1 pineapple
One 15.25-ounce box vanilla cake mix
3 large eggs
1/2 cup vegetable oil
1 tablespoon brown sugar, plus more for serving
1/2 cup maraschino cherries, chopped
Whipped topping, for serving

Steps:

  • Carefully cut off the top of the pineapple and set it aside. With a large spoon, scoop out the core and flesh from the pineapple and the top crown. Discard the core, cut up the flesh into chunks and reserve with the juice. Dry out the hollow pineapple the best you can with a paper towel.
  • In a large bowl, mix the cake mix, eggs, vegetable oil, 1 cup of the pineapple juice and 3/4 cup of the pineapple chunks. Pour the cake batter into the hollowed-out pineapple to fill it three-quarters of the way to the top. Reserve the leftover batter for another use (perhaps a second pineapple? Or cupcakes?!). Microwave on high until the cake is baked, about 10 minutes. A skewer should come out clean. Remove from the microwave with a kitchen towel because it's super hot on the outside, let cool for 15 minutes.
  • While the pineapple is cooling, make the topping: In a small bowl, combine the remaining pineapple chunks (you should have about 1/2 cup) and the brown sugar and microwave on high for 1.5 to 2 minutes. Mix well with a spoon and let cool slightly.
  • Top the pineapple cake with the sugared pineapple, some whipped topping and chopped maraschino cherries. Sprinkle with a bit of brown sugar for the crunch and because it looks pretty. Serve with the pineapple crown on top. Find a long spoon and dig in!

1 pkg pineapple cakemix
1 small vanilla instant pudding
3/4 c cooking oil
4 large eggs
10 oz 7-up
icing
2 c sugar
1 large can pineapple crushed
2 large eggs
2 Tbsp flour
1 stick butter

Steps:

  • 1. Mix all ingredients and bake at 325 in 2 9 inch round pans for 25 minutes or center springs back.
  • 2. Mix all ingredients for icing and cook over low fire untill thicken. Slightly cool and then stack layers only putting icing between layers and on the top. No icing on the sides.
  • 3. Absolutely delicious!

3/4 c vegetable oil
1 1/4 c 7-up carbonated soda
1 1/2 c white sugar
2 Tbsp all purpose flour
2 eggs
1/2 c butter
1 (20 ounce) can crushed pineapple with juice
1 ( 3.5 ounce packed flaked coconut

Steps:

  • 1. Direction: Gease 9x13 pan, and preheat oven to 350'F degrees
  • 2. Combine cake mix, pudding mix, slightly beaten eggs, and vegtable oil in a mixing bowl. Beat on mdium speed until batter is light and fluffy. Add 7-up soda and beat in well pour batter into prepared pan.Bake for 35 to 40 minutes or till done while cake is baking prepare the topping; it will take about 15 minutes to prepare.In a medium non-aluminum saucepan, combine sugar and flour. Stir in 2 eggs, butter or margarine, and pineapple. Cook over low heat, stiring constantly, until thickened, Remove fron heat and stir in coconut,spread over warm cake.

Cake ingredients:
1 box butter cake mix
4 eggs
3/4 cup vegetable oil
8 oz 7UP soda
1 box pineapple or lemon instant pudding and pie filling
Filling ingredients:
1 can (15 oz.) crushed pineapple
1 cup sugar
3/4 stick butter
4 Tbsp flour
3 egg whites

Steps:

  • Preheat oven to 350 degrees F. Prepare 3 cake pans. Blend all cake ingredients together in mixer then spread evenly in cake pans to bake.
  • Bake 35 to 40 minutes. Check center with toothpick.
  • While cake is baking, add ingredients for filling in pot to cook on stove. Cook until thick. When cake is done, allow it to cool for 10 to 15 minutes before removing from pan. Spread filling in between layers and on top of cooled cake.

angel flake coconut, 1 can

Steps:

  • Empty lemon supreme cake mix and instant pineapple pudding into a large mixing bowl.
  • Add oil and eggs.
  • Beat about 2 minutes.
  • Add 7-Up and mix until well blended.
  • Pour into a greased and floured cake sheet pan.
  • Preheat oven to 350 degrees Fahrenheit.
  • Bake 35 to minutes or until done.
  • While still hot spread with Icing.
  • ICING:.
  • Cook margarine, sugar, pineapple, flour and eggs until thick.
  • Add coconut and blend well.
  • Spread over cake while both are still warm.

  • Preheat oven to 350 degrees. Prepare three 8 or 9 inch round cake pans with butter and sugar.
