GRANDMA'S OATMEAL BREAD

Steps:
- In a small bowl, combine the boiling water, butter, salt and sugar. Stir in oats; cool to lukewarm. In a large bowl, dissolve yeast in warm water. Stir in the molasses, brown sugar and 1 cup flour. Beat until smooth. Stir in oat mixture and enough remaining flour to make a stiff dough. , Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into a ball. Cover and let rest for 10 minutes; Shape into loaves. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until nearly doubled, about 1 hour. , Bake at 375° for 30-35 minutes (cover loosely with foil if top browns too quickly). Remove from pans to wire racks to cool.

- In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

- In a large bowl, combine yeast, warm water and 1 teaspoon sugar. In a saucepan, heat milk, butter, salt and remaining sugar until butter is melted. Remove from heat; stir in potatoes until smooth. Cool to lukewarm; add eggs and mix well., Beat potato mixture and 5 cups flour into yeast mixture until smooth. Stir in enough remaining flour to make a soft dough. Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/2 hours., Punch down dough and divide in half. On a lightly floured surface, roll each half into a 16x8-in. rectangle. Brush with melted butter. Combine sugar and cinnamon; sprinkle over butter. Roll up jelly-roll style, starting with a short side; pinch seam to seal. Place in 2 greased 8x4-in. loaf pans. Cover and let rise in a warm place until doubled, about 45 minutes. Preheat oven to 375°. Bake loaves until golden brown, about 20 minutes. Cover loosely with foil if tops brown too quickly. Remove from pans to wire racks; serve warm.

GRANDMA G'S FINNISH RYE/GRAHAM BREAD (BREAD MACHINE)
This was my grandma's bread recipe. There were no amounts, only a list of ingredients. With much testing, I have come up with the recipe that tastes as close as I can get to her bread.

- Add the wet ingredients to your bread machine (water, oil, honey). Next add the salt, potato flakes and oats.
- Into a measuring cup, put the rye flour and graham flour. Add enough regular bread flour to make 3 1/2 cups. Pour this into the bread machine on top of the wet ingredients.
- Make a "well" in the flour mixture and add the yeast. Use the "whole wheat" cycle on your machine, 2 pound loaf, dark crust. Turn the machine on and you will have a delicious loaf in a little over 3 hours. NOTE: WATCH THE CONSISTENCY of the mixture as it mixes. If it seems too dry, add one tablespoon of water at a time until the dough forms a "ball" around the paddle. If it is too wet, add one tablespoon of flour at a time.
GRANDMA'S BREAD
This bread recipe is easy and very forgiving. It can be made with any flour, and the addition of any nut or dried fruit. It makes a dense, soft and chewy bread. It has been handed down through 5 generations and originated in the 1800's.

- Place 4 cups flour in large mixer bowl with dough hook.
- In separate bowl combine water, oil, sugar, yeast, and salt. With mixer on low pour liquid into mixer. Combine well.
- Add flour 1 cup at a time, mixing well after each addition, until dough is not sticky and comes all together. Once all combined, allow mixer to knead on low 5-10 minutes.
- Oil dough and bowl, cover with a cloth and put in warm area. Allow to rise until doubled (about an hour).
- Turn out onto lightly floured surface and roll into log. Divide into 3 equal parts. Place into well greased bread pans.
- Cover and let rise until doubled. Preheat oven to 375°.
- Bake for 35 minutes.

GRANDMA'S AMISH BREAD
This bread is from my Amish Grandma's recipe collection. My favorite times with Grandma were always centered around the kitchen and this was one of my favorites to make with her. I've updated it slightly, since Grandma didn't have electricity to work with, but it still tastes (almost) the same. This is still a family favorite at holiday gatherings and with Easter coming up it'll be a hit!

- In a large bowl combine 2 cups of the flour with the yeast.
- In a small sauce pan heat milk, sugar, butter and salt to 120-130 degrees F.
- Slowly add the milk mixture to the flour mixture beating well.
- Add the eggs and beat well.
- Slowly add the remaining flour 1/2 cup at a time until dough is moderately stiff.
- Knead dough until smooth and elastic using stand mixer with dough hook at medium speed for 2 to 3 minutes or 6 to 8 minutes by hand on a lightly floured board.
- Place dough into a lightly oiled bowl, turning once to coat.
- Cover bowl with a warm cloth that is slightly damp.
- Let rise 30 to 45 minutes or until double in size.
- Punch down and divide in half.
- Cover portions with the cloth and let rest 10 minutes.
- Shape dough into 2 loaves and put into greased loaf pans.
- Let rise again until double.
- Bake in a pre-heated oven at 375 degrees F 25 to 30 minutes.
- Remove from pans and cool completely on a wire rack.
- When completely cool wrap and store in a cool, dry place.

Steps:
- Put all the ingredients in the bread machine on the dough setting, in the order specified for your machine.
- When the dough cycle completes, remove, divide in half and then split each part into 3 equal pieces.
- Roll into long strands (18" long), and braid strands into 2 loaves.
- Put loaves on greased cookie sheets.
- Let rise until doubled in size (30 minutes). Brush with second egg and sprinkle with sugar.
- Bake at 375°F for 20-25 minutes or until golden brown.
- Immediately after taking them out of the oven, remove from pans. Cool on racks.

FINNISH PULLA BREAD - BREAD MACHINE RECIPE - (4.4/5)

- Beat eggs with sugar. In a small saucepan (or in the microwave), warm the milk, and melt the butter in the warm milk. Add cardamom, vanilla and salt. Mix above ingredients until well blended and pour liquids in bottom of the bread machine pan. (Note: Follow your individual bread machine instructions as to adding ingredients. But do not mix salt with yeast. Salt will negate the action of the yeast.) Add the flour, make a small dent in flour and place yeast in dent. Set machine on dough setting. Preheat oven to 350°F. When cycle is finished, remove dough and cut into two pieces. Cut each of the two pieces into three pieces for braids. Braid dough and shape. Let rise until about double. Brush on Eggbeaters and sprinkle with coarse sugar. (make an egg wash by beating one egg with one teaspoon of water. Brush on, then sprinkle with sugar.) Bake 15 to 20 minutes, until bread has risen and the loaves are golden brown. Transfer to a wire rack to cool.

GRANDMA'S SWEDISH RYE BREAD
This bread is slightly sweet. It keeps extremely well without becoming stale. It was a staple on the family farm in northern Indiana around 1920.

- Dissolve one package yeast in water.
- Add rest of ingredients and knead, adding additional white flour as needed if the dough becomes too sticky.
- Set in warm place until dough doubles in size.
- Pat down dough, form into loaves in buttered bread pans.
- Allow dough to double in size.
- Bake 375 degrees for 25 minutes.
- As loaves are removed from the oven, brush tops with melted butter to highlight the beautiful nut-brown color.
- For a real treat, top slices with chopped dates and walnuts mixed with cream cheese.
