PHILLY CHEESE STEAK SANDWICH
Steps:
- Heat a cast-iron skillet or griddle over medium-high heat. When hot add the oil, onions and bell peppers, and cook, stirring, until caramelized, about 6 minutes. Add the garlic, salt, and pepper, and cook, stirring, for 30 seconds. Push off to 1 side of the griddle.
- Add the meat to the hot pan and cook, stirring and breaking up with the back of 2 metal spatulas, until almost no longer pink, about 2 minutes. Mix in the Sauteed vegetables. Top with cheese slices and melt. Spoon the cheesy meat mixture into the warm buns and serve immediately with condiments of choice or Put the meat in the bun and dip the spatula in the cheese whiz and then wipe the spatula down the inside of the bread.

- 1) Preheat oven to 375 degrees Fahrenheit.
- 2) Cut the sheet of Hawaiian rolls horizontally with a serrated knife. Place bottoms in a parchment-lined, oven-safe baking dish. You want the parchment to hang over a bit. Spread mayonnaise on rolls.
- 3) Heat olive oil in a skillet over medium-high heat. Add onions and green peppers. Cook for 5 minutes until tender. Add steak. Season with salt and pepper. Cook steak until tender. Remove from heat.
- 4) Top rolls with 6 slices of provolone cheese, cooked steak, green peppers, onions and 6 more slices of provolone cheese. Place roll tops over steak and brush with melted butter.
- 5) Bake for 20 minutes, or until top has browned and cheese has fully melted.

EMERIL'S PHILLY CHEESE STEAK SANDWICH
I'm not claiming this is an authentic Philly Cheese Steak, I chose this to simulate my favorite cheese steak sub at Sapore di Mare. Elsewhere (and not elsewhere on Recipezaar.com) people have been puzzled why the oven would need to be preheated to 200F; why, it is only to warm up the sandwich rolls! Purists will use only Cheese Whiz, but I will always use Provolone. I love an accent of "hots" on my sub, preferably Sun of Italy "Hot Chopped Peppers"; sliced pepperoncini or banana peppers also work well. I favor sweet onions, so I added them as an option to Emeril's recipe. Also, a half and half mixture of olive oil and butter is heavenly; but if using a nonstick pan, no fat is really needed. To slice the rib-eye, pound it thin, roll it tightly and wrap in wax paper, freeze 10 minutes, then slice thinly. Personally, I would never dream of using ketchup on this sandwich, although I might try a bit of marinara sauce to make this an Italian cheese steak sandwich. Although most people would threaten me if I gave them half a sandwich, I believe that is the correct size for 1 nutritional serving.

If you don't have Roma tomatoes handy, you can substitute with a small can of whole tomatoes or 2 tbsp tomato paste.

- In a medium sauce pot, add the olive oil. Season both sides of the veal shanks with Creole seasoning.
- Add the seasoned veal shanks to the oil.
- Brown the shanks on both sides, about 5 minutes per side.
- Add the celery, carrots and onions.
- Season with salt and pepper.
- Saute for 5 minutes.
- Add the tomato, rosemary and thyme.
- Add the red wine.
- Add 2 1/2 cups of stock to cover the veal.
- Bring to a boil.
- Reduce to a simmer and cover.
- Simmer for 1 1/2 to 2 hours, until the meat is very tender.
- Season to taste.
- Serve with rice.
- Garnish with parsley and Creole seasoning.

HAM AND SPLIT PEA SOUP (EMERIL LAGASSE)
Oh my, oh my is this ever good. I skipped the Parmesan Truffled Potato Chips and didn't miss it. I like to make split pea soup when I've just made a ham to make good use of the ham bone. I also re-used some of the water I cooked the ham hock in instead of getting fresh water. This is a definite "make again" recipe, and I don't make very many recipes twice. - Place the peas in a large pot or bowl, cover with water by 2 inches and soak 8 hours or overnight. Drain the peas and set aside.
- Score the ham hock. Place in a pot, covered with water and bring to a boil. Reduce heat and let simmer 1 hour. Drain and set aside.
- In a large pot, melt the butter over medium-high heat. Add the onions and cook, stirring, for 2 minutes. Add the celery and the carrots and cook, stirring, until just soft, about 3 minutes. Add the garlic and cook, stirring, for 30 seconds.
- Add the ham hock and the ham and cook, stirring, until beginning to brown. Add the drained peas, salt, pepper, and pepper flakes, and cook, stirring for 2 minutes. Add 8 cups of water, the bayleaf and thyme, and cook, stirring occasionally, until the peas are tender, about 1 hour (add more water as needed, if the soup becomes too thick or dry).
- Remove the bay leaf and discard. Adjust the seasoning to taste, and serve immediately with Parmesan Truffled Chips on top.
- Parmesan Truffled Potato Chips:
- Heat the oil in a large, heavy pot to between 340 and 350 degrees.
- Pat the potatoes completely dry. Add to the oil in batches and cook until golden brown, stirring with a long handled spoon to turn and cook evenly, about 2 minutes. Drain on paper towels and place in a large bowl. Toss with the cheese, truffle oil, salt, and pepper. Serve immediately.
