Steps:
- Cut white bread into cubes and place into the bottom of a greased 9x13 pan.
- Sprinkle blueberries evenly over bread.
- Microwave cream cheese in bowl for 2 minutes.
- Stir carefully and add 1/2 cup sugar, 1/2 cup sour cream, and 1 teaspoons vanilla.
- Spread over blueberries.
- Cut French bread into 10-1 inch thick slices, place over cream cheese.
- Beat eggs, milk, half&half, cinnamon, and nutmeg and pour over bread.
- Cover and refrigerate overnight.
- Bake at 350 degrees for 45 minutes covered, then uncover for approximately 15 minutes.
- Let set before slicing.
- Sift powdered sugar over before serving.

- Preheat oven to 400F.
- In a saucepan, melt butter over moderate heat and stir in sugar until dissolved.
- Add pineapple, stirring well to incorporate.
- In a bowl, whisk together eggs, milk, half and half, reserved pineapple juice, salt, cinnamon and vanilla.
- Lightly grease a 13 x 9 pan and spread pineapple mixture evenly over bottom.
- Dip bread slices into milk mixture and arrange in one layer on top of pineapple mixture.
- Bake french toast in middle of oven 20-25 minutes or until bread is golden.
- French toast can be made a day ahead of time, covered with plastic wrap and stored in the refrigerator.

- Arrange bread in 2 layers in pan.
- In large bowl, wisk together the remaining ingredients.
- Pour evenly over bread slices, pressing down until some of the liquid is absorbed and bread does not float.

- Preheat oven to 375 degrees.
- Put the butter and honey into a 9 x 13 inch non reactive baking dish. Heat them in the oven until the butter is melted and the honey is bubbling. Take them out of the oven and stir well.
- Whisk together the juice, eggs, spices, and salt in another baking dish. Dip each slice of bread in the juice mixture, turning it once to coat well, and then carefully set the pieces of bread in the honey-buttered pan.
- Bake for 15-20 minutes or until well browned. Don't flip the bread over during baking -- flip it over so the honey-butter side is up when you serve it though.

BAKED STUFFED FRENCH TOAST
This Baked Stuffed French Toast is a perfect breakfast recipe. Fill brioche with cream cheese and jam, let it soak overnight, and simply place the casserole in the oven the next morning.

- The night before, grease a large casserole dish. Check that you can lay out 6 slices of bread evenly across the bottom of your casserole dish. If they do not fit, trim the bread as needed so you can fit the stuffed french toast sandwiches evenly. I use this 13-inch x 10-inch casserole dish.
- In a small bowl, mix together the cream cheese and raspberry jam.
- Spread on a thick layer of the cream cheese mixture on a slice of bread and close it with a second slice to make a sandwich. Place it in the casserole dish. Repeat with the remaining slices. You will want to divide up all of the cream cheese mixture evenly.
- Whisk the eggs together. Whisk in the milk, vanilla and salt.
- Gently pour the mixture over the French toast sandwiches. Allow it to soak for 1 minute. Then carefully using the help of a spatula, flip each sandwich over. Don't let it soak too long because if the bottom bread becomes too soggy, it's hard to flip.
- Cover and set in the refrigerator to soak overnight.
- In the morning, take the french toast casserole out of the oven 30 minutes before baking. Preheat the the oven to 350°F / 175°C.
- Bake in the middle of the oven for about 55 minutes. The Baked Stuffed French Toast Casserole is done when there's no more liquid left and the egg is set.
- Remove from the oven and allow to cool for 5 minutes before serving.
- Serve warm, topped with maple syrup, whipped cream and more jam.

Steps:
- Trim crusts from bread.
- Spray a 3-quart baking dish with non-stick pan coating.
- Arrange half of bread in pan so entire bottom is covered.
- In a separate bowl, mix eggs, half & half, vanilla and sugar. Pour half of this liquid over the bread.
- In another separate bowl, combine filling ingredients until creamy. Pour filling over moistened bread.
- Arrange other half of bread on top of filling and pour the rest of the egg mixture over the top.
- Sprinkle the top with the nutmeg.
- Cover in refrigerator overnight.

