Steps:
- Make your pesto if needed.
- Heat a large skillet over medium heat.I prefer to cook burgers in a skillet because it is easier for them to hold together plus more meat comes in contact with the surface of the pan. This means more color which means more flavor!
- Mix the turkey, pesto, garlic powder, egg, breadcrumbs, salt, and red pepper flakes together in a medium bowl.
- Separate the meat mixture into four patties. Form them and place them on a clean plate. Set aside. If desired, make one very small patty and cook before shaping the others if you want to test the flavors and adjust before cooking.
- When the skillet is hot, add 1/2 Tablespoon of vegetable or canola oil, swirl around, and add two of the patties.
- Cook, without moving or touching it, for 5 minutes.
- Flip with a spatula and cook 4-5 more minutes until cooked all the way through to 160°F. (Residual cooking will raise the temperature to 165°F).In the last minute of cooking, add cheese slices on top of each patty (if using) and cover the skillet with a lid, another skillet, or baking sheet. This will trap the heat in and help the cheese melt.
- Set the burgers aside to rest and repeat the cooking process with the remaining patties.
- Serve with tomato, additional basil pesto, or other toppings as desired.

PESTO TURKEY BURGERS WITH MELTY MOZZARELLA AND LEMONY ROASTED CARROTS ON THE SIDE
Pest-oh my gosh! Did our chefs just put pesto in a burger? They did, and it's about as delicious as you'd expect. There's herby, Italian-style basil flavor woven throughout these turkey patties and mixed into the mayo too. Add in a heap of melted cheese, a few slices of fresh tomato, and some zesty carrots on the side and you've got the very definition of fun in a bun.

Steps:
- Wash and dry all produce. Adjust rack to middle position and preheat oven to 425 degrees. Peel carrots, then cut on a slight diagonal into ½-inch-thick slices. Toss on a baking sheet with 1 TBSP olive oil. Season with salt and pepper. Roast in oven until tender, 15-20 minutes.
- Mix together turkey, 2 TBSP pesto (we'll use the rest later), and a large pinch of salt and pepper in a medium bowl. Shape into two 4-inch-wide patties. Melt 1 TBSP butter in a medium pan over medium heat. Add patties and cook until nicely browned on bottom, about 6 minutes.
- Once patties are browned on bottom, flip and cook on other side for 3 minutes. Sprinkle mozzarella evenly onto each, then cover pan and continue cooking until cheese is melted and burgers are cooked through, 2-3 minutes more. TIP: If your pan doesn't have a lid, use aluminum foil to cover it.
- Place mayonnaise and remaining pesto in a small bowl and stir to combine.
- Zest lemon until you have 1 tsp zest. Once carrots are done roasting, place in another medium bowl along with lemon zest, a squeeze of lemon, and pepper (to taste). Toss to coat carrots.
- Split buns in half and place cutside down on baking sheet used for carrots. Place in oven and allow to warm through, about 2 minutes. Meanwhile, slice tomato into rounds. Spread as much pesto mayo as you like on the cut side of the bun bottoms, then top each with a turkey patty, tomato rounds, and bun top. Serve with carrots on the side.

TURKEY BURGERS WITH MOZZARELLA AND ROASTED PEPPERS
This recipe is from the Muscle and Fitness Total Nutrition guide. I'm usually wary of recipes from these kinds of sources, but there are several excellent ones in this one. This is hands down the best turkey burger recipe I have found. The only change I will make next time is to saute the onions first. I am sensitive to them raw. Try this recipe. You'll be glad you did.

Steps:
- If grilling, spray grill rack with cooking spray and fire it up.
- If pan-frying like me, spray pan, but wait to heat it until almost ready to cook the patties.
- Mix turkey, onion, vinegar, oregano, salt and black pepper in a bowl until combined; but try not to overwork the turkey, since too much handling will make it tough.
- Form mixture into four patties.
- Sear patties one minute per side, then turn down heat, or move to cooler part of grill.
- Cook 3-5 minutes per side, or until center isn't pink anymore.
- Top with roasted peppers and cheese, and keep on heat until cheese melts.
- Transfer to buns, add preferred condiments and enjoy.
