TUSCAN CHICKEN WITH SPINACH AND ROASTED RED PEPPERS
It's packed with spinach, roasted red peppers, creamy sauce, and tender chicken. What's not to love?

Steps:
- Heat olive oil in a large pan over medium-high heat. Grill or pan-sear the chicken breasts until lightly browned and cooked through, roughly 6-8 minutes per side, then remove from heat and set aside.
- Lower heat to medium-low and then add the cream, broth, parmesan, Italian seasoning, and salt and pepper to the pan. Whisk to combine and then stir occasionally until the sauce thickens.
- Once the sauce has thickened a good amount, add in the roasted red peppers and chopped spinach. Let sauté in the pan for 3-5 minutes.
- Add the chicken back into the sauce, ladling the sauce overtop the chicken from time to time. Let sit for 3-5 minutes and then serve over pasta or with a side of your choice and enjoy!
CHICKEN, ROASTED PEPPER, AND PESTO SANDWICH

- Spread 1 tablespoon Basil Pesto on 1 side of each slice of bread. Top 4 slices of bread with Marinated Chicken Breast. Top the chicken with the roasted peppers. Place the remaining bread slices, pesto-side down, on top of the peppers.
- Combine the basil, garlic and pine nuts in a food processor and pulse until coarsely chopped. Add the 1/2 cup of the oil and process until fully incorporated and smooth. Season with salt and pepper. If freezing, transfer to an air-tight container and drizzle remaining oil over the top. Freeze for up to 3 months. Thaw and stir in cheese.
- Put the vinegar, herbs, mustard, powder if using and oil in a large resealable plastic bag. Close the bag and shake to combine all the ingredients. Open the bag and drop in the chicken breasts. Close and shake the bag to coat evenly. Freeze for up to 2 weeks.
- Thaw in the refrigerator overnight, under cold, running water, or in the microwave at 30 percent power for 1 minute at a time.
- Heat a grill or grill pan. When the grill is hot, place the chicken on the grill and cook for about 4 minutes per side, or until cooked through. You can also bake the thawed chicken in a 375 degree F oven for 15 minutes, or until cooked through.
PESTO FETTUCCINE WITH CHICKEN, SPINACH AND ROASTED RED PEPPERS
So easy, so quick!! This is something I came up with while trying to figure out what to do with a packet of pesto sauce seasonings. I'm sure, should you have a favorite pesto sauce recipe, that that would work just as well. I used the thinner short fettuccine noodles. I am thinking of adding zucchini next time and some garlic salt (doesn't it just make everything a little better ;)).

Steps:
- Season chicken breasts with salt and pepper and broil or grill until done.
- Meanwhile cook fettuccine to package instructions or desired doneness.
- Prepare pesto sauce per package instructions and add red peppers while simmering.
- In medium size skillet, warm olive oil on medium.
- Add pine nuts and sauté until fragrant.
- Add spinach leaves and sauté until wilted.
- Chop chicken into 1-2 inch pieces.
- When fettuccine is done, drain and return to pot.
- Combine all ingredients in pot.
- Divide onto 4 plates and serve.

SPENCE'S PESTO CHICKEN PASTA
This is a great recipe that my boyfriend put together on a Sunday evening after a bike ride. You can't go wrong with all of the flavors in this dish!

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink.
- While the pasta is boiling, sprinkle the chicken with salt and black pepper. Heat the olive oil in a large skillet over medium heat, and cook the chicken pieces until lightly browned, about 10 minutes, stirring frequently. Stir in the garlic cloves, mushrooms, roasted red peppers, and artichoke hearts; reduce heat to a simmer, and cook until the mushrooms begin to give off their juices, 5 to 8 minutes. Stir in the spinach, and simmer just until the leaves are wilted, about 2 minutes.
- Transfer the cooked linguine into a bowl, and toss with the basil pesto. Divide the pasta between 2 plates, and serve topped with the chicken mixture. Sprinkle Parmesan cheese over each plate to serve.

FRESH FETTUCCINE WITH PULLED ROTISSERIE CHICKEN, PESTO, AND ROAS
What better to cook than something so fast and packed with flavor? I got this recipe from Sara Moulton's show. Instead of pulled rotisserie I just fried chicken breast with adobo. I also omitted the olives since they're not my taste. I almost went into a panic when I thought I lost the recipe. That's how much I love it!

- Put the pesto in a large bowl.
- Cook the pasta according to package instructions.
- Drain the pasta and reserve 1/3 cup of the pasta water.
- Whisk the pasta water into the pesto.
- While the pasta is cooking, heat the oil in a large skillet over medium-high heat.
- Add the garlic and cook, stiffing until soft and fragrant, about 30 seconds.
- Add the chicken, peppers, and olives and cook, stirring until hot, about 3 minutes.
- Season with salt and pepper.
- Add the pasta and cheese to the pesto and toss and combine.
- Add the chicken mixture and combine.

- Cook bell pepper in 2 tsp oil in a small saucepan. Remove from pan.
- Cook whole chicken breast in leftover oil, plus ~2tsp. Remove from pan. Allow to cool. Cut into bite-sized pieces.
- Mix pesto package with water and oil. Bring to a boil, stirring constantly. Turn heat to low.
- Add chicken and pepper to pesto sauce, cook under low heat, covered, ~5 minutes, until everything's warm.
- Mix pasta into the sauce, pepper, and chicken.
- Keep on low heat, uncovered, 5 minutes to let flavors mingle (or not, if you want more distinct flavor).

CREAMY RED PESTO CHICKEN WITH PASTA
I was surprised how quickly and easily this recipe came together. It's tasty and looks good. I used creme fraiche for this but I expect sour cream would work as well.

- Bring water to the boil in a saucepan and start to cook the pasta (if using fresh pasta, start cooking it later).
- Heat the oil in a skillet over a medium heat. Add the diced chicken and cook for 4 minutes.
- Add the diced red onion and cook for a further 5 minutes.
- Add the sundried tomato pesto and creme fraiche to the chicken and onion in the skillet. Stir and heat through thoroughly, making sure the chicken is fully cooked.
- Stir in the grated parmesan cheese and season to taste with salt and pepper.
- Add the sauce to the pasta, stir through and serve, or alternatively serve the pasta topped with the sauce.
