapple mixture. Top each with a mint leaf, if using, and serve.

Making meringue can be tricky. Try to think of the three 'S''s: stable, smooth and slow. They key to a well-baked and minimally cracked pavlova shell is a STABLE egg foam. This is achieved by beating the eggs on a moderate speed to create uniform air bubbles and SLOWLY adding the sugar so it can have a chance to fully dissolve, without deflating the air that's being beaten in. The meringue must be SMOOTH before baking or any of those grains of undissolved sugar will weep and cause cracks.

- Make the meringue: Preheat the oven to 275˚ F. Trace a 9-inch circle on a sheet of parchment paper, then flip it over and use it to line a baking sheet (you should be able to see the circle through the paper).
- Combine the egg whites, cream of tartar and salt in a large bowl and beat with a mixer on medium speed until soft peaks form, 2 to 4 minutes. With the mixer still on, gradually sprinkle in the sugar (about 1 tablespoon at a time), beating 20 to 30 seconds between additions to be sure the sugar dissolves completely. After the sugar is incorporated, continue to beat on medium speed until the meringue is very thick, shiny, stiff and totally smooth, 5 to 10 more minutes (check occasionally by rubbing a bit between your fingers to feel for any sugar granules). Add the cornstarch, vanilla and vinegar and beat to just combine, 20 to 30 more seconds.
- Mound the meringue in the middle of the traced circle on the baking sheet and spread into a 9-inch round. Make a slight indentation in the center for the toppings, then use an offset spatula or the back of a spoon to make swoops in the meringue. Place in the oven on the middle rack, then immediately reduce the temperature to 225˚ F. Bake until crisp and dry, about 2 1/2 hours (do not open the oven during baking); the meringue should still be white or a very pale cream color. Turn off the oven and let the meringue cool completely in the oven, 2 to 3 hours.
- Make the toppings: Toss the strawberries and pineapple in separate small bowls with 1 teaspoon sugar each; let stand 15 to 20 minutes until juicy. In a medium bowl, whisk the heavy cream until stiff peaks form. Carefully peel the meringue off the parchment and place on a platter. Top with small scoops of ice cream, nestling the banana slices between the scoops. Top with the whipped cream, strawberries, pineapple, hot fudge, cherries and peanuts.
CRISP BANANA AND PINEAPPLE FRITTERS
Steps:
- In a shallow bowl, whisk the eggs with the cinnamon using a fork. Place the panko bread crumbs on another plate. Toss the fruit in the egg, then into the crumbs. Repeat this 1 more time to make a second coating.
- In a 6 to 8-quart pan heat canola oil, filled just 3 inches from top of the pan, to 365 degrees F. Drop the fruit into the oil and cook until brown on all sides. Drain on paper towels.
- Serve immediately, drizzled with honey, if desired.

- 1. Combine apples, bananas, pineapple orange juice, 1 teaspoon cinnamon and 1/4 teaspoon nutmeg in 9x9 baking pan.

- Peel bananas and drizzle with lemon juice; then cut in half lengthwise and then again across.
- You should have a total of 16 quarters of banana.
- Then distribute these banana quarters equally among 4 broil-and-serve dishes.
- In a small bowl, combine the brown sugar, uncooked oats, flour and allspice -- NOTE: Allspice tastes like a combination of nutmeg, cinnamon and cloves, so you could probably substitute a mixture of those three if you're out of allspice or go with just cinnamon.
- Cut butter into the mixture until it resembles crumbs and then spread the crumbs equally over all the bananas.
- Turn on your broiler and place these dishes under the broiler, 5" from the heat source and broil 3 min; the idea is to brown it and warm it at the same time.
- Watch carefully, don't burn it or yourself!

- Preheat oven to 400 degrees.
- Butter 9 inch pie pan or shallow baking dish.
- Topping:.
- In small bowl mix together flour, oatmeal, sugar, coconut and butter.
- With fingertips, blend the ingredients until the mixture resembles coarse crumbs.
- In separate bowl combine orange liquor and lime juice.
- Peel bananas and slice them on the diagnal in 1/4 inch ovals.
