MOMMA'S WHEAT GERM COOKIES

Good Cookies!! You'll be giving out this recipe forever!!! Be sure to leave the cookies on the cookie sheet for at least one minute after removing them from the oven. This allows them to "flatten" and firm up, also make sure you use rolled oats, not instant! Please don't let all the ingredients scare you away from this recipe.

1 cup butter, softened
1 cup white sugar
1 cup brown sugar
2 eggs
1 ½ teaspoons vanilla extract
1 ½ cups rolled oats
1 cup wheat germ
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup flaked coconut
2 cups chopped pecans
1 cup chopped pitted dates

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the eggs, one at a time then stir in the vanilla. In a separate bowl, combine the oats, wheat germ, flour, baking powder, baking soda and salt. Stir the dry ingredients into the creamed mixture. Finally, mix in the coconut, pecans and dates. Drop by rounded spoonfuls onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for a couple minutes before removing to a wire rack to cool completely.

1 cup packed brown sugar
1/2 cup canola oil
2 eggs, lightly beaten
1/2 cup unsweetened applesauce
1-1/2 cups all-purpose flour
1-1/2 cups toasted wheat germ
1 cup quick-cooking oats
2 teaspoons baking powder
1 teaspoon salt
1 cup (6 ounces) miniature chocolate chips
1/2 cup chopped walnuts or pecans

Steps:

  • In a large bowl, beat brown sugar and oil until blended. Beat in egg, then applesauce. Combine the flour, wheat germ, oats, baking powder, and salt; gradually add to brown sugar mixture and mix well. Stir in chocolate chips and walnuts., Drop by rounded teaspoonfuls 2 in. apart onto baking sheets coated with cooking spray. Flatten slightly with a glass bottom coated with cooking spray. , Bake at 350° for 10-12 minutes or until edges are lightly browned and cookies are set. Cool for 1 minute before removing to wire racks.

1 cup old fashioned whole rolled oats
1 cup wheat flour
1 cup wheat germ
1/2 teaspoon baking soda
1/2 cup coconut flakes
Pinch of salt
1/2 cup 8 tablespoons unsalted butter at room temperature
1/2 cup white sugar
1/4 cup brown sugar
1/4 cup date syrup
1 large egg
1 teaspoon vanilla
1 cup bittersweet dark chocolate chips
1/2 cup pecans

Steps:

  • Mix the oats, flour, wheat germ, baking soda, salt, and coconut flakes in a medium bowl. Whisk until mixed in.
  • In a separate bowl, beat the butter with an electric mixer until fluffy. Add the granulated sugar, brown sugar, date syrup, egg, and vanilla, and continue whisking until smooth and creamy.
  • Add in the dry ingredients and continue whisking on low speed until just combined.
  • Stir in the chocolate chips and pecans. Mix well. Chill the dough in the refrigerator for at least 30 minutes.
  • Preheat oven to 400°. Line a cookie sheet with baking paper or a Silpat. Use a cookie scoop to scoop the dough on the baking sheet. Bake for 9-12 minutes or until the edges and top are barely golden.

1 1/2 pounds chicken breasts, cut into strips
2 tablespoons avocado oil
1/2 to 1 teaspoon coarse sea salt
black pepper (optional)
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 cup wheat germ

Steps:

  • Preheat oven to 400 degrees F. Place oven rack in top third of the oven. Line a baking sheet with parchment paper and place a wire rack on top. Spray with non-stick cooking spray (I used avocado oil spray). Brush chicken with avocado oil. Sprinkle with half of the salt, pepper (if using), garlic powder, and paprika. Flip the chicken over and repeat. You may not use all of the avocado oil, just make sure to lightly brush both sides of each piece of chicken. If you are sensitive to the taste of salt, use only 1/2 teaspoon coarse sea salt in total. I prefer to salt my chicken well, so I use 1 teaspoon. Pour the wheat germ on a plate. Dip each side of the the chicken in the wheat germ and arrange on the prepared baking tray. Bake in the top third of the oven until the chicken is browned and the inside registers at least 165 degrees F on a meat thermometer, 17 to 20 minutes.

I've adapted this from an old newspaper recipe clipping (source unknown), likely from the 1970's when wheat germ was a miracle ingredient. I've substituted brown rice flour for all-purpose flour as I prefer this texture and flavour variation, but you could just as easily revert to the original with good results. The original also called for 1 c. wheat germ, which I've halved and added 1/2 c. spelt flour, but this is a highly adaptable and forgiving recipe so feel free to experiment depending on what you have on hand. I recommend pure peanut butter (peanuts as only ingredient) rather than the soybean oil, sugar and salt-laden popular brands.

Steps:

  • Beat butter and peanut butter with sugar, then beat in egg and vanilla. Gradually beat in dry ingredients. Form into balls on cookie sheet (ungreased, preferably with baking parchment) of whatever size you like and flatten to about half the ball thickness- use the typical criss-cross fork pattern if you like a traditional look. Bake at 350 degrees Farenheit for 8-10 minutes, watching carefully to check degree of browning, and remove to racks for cooling.
