PICKLE JUICE BLOODY MARY

1/2 cup tomato juice
3 tablespoons dill pickle juice
1 1/2 ounces vodka
2 teaspoons Worcestershire sauce
1 teaspoon prepared horseradish
6 dashes hot sauce
Freshly ground black pepper
1 celery heart stalk
1 lemon wedge
1 cornichon
1 pitted olive

Steps:

  • Combine tomato juice, pickle juice, vodka, Worcestershire, horseradish, hot sauce and some black pepper in a small pitcher and stir. Fill an 8-ounce glass with ice, pour the Bloody Mary over the ice and garnish the glass with the celery and lemon wedge.
  • Stack the cornichon and olive on a 3-inch skewer. Place atop the Bloody Mary and enjoy!

1 cup vinegar
1 cup water
2 tablespoons white sugar
1 tablespoon salt
2 cloves garlic, smashed
1 pound jalapeno peppers, thinly sliced

Steps:

  • Combine vinegar, water, sugar, salt, and garlic in a pot over medium-high heat. Bring to a boil, stirring until sugar and salt dissolve. Remove pickling liquid from heat.
  • Stir jalapeno peppers into the pot. Let stand until slightly cooled, about 15 minutes.
  • Transfer jalapeno peppers to a large Mason jar; pour in pickling liquid to cover. Let cool to room temperature, about 30 minutes. Cover and refrigerate.

I love these in my Bloody Marys They aren't the same without at least two of these beans in the glass.

2 lbs green beans, bush (round slim bean not flat)
2 1/2 cups vinegar
2 1/2 cups water
1/4 cup canning salt
1 cayenne pepper (per jar) or 1 jalapeno pepper, with seeds no stems (per jar)
4 garlic cloves, peeled
4 heads fresh dill
2 canning jars, one quart (sterilized)

Steps:

  • Trim ends of green beans. Set lids of jars to boil in water in a small pan. Combine vinegar and water and salt in a large saucepot. Bring to a boil.
  • Pack beans lengthwise into hot jars, Add 1/4 teaspoon cayenne pepper, or the jalapenos slices, 2 cloves garlic and 2 heads of dill to each quart.
  • Ladle the boiling vinegar solution over beans. leaving 1/4 inch headspace. Place caps (still hot from the boiling water) on jars. Invert jars till cool.
  • You can place them in a hot water bath for 10 minutes, if desired. Store in a cool dry place for 4-6 weeks before opening.
  • After opening keep refrigerated. These are delicious! and non FAT!

Homemade pickled jalapenos are a treat to have on hand for chilis, tacos, salads and sandwiches. Pouring hot brine over them instead of boiling them gives them a pleasant fresh crispness instead of the soft texture of the store-bought variety.

2/3 cup white wine vinegar
1/2 onion, sliced thinly (about 1/2 cup)
1 tablespoon Kosher salt
1 teaspoon black peppercorns
1 teaspoon coriander seeds
5 large jalapenos, cut into 1/8-inch rounds

Steps:

  • Combine the vinegar, 2/3 cup water, onions, salt, peppercorns and coriander in a small pot, bring to a boil, then reduce to a simmer and cook for 5 minutes.
  • Put the jalapenos in a heatproof 1-pint jar and pour the hot pickling mixture over them. Allow them to sit and soak up the flavor for 30 minutes up to overnight-the longer they sit, the more they will soften and absorb flavor. Stored in the refrigerator, they will keep for up to 1 month.

1 whole pickled jalapeno, stem removed
3 tablespoons jalapeno pickling juice
1 1/2 tablespoons Worcestershire sauce
1 teaspoon ground turmeric
1 teaspoon paprika
1 teaspoon garam masala
Salt and freshly ground black pepper
1 cup lime juice
1 cup lemon juice
16 ounces tomato juice
7 ounces vodka
Blue cheese-stuffed olives, pickled asparagus, and pickled jalapenos, for garnish
Lime and lemon wedges, for garnish

Steps:

