These Vegan Coconut Macaroons are perfect for anyone who is allergic to eggs or is avoiding eggs. They have both a low-carb and an AIP option.

2 cups unsweetened shredded coconut
1 cup coconut milk
4 tablespoons low carb sweetener ((see notes for alternatives))
2 tablespoons gluten-free flour ((use low-carb alternative if needed. See notes))
1 teaspoon vanilla extract
1/4 teaspoon salt
cocoa powder ((for the chocolatey version))

Steps:

  • Preheat the oven to 350°F.
  • Line a cookie sheet with parchment paper or prepare by greasing. (I use baking stones that require no pre-treating)
  • In a heavy saucepan over medium heat, whisk together the coconut milk, sweetener, and salt.
  • Add flour and stir completely
  • Heat the mixture to a full boil and simmer for about two minutes or until thickened (if making chocolate version, add 2 tablespoons cocoa powder to the mixture)
  • Remove from heat and stir in vanilla and coconut.
  • Drop mixture by heaping teaspoonfuls onto the baking sheet. I used a cookie scoop to make things quick and less messy (and it makes nicely shaped macaroons, too :-)!)
  • Bake for about 16 minutes, or until golden brown.
  • Cool on cookie sheet for a few minutes, then transfer to cooling rack.

1 tablespoon tapioca flour
2 cups desiccated coconut
1/8 teaspoon sea salt
1/3 cup honey
2 teaspoons vanilla
1 tablespoon soymilk or 1 tablespoon rice milk
chocolate, for dipping if desired

Steps:

  • 1) In a medium bowl, whisk together dry ingredients.
  • 2) Add honey, vanilla and milk to dry ingredients. Mix with a spoon until combined.
  • 3) Scoop golf ball size-ish (a little smaller) balls onto a baking paper lined baking sheet.
  • Make sure the mixture is packed in the scoop fairly well to help them stick together while baking.
  • 4) Bake in a 350° (185 C) oven for 13-15 minutes or until bottoms are golden and tops start to get toasty brown spots.
  • 5) Cool on baking sheets, placed on top of wire racks for 5 minutes.
  • 6) Remove Baking paper with cookies still on it to the cooling rack to finish cooling completely.

2 eggs, whites only
80g caster sugar
150g desiccated coconut
1 tsp vanilla paste
90g dark chocolate

Steps:

  • Whisk together the egg whites and caster sugar in a large bowl for 2-3 mins until light and frothy, and the sugar has dissolved. Add the coconut, a pinch of salt and the vanilla, then stir until combined. Leave to stand for 10 mins.
  • Heat the oven to 170C/150C fan/gas 3½. Line a baking sheet with baking parchment. Scoop teaspoonfuls of the mixture and roll into compact balls, then arrange on the prepared baking sheet. Bake for 10-12 mins until golden.
  • Leave on the baking sheet to cool completely. Melt the chocolate in a heatproof bowl over a pan of simmering water, making sure the bowl doesn't touch the water, or in short 20-second bursts in the microwave. Tip the melted chocolate into a small bowl, then dip the bottom of each cooled macaroon into the chocolate and wipe off any excess. Arrange on a sheet of baking parchment, chocolate-side up, then put in the fridge for 20 mins, or until set. You can use any remaining melted chocolate to pipe in zigzags over the top, if you like, then leave to set.

I have lost my macaroon recipe and was trying to find a new one on the web. However, there was not one that seemed to me was the "correct" recipe so I have composed my own recipe from memory. Most recipes did not use egg whites and instead added flour which made no sense to me since they are not cookies... I must say that MY recipe is absolutely delicious and the best macaroon recipe out there :)

14 ounces sweetened flaked coconut
14 ounces sweetened condensed milk
2 egg whites
1 teaspoon vanilla extract
12 ounces chocolate chips (see optional)

Steps:

