PERFECTLY CANDIED PECANS

Perfectly Candied Pecans image

This is EXACTLY what I had been looking for. I have made a ton of candied nut recipes and nothing quite works for me. . .this one makes the cut! Feel free to use walnuts instead of pecans. They are heavenly as a snack, ask a housewarming gift or simply on top of a salad. This is a twist on a couple different recipes already here on Zaar.

Provided by januarybride

Categories     Brunch

Time 12m

Yield 1 cup, 4 serving(s)

Number Of Ingredients 7

3/4 teaspoon granulated sugar (the more coarse sugars tend to make for a less sweet nut somehow)
1/8 teaspoon salt
1/4 teaspoon cinnamon
1 pinch nutmeg
1 tablespoon butter
1 tablespoon maple syrup
1 cup pecans

Steps:

  • Preheat oven to 375 degrees.
  • Mix sugar, salt, cinnamon and nutmeg in a small bowl and set aside.
  • Saute butter and maple syrup in a large pan, and bring to a boil.
  • Remove from heat. Add nuts and toss to coat.
  • Transfer nuts to a rimmed baking sheet lined with aluminum foil.
  • Sprinkle with sugar mixture over top of the nuts and toss gently to coat; DO NOT MIX too much because the sugar will dissolve and won't stick to the top of your nuts.
  • Spread out the nuts so that they are not touching one another.
  • Toast in oven for 5 minutes.
  • Let nuts cool completely on sheet.

  • In a bowl, beat the egg white, vanilla, and water just until very frothy. In a separate bowl, combine the sugar, salt, cinnamon, and nutmeg. Add the pecans to the egg-white mixture and gently toss to coat. Transfer the nuts to the sugar mixture and toss to coat. Spread the nuts evenly on the baking sheet.
  • Bake for 1 hour, stirring every 10 to 15 minutes. Watch the pecans carefully during the last 15 to 20 minutes of cooking for doneness. The nuts should be a lovely golden brown, crunchy, and evenly coated with the hardened sugar coating when they come out of the oven. Store the pecans in an airtight container in a cool, dry place for up to 2 weeks. [Editor’s Note: Hah! 2 weeks. We defy you to get them to last past the first night. But if you hide some, as we did, and manage to ignore their siren call, as we did, you’ll find them just as tempting at 2 weeks old as you did the very first day.]

  • Preheat the oven to 350°F if using a baking stone, otherwise preheat the oven to 300°F if using a metal baking sheet. If using a metal baking sheet, you can line with foil or parchment paper for easy clean up, if desired. Pour the butter onto the baking stone or baking sheet.
  • In a large bowl, whisk together the egg whites, granulated sugar, brown sugar, vanilla and cinnamon. Add the pecans and toss until they are fully coated. Spread the coated pecans onto the baking sheet in a single layer.
  • Bake in preheated for up to 30 minutes, stirring the pecans every 5 minutes and checking on them to ensure they don't over cook. I let mine cook the full 30 minutes because they are much less likely to burn on a baking stone compared to a metal baking sheet. Keep in mind that oven temperatures vary and yours may be done MUCH sooner. Trust your nose. If using sea salt, sprinkle small amounts on the hot nuts before they cool.
  • Cool on the baking sheet for 10 to 15 minutes and be sure to stir a couple times as they cool so they don't stick together. Store in airtight container once they are fully cooled.
