- Lightly oil a baking pan large enough to accommodate the fish. Place salmon in pan skin side down. Run finger over flesh to make sure all bones have been removed. Use pliers to pull out any that remain. Squeeze juice of one lemon and white wine over fish. Lightly salt the salmon. Marinate 15 minutes.
- Preheat broiler.
- Coat the top side of the fish with thick layer of pesto. It should be between an 1/8th to a 1/4 of an inch thick, and cover the surface of the fish.
- Place fish under the broiler. Broil for 8 to 10 minutes per inch of thickness, or until fish flakes and flesh is opaque. Pesto should have formed a heavily browned or even blackened crust.
- Remove from the oven, and set aside for a few minutes. Slice remaining lemon half into thin slices. Serve with lemon slices or arrange on the whole flank for presentation.
- notes: the size of the salmon can be much bigger or smaller depending on your party size without having to adjust the recipe. I make my pesto a day ahead so I have very little to do the day of the dinner party. I serve it with rice Recipe #191120. Leftovers are great cold on a salad with a light vinaigrette dressing.

- Boil the potatoes for 10 mins until tender, then drain. Heat oven to 200C/180C fan/gas 6. Toss the potatoes in the oil, then transfer to a baking tray. Roast for 20 mins. Push the potatoes to one side and put the courgette, pepper, spring onion and pine nuts down the middle of the tray. Put the salmon on the other side. Squeeze lemon juice over the fillets and the vegetables (not including the potatoes). Season everything with pepper. Spread each of the salmon fillets with pesto and return the tray to the oven for 12-15 mins until everything is cooked through.

PESTO-CRUSTED SALMON FILLET WITH CITRUS-SOY SAUCE
Steps:
- Preheat oven to 350 degrees F.
- Heat a 12-inch non-stick saute pan over a high flame. Season the salmon fillets with salt and pepper. Add a small amount of oil to the pan and sear both sides of the salmon quickly, just a few seconds on each side, leaving the fish very rare. Remove the pan from the heat, and place the fish on a work surface. Wipe out the pan and reserve for later use.
- Spread a 1/4-inch layer of pesto evenly over 1 side of the fillet. Sprinkle the top of the pesto with a light, thin dusting of fresh bread crumbs. Carefully invert each fillet into the pan and place it over a medium flame. Toast the bread coating, adding tiny bits of butter to the pan that will melt into the salmon underneath. Once the bread is toasted (after about 1 minute), place the pan in the oven for about 3 minutes, just to heat the fish through.
- To serve, mound 1/6 of the spinach in the center of a warm dinner plate. Invert 1 salmon fillet onto the spinach, crust-side up, and ladle citrus soy sauce around the sides. Place 1 orange segment on top of 1 grapefruit segment in the sauce at 3 different points on the plate.
- In the bowl of a food processor place, pine nuts, garlic, salt, and pepper. Add the basil and process again. With the motor running, add the oil in a stream slowly, scraping down the sides of the bowl occasionally. Add bread crumbs a little at a time, just enough to make pesto spreadable. Process and repeat until the pesto is the right consistency. Remove from food processor and set aside until ready to use.
- In a non-reactive saucepan, saute the ginger in 1 tablespoon olive oil for 1 minute over medium heat. Add the shallot and garlic and continue cooking for 1 minute longer. Deglaze the pan with white wine, champagne vinegar, soy sauce, fish sauce, and all 3 fruit juices. Reduce the liquid volume down to 1 cup. Add the chicken stock, bring it to a boil, and cook another 3 minutes. Strain, pushing on the solids to extract as much liquid as possible, and place the liquid into a blender or food processor. With the motor running on low, add the remaining olive oil in a slow stream until all the oil is incorporated.
- Wash spinach thoroughly and drain, leaving some of the water clinging to the leaves. In a 12-inch saute pan over medium heat, saute the spinach in a small amount of olive oil until it is wilted, 1 to 2 minutes. Drain excess moisture, season with salt and pepper.
- Preheat oven at 350 degrees.
- Peel potatoes and slice thin in a criss-cross cut on the zig-zag part of the mandolin. Lay out the slices on a baking sheet. Brush with clarified butter and bake until crisp, about 12 minutes.
POTATO CRUSTED SALMON
Steps:
- For the Salmon breading:
- Place 2 cups shredded potatoes into a shallow pan. Using a rubber spatula spread 1/8 cup of salmon glue evenly onto one side of a 6 ounces salmon filet. Place coated side of salmon filet into shredded potatoes. Repeat process for opposite side. Ensure that salmon is evenly coated in shredded potatoes.
- For the Lemon butter sauce:
- In a saute pan add white wine, lemon juice, cream, garlic, turmeric, salt and pepper. Heat on high heat and reduce by 1/2 its original volume. Remove from heat and swirl in diced butter.
- Plating procedure:
- Place potato crusted salmon onto griddle over medium high heat. Allow to cook on one side until potatoes are golden brown. Flip salmon and complete cooking and browning of salmon. Approximately 3 1/2 to 4 minutes for each side. Place 2 ounces garlic mashed potatoes onto the center of a dinner plate, ladle sauce around mashed potatoes, and place vegetables atop mashed potatoes. Place browned salmon atop vegetables. Garnish with julienne green onions.