  • Before starting to create the mix, I would suggest (i.e. It is optional) to take an empty bowl (metal would be the best) and a wire whisk (or whisk attachment for an electric whisk) and put them in the freezer for about an hour.
  • Take your kitchen utensils out of the freezer and drop the two egg whites into the bowl. If you have an electric whisk set it on high and and whisk the eggs until they form medium peaks.
  • In another bowl mix the coconut, condensed milk and vanilla extract. Transfer the egg whites from the other bowl into the coconut mixture by folding the egg whites into it.
  • Get some baking pans and line them with wax paper. Drop the mixture onto the sheet. The amount of each dropping should be about an ice cream scoop or about two tablespoons.
  • At one point you should have set your oven to 325 degrees Fahrenheit... Once your oven is heated up put your pans in the oven and bake the macaroons for about 25 to 30 minutes (or just look at them and wait until they are golden brown (not dark tarnished gold brown but shiny gold brown)). When removing the macaroons the wax paper may get a little stuck to it because they are so sticky... The best way to try to avoid this is removing them while hey are hot.
  • Optional Steps Follow.
  • After the macaroons have cooled you can dip them in chocolate if you would like. To do so put a bunch of chocolate chips (whichever chocolate you prefer, I prefer milk chocolate) and put them into a microwave safe bowl and put the bowl into the microwave until the chocolate chips have melted and stir.
  • Take one macaroon at a time and dip them in chocolate as much as you like. Put the macaroons on a plate (I would suggest having refrigerated the plate first) and put them in the fridge for about an hour or two and you will have delicious chocolate covered macaroons :).

CRUNCHY, CHEWY FLAX & ALMOND MACAROONS (EGG-FREE)



Crunchy, Chewy Flax & Almond Macaroons (Egg-Free) image

My Oma & I combined her Nusskuchen recipe and my DD's egg-free diet to create this lovely, dense macaroon/biscotti-type dough. The original German "nutcake" recipe calls for no less than 7 eggs, which we substituted here w/7x 1 Tbsp flax : 3 Tbsp water. Our hesitation was replaced by an eagerness to "mach es noch ein mal!", which I've done tonight, this time taking the time to convert the European measurements. Enjoy!

7 tablespoons ground flax seed
21 tablespoons water (1/3 c. plus 1 T. plus 1 t.)
1 1/2 cups sugar
5 tablespoons hot water (each T. just shy of a full T.)
2 1/3 cups ground almonds
1 cup flour
1 1/2 teaspoons baking powder
10 drops almond essence

Steps:

  • Whisk the first two ingredients together in a bowl and let stand at least 2-3 minutes before use.
  • Using a hand mixer, beat the sugar & 5 T. hot water together in a large bowl for 2-3 minutes (to allow some of the sugar to "melt").
  • Gradually add the flax mixture and all the rest of the ingredients. Mix well.
  • If making as biscotti or chewy bars, grease and flour an 8x11" baking tin (as per kokeshi doll below) or a 10" round springform pan before adding the dough. Bake at 350F for 40 minutes. Remove promptly to a wire rack.
  • If making as cookies or macaroons, grease and flour a cookie sheet before placing 1" balls of dough approximately 1 1/2 inches apart. Bake at 350F for 25-30 minutes. Remove promptly to a wire rack.
  • NB If you want these to be chewy, do not allow them to brown at the edges. Otherwise they will be as hard as hockey pucks!
  • PS I preferred using my Bosch Kitchen Machine (the large bowl & dough hooks) to a hand mixer for this heavy batter.

4 egg whites
1 teaspoon vanilla
1 teaspoon Splenda sugar substitute (quick pack 0 or 8 net carbs or 1/4 tsp sweetzfree)
2 cups unsweetened coconut (10 net carbs)
1/2 cup almond meal (6 net carbs)

Steps:

  • Pre-heat oven to 325°F.
  • In a food processor, pulverize the coconut. If you don't have a food processor, you can skip this step but the cookies will have a bit different of a texture.
  • In mixing bowl beat egg whites, vanilla, and sweetener on medium until it makes peaks (tips stand straight up). A wisk attachment on your mixture will work wonders. If you beat it too hard or long you may break down the egg whites and not get it to peak. If this happens don't despair, as long as its frothy, it should work.
  • By hand, gently fold in ground coconut and almond meal. Do not mix any more than necessary to wet your dry ingredients.
  • Drop by rounded teaspoons onto greased cookie sheet. Bake at 325°F for 20 minutes or until edges are lightly browned.
