5 lbs sweet onions, thinly sliced and separated into rings
8 medium cucumbers, thinly sliced
1 gallon white vinegar (5% acidity)
2 teaspoons pepper
1 teaspoon salt

Steps:

  • Stir together all ingredients in a large bowl.
  • Cover and chill 24 hours.
  • Store in refrigerator up to 2 weeks.

PICKLED CUCUMBERS AND RED ONION

Number Of Ingredients 7

1 hothouse seedless cucumber
1/2 small red onion
2 tablespoons fresh picked dill sprigs
1 1/2 cups white vinegar
1 cup sugar
5 to 6 allspice berries
1/4 teaspoon kosher salt

Steps:

  • Using a mandoline or sharp knife, finely slice the cucumbers and red onion. Put in a mixing bowl with the dill sprigs and a pinch of salt while you prepare the pickling solution.
  • In a small pot over medium heat, combine white vinegar, sugar, allspice and salt. Stir well until the liquid is simmering and the sugar has completely dissolved. Pour pickling liquid over red onion and cucumbers and stir to ensure everything is evenly coated. Allow to cool to room temperature, then cover with plastic wrap (press the plastic wrap down onto the cucumbers so there is no air) and refrigerate. Chill for at least 4 hours to cool completely before serving.

1/4 onion, sliced (yellow or red)
1/3 cup apple cider vinegar (feel free to try other vinegars)
2/3 cup water
1 pinch salt
1 pinch coarse black pepper
1 bay leaf
1/2 teaspoon dill or 1/2 teaspoon fresh dill
1 smidgeon dried chili pepper flakes (optional)

Steps:

  • place sliced cucumber and onion in pint mason jar.
  • mix vinegar and water and pour into jar to the fill line.
  • add the remaining ingredients.
  • seal jar and refrigerate at least 1 day.
  • good for about 1 week.

3 cups fresh cucumbers, thinly sliced (peeled if necessary)
½ - 1 cup onions, thinly sliced
1 garlic clove, finely chopped (optional)
1 cup white distilled or apple cider vinegar
1 cup water
2 tablespoons sugar, or to taste
2 teaspoons salt, or to taste
1 teaspoon ground black pepper, or to taste

Steps:

  • Place the cucumbers and onions in a clean 1-quart jar with a tight-fitting lid. Add the garlic, if using. Combine the vinegar, water, sugar, salt, and pepper in a measuring cup and stir until the sugar and salt dissolve. Pour into the jar, making sure the vegetables are submerged. Cover and refrigerate until chilled. The vegetables keep for about a week.

1 medium cucumber, peeled and sliced thin (you can use an english cucumber if you prefer)
1 medium onion, sliced thin and rings separated
3/4 c apple cider vinegar
3/4 c sugar
3/4 c water
salt and pepper to taste (start with about 1/2 t each)

Steps:

  • 1. Place cucumber and onion in a medium bowl
  • 2. Combine together water, vinegar, sugar, and pepper. Check salt and pepper, adjust if needed. Pour over cucumber and onion. (Be sure the cucumbers and onions are covered with the liquid.)
  • 3. Cover bowl and refrigerate for several hours or overnight. Stir occasionally.

Heritage Bread and Butter Pickle - Pickled Cucumber and Onions image

An easy and old fashioned pickle that takes its name from the fact that this pickle goes so well with simple bread and butter, or sandwiches. This pickle must be stored in a DARK place, or the cucumbers will lose their colour, and it is best eaten after 2 months. I always try to have a jar or two of this colourful and tangy pickle tucked away in my pantry - as it makes fabulous sandwiches for teatime or picnics, as well as being an ideal accompaniment for simple suppers and light toasted snacks. This recipe is ideal when cucumbers are cheap or you have a glut in your garden. If you don't have time to wait before eating this, I also have a "quick" recipe for this type of pickle posted on Zaar: Recipe #245742 .

