PICKY KIDS HEALTHY BANANA MUFFINS
This is a recipe I came up with to get my picky eater to eat something else besides cereal. We called them chocolate chip cupcakes and he eats them up.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease 2 mini muffin tins with cooking spray.
- Mix bananas in the bowl of a stand mixer fitted with the paddle attachment until smooth. Blend in yogurt, sugar, butter, applesauce, eggs, and vanilla extract.
- Mix whole wheat flour, cinnamon, baking powder, baking soda, and salt together in a large bowl. Pour into banana mixture; stir until moistened. Fold chocolate chips into the batter.
- Scoop batter into the prepared muffin tins, filling each cup 2/3 full.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 10 to 15 minutes.

HEALTHY TODDLER-FRIENDLY MINI MUFFINS
These Healthy Toddler Friendly Muffins are a great snack for kids because they're sweetened only with fruit and they're full of vegetables and whole grains

Steps:
- Preheat your oven to 350 degrees Fahrenheit and grease a 24-cup mini muffin tin.
- Add the whole wheat flour, rolled oats, baking soda and salt to a large bowl and whisk to combine.
- To a separate bowl add the eggs and whisk them with a fork to break up the yolks. Add the canola oil, the grated carrot, the grated zucchini, grated apple, and the mashed bananas and mix with a spoon until all the wet ingredients are combined.
- Pour the wet ingredients into the bowl with the dry ingredients and fold everything together using a rubber spatula just until no streaks of flour remain.
- Drop about a tablespoon of the muffin batter into each of the prepared mini muffin cups and bake at 350 degrees for about 18-22 minutes or until the muffins are a nice golden brown.
- Remove them from the oven and from their tin and let them cool completely on a cooling rack before enjoying!
- This recipe makes about 30 mini muffins, but I usually make 24 mini muffins for the kids and 3 regular sized muffins for my husband and I to enjoy.

MINI BANANA BLUEBERRY MUFFINS
A Soft Baby Muffin with Banana and Blueberry, perfect as a first muffin or for toddlers and kids!

Steps:
- In a large bowl, mash the bananas with a fork
- Add eggs, vanilla, and butter/oil
- Beat these wet ingredients together with a hand held beater (I use an electric one), the batter should become smooth, yellow and a little frothy
- Add the flour and baking powder
- Beat for a further 30-60 seconds to make a well-mixed batter
- Portion into an oiled muffin tin (I use a non-stick silicon tray sprayed with oil) Mix makes 12 standard sized muffins or 30 mini muffins
- Top the muffins with a blueberry or two
- Bake at 180 degrees Celsius for 15 mins (360 Fahrenheit), 15 min cook time is based on making mini muffins, the mix makes approx 30 mini muffins. If you are using a standard muffin tray and making approx 12 muffins the cook time will be longer, approx 25-30 mins
- Cool
- Serve

- Applesauce Pancakes. Pancakes are a food that a lot of picky eaters can learn to love. I like to maximize them with some nutrition, but you’ve got to take it slow.
- Baked Potato Skins. A lot of picky eaters like crunchy foods. And, making some homemade potato skins is a great way to get added nutrients (the skins are packed with fiber, iron, and other nutrients).
- Apple Chips. Apples in general are a great fruit for picky eaters, but if they won’t go for them, try apple chips. They’ll resemble more of a “junk food,” which may appeal to them.
- Shredded Chicken Quesadilla. Why shredded chicken? It’s a lot less texture than diced chicken breast, which means your picky eater will be more likely to eat it.
- Raw Veggies. Sound simple? It might seem so, but raw veggies are often the gateway to veggies for picky eating kiddos. I usually start with baby carrots, look for really thin ones or cut them in half or quarters if they’re really big.
- No Sauce Flatbread. Not all picky eaters love pizza. For some, it’s overwhelming with globs of melty cheese that slide off the sauce. Flatbread with just some seasonings, olive oil, and a little bit of cheese is a great way to get them used to eating pizza, or an alternative to it, if that’s all your picky eater wants to eat.
- Homemade Chicken Nuggets. This is one of my favorite foods for picky eaters! I got my son to eat all kinds of chicken from making my own homemade chicken nuggets.
- Granola Bar. A granola bar is just a step away from a cookie, a food many picky eaters will gladly consume. Try simple granola bars that have ingredients your child already likes.
- Carrot Cake Smoothie (bonus immune-booster) Smoothies are smooth, and shouldn’t have chunks. That’s good for picky eaters. Plus, they can be packed with all sorts of nutrients and vitamins.
- Pumpkin Waffles. These are delicious and only look a little orange, so the color isn’t very different, which is good for picky eaters. They notice the color of their food.
