Something I just threw together one night but ended up being the best salad I've ever made--corn, cheese, tomatoes and tortilla chips complimented by ranch dressing with a kick.

Number Of Ingredients 9

bagged lettuce, preferably hearts of romaine
2 roma tomatoes, chopped
2/3 cup sharp cheddar cheese, GRATED
2/3 cup corn
2/3 cup tortilla chips, crushed
1 cup ranch dressing, from bottle
1/4 cup salsa
1/4 teaspoon chili powder
1/4 teaspoon cumin

Steps:

  • Mix all salad ingredients together in large serving bowl.
  • Mix all dressing ingredients together in a cup or small bowl.
  • Toss with dressing or serve on the side.
  • If preparing ahead of time, wait to add chips so they stay crisp.

Chopped red onion
Diced red pepper
Carrot straws
A bit of dark red lettuce or similar garden lettuce
Avocado slices
Romaine lettuce
Yellow corn
Black beans
Grilled chicken breast strips
Tortilla strips
Shredded cheddar
Chipoltle Dressing

Steps:

  • Mix corn, black beans, onion and red pepper Lightly toss lettuces, avocado, and grilled chicken strips with bean mixture Pour Chipoltle Ranch dressing over salad Sprinkle shredded cheddar cheese over salad. Quantity of each ingredient depends upon how many you are serving.

  • Preheat the oven to 400 degrees. Peel the sweet potatoes and chop into bite-sized pieces. Mix the olive oil, cumin, and chili powder together in a small bowl. Brush mixture on sweet potatoes. Roast for 10 minutes. Stir or shake the pan. Turn heat up to 425, and roast for another 10-15 minutes. Check, stir, and bake until the sweet potatoes are just barely roasty-brown on the outside. Season with salt and pepper.
  • Toss the beans, corn, lettuce, and sweet potatoes with the dressing. Serve with chips and/or the other half of the avocado for extra yum!