3 large cucumbers, thinly sliced
3 large onions, peeled and thinly sliced
3 tablespoons salt
450 ml distilled malt vinegar
150 g sugar
1 teaspoon celery seed
1 teaspoon mustard seeds

Steps:

  • Layer the sliced onions and cucumber in a large non-metallic bowl - sprinkling each layer with the salt.
  • Leave for one hour and then drain and rinse thoroughly.
  • Put the vinegar, sugar, celery and mustard seeds into a large saucepan and heat gently, stirring all the time until the sugar has dissolved. Then bring it to a rapid boil and boil for 3 minutes.
  • Pack the cucumbers and onions into pre-heated and sterilised jars - then pour over the hot vinegar mixture, making sure that it covers the vegetabes.
  • Seal immediately with sterilised and vinegar proof lids.
  • Keep in a DARK and COOL storage area for 2 months before using.
  • Use this pickle for: bread and butter, sandwiches, salads, toasted snacks, cheese, cold meats and pies. Ideal for picnics.

This should be called Mum's quick pickled cucumber and onion, as this is what she made EVERY Sunday afternoon for tea-time! We always had this alongside fresh bread and butter, boiled eggs, cold cuts of meat, fruit cake, scones, sometimes a tin of red salmon and always a pot of tea! Wonderful memories, and an easy and tasty pickle for tea-time food. This is also wonderful with picnic food, smoked salmon or an assorted cheese board.

Number Of Ingredients 6

1 whole cucumber
1 small onion, peeled and thinly sliced
1 teaspoon salt
60 ml malt vinegar
75 g sugar
mint (to garnish) or parsley (to garnish)

Steps:

  • Use a fork to run through the surface of the cucumber, vertically downwards, to obtain a fluted pattern when sliced.
  • Cut cucumber into thin slices and put into a large bowl, sprinkle with salt and mix well. Leave the cucumber for 10 minutes to absorb the salt then rinse with cold water. Drain off excess liquid in a colander. Return cucumber to the large bowl and add the sliced onions.
  • Combine sugar and vinegar together. Add to cucumber and onion slices and mix well.
  • Decant into a plastic container, and refrigerate overnight or for a few hours before serving.
  • Garnish with mint or parsley.
  • Keeps in the fridge for a week.

1 English cucumber, sliced into 1/4-inch-thick rounds
1 small red onion, sliced into 1/8-inch-thick rounds
8 radishes, sliced into 1/8-inch-thick rounds
1/4 cup coarse salt
2 cups cider vinegar
1 cup sugar
1 tablespoon whole black peppercorns
2 teaspoons mustard seeds
2 teaspoons whole coriander seeds

Steps:

  • Toss vegetables with 2 tablespoons salt in a large colander set over a bowl, and refrigerate for 1 hour. Rinse well, pat dry, and place vegetables in a clean glass jar or glass bowl. Bring remaining 2 tablespoons salt, the vinegar, sugar, peppercorns, mustard and coriander seeds to a simmer in a small saucepan over medium heat. Simmer for 5 minutes. Pour over vegetables, and let cool for 1 hour. Cover, and refrigerate overnight or up to 3 weeks.

6 lbs cucumbers
1 lb onion
1/2 cup picking salt
1 1/4 cups brown sugar
2 tablespoons cornstarch
1 teaspoon turmeric
1 teaspoon ground ginger
1 teaspoon crushed red pepper flakes
3 cups cider vinegar
1 cup water
1/4 cup Dijon mustard

Steps:

  • Thinly slice the cucumbers. Peel and thinly slice the onions.
  • In a large bowl, combine the cucumbers and onions. Sprinkle with the salt and let stand for 3 hours; drain.
  • In a large saucepan, combine the sugar, cornstarch, turmeric, ginger¸ and the red pepper. Stir in the vinegar, the water and mustard. Cover and bring to a boil. Add the cucumbers and the onions.
  • Pack into clean, hot pint jars leaving 1/2 inch of headroom. Rub a rubber spatula around the inside of the jars to release the air bubbles and wipe the rims of the jars with a clean rag. Place the lids and the screw bands on.
  • Process in a boiling water bath canner for 15 minutes.