- Pat dry potatoes. In a large skillet heat 1/4 cup olive oil over medium heat. Add hash browns in an even layer and push down with spatula. Cook 8-10 minutes on first side. Flip hash browns and push down again to form even layer. Cook an additional 7-8 minutes on the second side till golden brown. Set aside.
- Finely mince most of the dill. Leave a couple sprigs out for garnish. Add minced dill to creme fraiche or sour cream until combined.
- To assemble: Divide hashbrowns into 16 even piles and top with thin piece of smoked salmon, 1 tablespoon dill creme fraiche and garnish with dill sprig.
- Makes 16 appetizer portions.

- Mix the potatoes and cheese.
- Heat a thin layer of oil in large oil or on griddle, to medium heat.
- Spread potato mixture in small circles (about 2 tablespoons per circle, spreading to about 2 inches round), in skillet, and place two shrimp in a single layer in center of each.

- Preheat oven to 375 degrees F.
- 1) Heat 3 ounces of pesto, red pepper flakes, and Simply Diced Potato with Onion over medium heat in a 10" skillet for 5-8 minutes or until heated through. Remove from heat.
- 2) Combine remaining pesto sauce and sour cream in a small serving bowl and refrigerate until ready to serve. Here you can add additional hot pepper flakes if you want more spice.
- 3) Press, or roll out pie crusts into squares about ¼" thick. With a sharp knife, cut each crust into 10 squares. Divide filling up equally among the 20 squares and fold each over on the filling on a diagonal. Firmly press the edges to seal the triangle filled samosas. POTATO CRUSTED SALMON
This crispy potato covering keeps the baked salmon so moist and flaky. Something similar was tasted at the home of a business associate in Atlanta, and the idea was used to come up with this recipe, which suited our taste at home. This can be put together in 10 minutes; then can be baking in the oven for 20-25 minutes while making additional vegetables to go with it (stir fry vegetables, asparagus, or steamed broccoli). I prefer to use Seafood Magic by Chef Paul Prudhomme, but any type of seafood seasoning you prefer should do the same. Also, I use my Salad Shooter to grate the potatoes, but a food processor with a shredding grater will also suffice. Another hint: line the pan with aluminum foil; then cut off a piece of non-stick aluminum foil to fit under the salmon. It is more economical that way.

- Preheat the oven to 400 degrees.
- Line a 9 x 13 inch pan with foil.
- Spray with the oil.
- Place the fillets in the pan leaving equal distance between them.

- In a medium mixing bowl, lightly beat eggs. Add potatoes and 1 2/3 cup flour. Stir until well combined and dough forms. Cover and refrigerate 15 minutes until chilled.
- Bring 2 quarts water to boil in a four quart pot.
- Use remaining flour to dust work surface. Transfer dough to surface, knead briefly adding flour if sticky.
- Divide dough into four portions. Roll each portion into logs 1/2" thick. Cut each log into 1/2" wide pieces and press tops with fork to flatten slightly.

- Set oven to Broil at 500.
- Rinse salmon and pat dry. Season with salt. Spread 1/4 cup of pesto (per fillet ) over top of salmon. Spread approximately 1/3 cup of Simply Potato Hash Browns over top of pesto smeared salmon. The potatoes should adhere to the pesto. If your salmon fillet is thin and wide you may need a tablespoon more of hash browns (youmay also substitute the Traditional Mashed Potatoes for the hash browns, I have done both). Season top with a sprinkle of salt.
- Coat sheet pan with olive oil. Place Salmon (potato side up) on sheet pan. Place in oven for 12-16 min depending on how thick your fillets are and how you like your salmon cooked.

- Place one oven rack in the middle of the oven then another at the very top, and then preheat oven to 400 degrees. Line a half sheet pan with foil and spray with nonstick spray then arrange salmon filets on top and season generously with salt and pepper.
- Add potato chips to a food processor then pulse until chips are the consistency of panko bread crumbs. Scoop into a bowl then set aside.
- In the same food processor, add first five pesto ingredients (basil through salt). Blend until ingredients are finely chopped then slowly stream in extra virgin olive oil while processing until pesto is smooth, scraping down the bowl when necessary. Add fresh lemon juice to taste (I like mine on the lemony side but at least add enough to make the pesto taste fresh.)
- Slather 1 Tablespoon pesto on top of each salmon filet then sprinkle on 2 Tablespoons potato chip crumbs. Bake for 6 minutes in the middle of the oven then turn on the broiler, move sheet pan to the top rack, and broil until potato chips are golden brown, 1-2 minutes. Serve with lemon wedges for drizzling.
