PHILLY-STYLE MAC AND CHEESE
My son loves macaroni and cheese, and I'm always looking for ways to sneak in some veggies. This version is a huge hit! -Jennifer Berry, Lexington, Ohio

- Cook macaroni according to package directions., Meanwhile, in a large skillet, saute the mushrooms, onion and green pepper in butter until tender. Stir in flour until blended; gradually add milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in the cheeses, garlic powder, steak seasoning and onion powder., Drain macaroni; add to sauce mixture. Stir in steak. Transfer to an ungreased 13x9-in. baking dish; sprinkle fried onions over top. Bake, uncovered, at 350° for 25-30 minutes or until bubbly.

PHILLY CHEESESTEAK MACARONI AND CHEESE
If you like Philly cheesesteaks and macaroni and cheese, you should love this easy and comforting casserole. You could use any type tubular pasta. Elbow or campanelle pasta are my favorites.

Steps:
- Cook pasta according to package directions.
- In a large skillet, heat olive oil.
- Cook onions with salt and pepper for 6-8 minutes.
- Add beef broth and roast beef.
- When noodles are cooked, drain and combine with onions.
- Cook for 5-7 minutes.
- In a medium saucepan, heat butter and add flour to thicken.
- Add milk, bring to boil.
- Add cheese, mix well.
- Once melted, pour over noodles and onions.
- Add parsley and mix together.
- Pour into a 9x13 baking dish or lasagna pan.
- Cover with aluminum foil and bake in a 350-degree oven for 10 minutes.
- Enjoy!

Steps:
- Start large pot of salted water on stove to boil.
- Heat 4 cups of milk in microwave for 3-4 minutes just to warm.
- In large dutch oven heat butter to melt and whisk in flour over medium-high heat. Whisk until mixture starts to brown and smell nutty. Whisk in milk and continue to whisk until mixture thickens and is smooth. Add salt.
- Boil pasta until almost done according to package instructions.
- While pasta is boiling stir in cheeses starting with the feta and finshing with the jack. Add in small amounts and continue stirring. The feta may not completely incorporate.
- Add the cooked pasta to the sauce and stir to incorporate. If too thick or if going to serve much later add some of the reserved pasta water.

- Preheat oven to 375°F. Heat 1 tablespoon of the oil in a large skillet over medium-high. Add mushrooms, onion, and bell peppers; cook, stirring constantly, until veggies begin to soften, about 3 minutes. Add garlic powder, salt, and pepper; cook, stirring often, 2 minutes.
- Add butter to veggie mixture; cook until butter is melted. Sprinkle in flour; cook, stirring constantly, 1 to 2 minutes. Whisk in milk, Worcestershire, and dry mustard until smooth.
- Reduce heat to medium-low, and stir in Velveeta until smooth. Remove from heat, and stir in cooked pasta, roast beef, and 1 1/4 cups provolone until combined.
- Pour mixture into an 11- x 7-inch baking dish lightly coated with cooking spray; top with remaining 3/4 cup cheese. Stir together panko and remaining 1 teaspoon oil in a small bowl. Sprinkle breadcrumb mixture evenly over pasta mixture, and bake in preheated oven until golden and bubbly, 20 to 25 minutes. Sprinkle with parsley, if desired.