  • My most favorite memory of Bloody Marys was when I lived in Chicago; I'd just graduated and I was working at CNN. I felt so independent, so excited about the future in journalism ahead of me. One Sunday morning, I met up with a couple of my friends at a beer garden, where I had one of the best Bloody Marys ever; not only did it come with blue-cheese stuffed olives, but it also came with a shot of Guinness in the bottom. The beer gave it just a hint of bitterness and a nice depth. Now that I can't handle gluten (ugh!), I can't do the beer, but if you can, try it.
  • In a mini-chopper, combine the mint, jalapeno, pickling juice, Worcestershire sauce, turmeric, paprika, garam masala, and salt and pepper, to taste. Whizz until the mint is finely minced and the mixture is as smooth as you can get it.
  • In a pitcher, combine the mint mixture with the lime juice, lemon juice, tomato juice, and vodka. Stir, and pour into 4 ice-filled glasses. Stab 2 or 3 blue cheese olives on a toothpick and let it fall into the glass along with an asparagus spear and pickled jalapeno. Garnish with lime and lemon wedges. Sip, and enjoy the rush that the jalapeno pepper will give you. Your brain will start tingling in the back! Seriously!

BLOODY MARY STEAK

2 tablespoons avocado oil (you can use any other high smoke point oil such as grapeseed or canola)
1 scallion, sliced, reserving darkest green tips for garnish
1 large clove garlic, minced (use rasp grater for speed)
Juice of 1/2 lemon
1 cup bloody mary mix or tomato juice
4 to 6 dashes Worcestershire sauce
1 1/4 pounds (roughly) flank steak (tip: if a larger piece is purchased, it can be cut in half lengthwise against the grain to make 2 long pieces; good for quicker cooking and less waste)
Kosher salt and fresh coarsely ground black pepper (heavier on pepper to mimic Bloody Mary)
1 tablespoon chopped fresh parsley, plus additional whole leaves for garnish
1 tablespoon sliced pickled jalapenos
1 tablespoon unsalted butter, cold
1 cup grape tomatoes, halved

Steps:

  • In a medium skillet, heat 1 tablespoon oil. Add the whites and light greens of the scallions and garlic and cook over medium-high heat until wilted, about 1 minute. Deglaze with the lemon juice, then add the bloody mary mix and Worcestershire sauce. Bring to a boil and reduce by half, 1 to 2 minutes.
  • Meanwhile, sprinkle both sides of the steak with salt and pepper. In a cast-iron grill pan over high heat, add the remaining tablespoon oil. Place the steak in the pan and cook without touching, about 2 minutes. Flip and cook to the desired temperature, about another minute for medium. Remove from the pan to a cutting board and allow to rest for 10 to 15 minutes. Slice the meat against the grain and set aside.
  • To finish the sauce, stir in the parsley and pickled peppers. Remove from the heat and whisk in the cold butter.
  • Add the sauce to the bottom of a warm plate and top with the sliced steak, halved grape tomatoes, whole fresh parsley leaves and reserved scallion greens.

1 cup crushed tomatoes
2/3 cup tomato juice
3 tablespoons lemon juice
1 jalapeno, minced, no seeds
1 teaspoon black pepper, fresh ground
1/4 teaspoon celery seed
1 tablespoon horseradish
5 dashes Tabasco sauce
2 tablespoons olive juice
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1 tablespoon white vinegar
3 3/4 ounces peppar vodka
blue cheese-stuffed olive
lime wedge
celery heart
pickle spears (I prefer a whole peeled garlic clove)

Steps:

  • Combine the first 12 ingredients in a food processor and puree until smooth; refrigerate. Skewer one olive, lime wedge, celery stick and pickle (or whole peeled garlic clove) for each drink. Fill a highball glass with ice. Add 1.5 oz. of pepper vodka. Fill the remainder of the glass with Bloody Mary mixture. Stir well and serve with skewered garnish.

  • Bring vinegar, 1 cup water, salt, sugar, cumin, and garlic to a boil in a medium saucepan. Add jalapenos and onions; boil 5 minutes. Let cool completely, about 45 minutes. Refrigerate in an airtight container at least 1 week or up to 1 month.
