PICKLED TOMATOES

Number Of Ingredients 8

1 pint cherry tomatoes
1 cup white vinegar
1 tablespoon kosher salt
1 tablespoon granulated sugar
1 teaspoon dried rosemary
1 teaspoon lemon zest
1/2 teaspoon whole black peppercorns
2 cloves garlic, crushed

Steps:

  • Poke holes in the top of the tomatoes with a skewer.
  • In a saucepan, heat the vinegar, salt, sugar and 1 cup water to a rolling boil.
  • In a mason jar, add the rosemary, lemon zest, peppercorns and garlic. Add the cherry tomatoes and pour over the hot vinegar mixture. Screw a top on the mason jar. Let cool, then refrigerate. The pickles will last up to 2 weeks refrigerated.

1 1/2 pounds tomatoes, peeled and cored
1 bunch scallions, white and green, sliced diagonally
5 serrano chiles, with seeds, sliced diagonally
3/4 cup white vinegar
1/4 cup palm or dark brown sugar
1 tablespoon coarse salt
2 tablespoons freshly grated ginger
2 tablespoons pureed garlic
1 tablespoon black or yellow mustard seeds
1 tablespoon cracked black peppercorns
1 tablespoon ground cumin
2 teaspoons cayenne pepper
1 teaspoon turmeric
3/4 cup olive oil

Steps:

  • Slice tomatoes into 6 wedges each. Reserve in a large bowl with scallions and serrano chiles.
  • In a saucepan bring vinegar to a boil. Add sugar and salt, and cook until dissolved, about 1 minute. Remove from heat and reserve.
  • Measure ginger, garlic, mustard seeds, cracked peppercorns, cumin, cayenne, and turmeric onto a plate and place near stove. In another saucepan heat oil until smoking. Add spices and cook, stirring constantly with a wooden spoon, until aromas are released, about 2 minutes. Remove from heat and stir in vinegar mixture.
  • Immediately pour over reserved vegetables. Mix well, cover with plastic wrap, and refrigerate a minimum of 3 days.

20 ounces cherry tomatoes (about 2 pints)
4 garlic cloves, halved
2 teaspoons whole peppercorns
1/2 teaspoon mustard seed
2 cups water
2 cups cider vinegar
3 tablespoons salt
2 tablespoons sugar

Steps:

  • Pierce the bottom of each cherry tomato with a skewer. In a large bowl, place tomatoes, garlic, peppercorns and mustard seed. In a saucepan, bring water, vinegar, salt and sugar to a simmer until sugar and salt dissolves. Pour over tomatoes; cover. Let stand 2 hours. Transfer to jars, if desired; seal tightly. Refrigerate 48 hours before serving and up to 1 month.
