Steps:
- Preheat oven to 350°F. Spray two baking sheets with cooking spray; set aside.
- Stir together Peter Pan Creamy Peanut Butter (or Peter Pan Natural Almond Butter as another delicious option), sugar, and egg in medium bowl until well blended. Drop by rounded tablespoons onto baking sheets. Using a fork, press to make crisscross pattern on top of each cookie.
- Bake 12 to 14 minutes or until lightly browned, rotating pans halfway through bake time. Let stand 1 minute on baking sheets. Transfer to wire racks to cool completely.

Form mixture into 1 inch balls. Place 2 inches apart on ungreased baking sheets. Dip tines of fork into flour and flatten dough in a criss-cross pattern. Bake at 375 degrees 7-9 minutes or until lightly browned around edges. Remove, cool on wire racks and store in airtight containers.

- Combine Peanut butter and butter for 30 seconds. Add sugar, brown sugar, baking powder, baking soda and salt.
- Beat until light and fluffy, about 3 minutes.

- Drop dough by rounded teaspoons 1-inch apart onto an ungreased cookie sheet.

Steps:
- Preheat oven to 375°.
- In medium bowl combine flour, baking soda, baking powder and salt.
- In mixer bowl cream butter or margarine, peanut butter, brown sugar, and 1 cup granulated sugar until light and fluffy. Beat in eggs and vanilla. Gradually beat in dry ingredients until just combined.
- Shape tablespoonfuls of dough into 1-inch balls and roll in remaining 1/3 cup granulated sugar. Place 3-inches apart on 2 ungreased cookie sheets. With sugar-coated tines of a fork, press and flatten each ball, making a criss-cross pattern.
- Bake 8-10 minutes, until golden.
- Cool on cookie sheets 5 minutes; transfer to racks to cook completely.

PEANUT BUTTER COOKIES

Steps:
- Heat oven to 180C/160C fan/gas 4 and line 2 large baking trays with baking parchment.
- Measure the peanut butter and sugar into a bowl. Add ¼ tsp fine table salt and mix well with a wooden spoon. Add the egg and mix again until the mixture forms a dough.
- Break off cherry tomato sized chunks of dough and place, well spaced apart, on the trays. Press the cookies down with the back of a fork to squash them a little. The cookies can now be frozen for 2 months, cook from frozen adding an extra min or 2 to the cooking time.
- Bake for 12 mins, until golden around the edges and paler in the centre. Cool on the trays for 10 mins, then transfer to a wire rack and cool completely. Store in a cookie jar for up to 3 days.

- Preheat oven to 350°F.
- Sift together flour, baking soda and salt.
- In a large bowl, cream together butter and sugars. Beat in egg. Add vanilla and peanut butter and beat well. Add in dry ingredients and beat on low speed until combined.
- Drop by rounded spoonfuls onto parchment lined baking sheet.
- Using a fork, mark grids on the top of each cookie, dipping the fork in water after each cookie.
- Bake for 11-12 minutes, until just beginning to brown on the edges.
- Cool on wire rack.
- Note: I use natural, salted peanut butter. You get a more buttery cookie by using the natural peanut butter, since it doesn't have all that extra sugar. The cookie will also be more brittle/crumbly if you use processed peanut butter, so I would recommend adding an extra tablespoon of butter.
