- Mix sugar, cinnamon, and salt together in a bowl.
- Whisk egg white and water together in a separate bowl until frothy. Toss pecans in the egg white mixture. Mix sugar mixture into pecan mixture until pecans are evenly coated. Spread coated pecans onto a baking sheet.
- Bake in the preheated oven, stirring every 15 minutes, until pecans are evenly browned, 1 hour.

- In a medium saucepan, combine the granulated sugar, boiling water, brown sugar, cinnamon, nutmeg, cream of tartar, and boiling water. Cook over medium heat, stirring until the mixture comes to a boil. Continue to cook at a slow boil for 10 minutes, stirring constantly.
- Remove from the heat and stir in the pecans, then the vanilla. Stir until the pecans are fully coated.
- Line a baking sheet with parchment paper and pour the pecans on top. Using a fork, separate the pecans and let cool for 10 to 20 minutes. Pour into a party bowl and serve.

- Add nuts, sugar, and butter to a large nonstick skillet and heat over medium heat. Stir constantly with a rubber heat-proof spatula until the sugar melts into the butter and completely coats the nuts, turning the heat down as needed, approximately 5-7 minutes.
- Immediately transfer nuts to parchment paper and immediately separate using 2 forks OR let the nuts harden together and break them apart with your fingers once cooled. The nuts and coating will harden in 5-7 minutes. Chop the nuts if desired.

PERFECTLY CANDIED PECANS
This is EXACTLY what I had been looking for. I have made a ton of candied nut recipes and nothing quite works for me. . .this one makes the cut! Feel free to use walnuts instead of pecans. They are heavenly as a snack, ask a housewarming gift or simply on top of a salad. This is a twist on a couple different recipes already here on Zaar.

- Preheat oven to 375 degrees.
- Mix sugar, salt, cinnamon and nutmeg in a small bowl and set aside.
- Saute butter and maple syrup in a large pan, and bring to a boil.
- Remove from heat. Add nuts and toss to coat.
- Transfer nuts to a rimmed baking sheet lined with aluminum foil.
- Sprinkle with sugar mixture over top of the nuts and toss gently to coat; DO NOT MIX too much because the sugar will dissolve and won't stick to the top of your nuts.
- Spread out the nuts so that they are not touching one another.
- Toast in oven for 5 minutes.
- Let nuts cool completely on sheet.