STUFFED FRENCH TOAST WITH PICKLED PEACHES AND BOURBON CARAMEL
Steps:
- For the pickled peaches: Combine the maple syrup and vinegar in a nonreactive medium saucepan and bring to a simmer over low heat. Stir in the peaches and cook until soft. Remove from the heat and let the peaches sit in the liquid for at least 15 minutes. Remove the peaches with a slotted spoon to a small bowl. Reserve the cooking liquid for the caramel.
- For the pickled peach bourbon caramel: Cook the reserved pickling liquid over high heat until reduced to about 1/2 cup. Add the maple syrup and butter and cook until slightly thickened, about 5 minutes.
- Remove the pan from the heat, add the bourbon, carefully return the pan to the heat, bring to a boil and cook the alcohol off, about 5 minutes longer.
- For the cream cheese filling: Whisk together the cream cheese, mascarpone, peach preserves, honey and cinnamon until smooth. Cover and let sit at room temperature while you make the French toast.
- For the French toast: Preheat the oven to 300 degrees F.
- Set a baking rack in a rimmed baking sheet. Spread out the bread in a single layer and bake to stale, about 15 minutes. (Alternatively, slice the bread the night before, place on a baking rack set on a baking sheet and let stale on the counter overnight.) Remove the bread and let cool. Increase the heat of the oven to 350 degrees F. Set aside the baking sheet and baking rack.
- Heat the oil in a small pan over medium heat. Add the bacon and cook until golden brown and the fat has rendered, about 10 minutes. Remove the bacon to a plate lined with paper towels.
- Whisk together the eggs, yolks, granulated sugar, vanilla, cinnamon and salt in a baking dish until smooth. Whisk in the heavy cream, milk and bourbon until combined.
- Heat 2 tablespoons of the butter and 2 tablespoons of the oil in a large nonstick saute pan over medium heat until it begins to shimmer. Dip 4 slices of the bread into the custard mixture and let sit until soaked through, this should take at least 1 minute per side. Remove the slices with a slotted spatula and let the excess custard run off. Place 3 or 4 slices in the pan at a time (depending on how large your pan is) and cook until the bottom of the bread is golden brown, about 3 minutes. Flip over and continue cooking until the bottom is golden brown and the center is cooked through, about 3 minutes more. Transfer to the prepared baking and place in the oven. Repeat with the remaining butter, oil and bread. Bake the French toast in the oven for 5 minutes.
- Remove the French toast from the oven and spread the cream cheese filling on 4 of the French toast slices, Top with the remaining 4 slices and transfer to plates. Top with some of the pickled peaches, drizzle with the bourbon caramel and garnish with some of the bacon. Dust with confectioners' sugar and garnish with mint sprigs, if desired.
STUFFED FRENCH TOAST
Steps:
- Batter:
- Combine all ingredients in a large bowl, mixing well until incorporated. Keep refrigerated until ready to use.
- Filling:
- Fold all ingredients together in a bowl until well incorporated but not completely smooth.
- Syrup:
- Combine all ingredients in a saucepan over medium-high heat. Stir until sugar dissolves. Bring to a boil and let reduce by 1/3.
- French Toast:
- Preheat oven to 350 degrees F.
- Heat a large saute pan and then add butter. Dredge the bread in the batter and place in the pan. Cook until golden brown on both sides, approximately 2 minutes. Remove from pan and let cool. Divide filling between 2 pieces of the bread top with the remaining 2 pieces of bread. Transfer French toast to oven and bake for 8 minutes.
- Cut each French toast in half and serve with the cinnamon syrup and, if desired, a large scoop of vanilla ice cream and fresh berries.

- Butter a 10x14 inch baking dish. Arrange the slices of bread in the bottom. In a large bowl, beat together eggs, milk, cream, vanilla and cinnamon. Pour over bread slices, cover, and refrigerate overnight, turning over after several hours.
- The next morning, remove dish from refrigerator and sprinkle with cinnamon to taste. Preheat oven to 350 degrees F (175 degrees C). Steps:
- Break the egg into a cup or small bowl and beat with a fork till the yolk and egg white is mixed.
- Put the salt in the egg mixture and stir.
- Cut tomato into slices.
- Cut up onion finely.
- Heat pan with oil in it on medium till oil starts to cook. Make sure the oil covers the entire pan.
- Pour egg mixture in pan and put the piece of bread on top immediately or it will not stick.
- Let it cook till the egg is golden brown on the one side and then flip it over.
- When the other side is crunchy as well, take it out.
- Spread the mustard on the side of the bread with the egg on it.
- Add the remaining toppings and enjoy!
