Ingredients

4 cups cubed cooked turkey breast
1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
4 cups frozen broccoli florets, steamed
1 (7 ounce) package chicken rice pilaf mix, mix (instant -- I like Knorrs)
1 1/3 cups milk
1 cup chicken broth
1 cup chopped celery
1 can corn, drained
3/4 cup mayonnaise
1/2 cup chopped onion

Steps:

In a large bowl, combine all of the ingredients. Transfer to a greased 3-qt. baking dish. Cover and bake at 325° for 1 hour. Uncover; bake 15-20 minutes longer or until rice is tender.

I don't remember wher I got this recipe, but I really like it. I have also used leftover turkey in place of the deli turkey slices.

Ingredients

16 ounces Hawaiian bread
1/4 cup ranch salad dressing
10 ounces deli turkey, sliced
1 1/2 cups mozzarella cheese, shredded
20 ounces frozen chopped spinach, thawed and drained
1/2 cup onion, finely chopped
4 plum tomatoes, diced

Steps:

Preheat oven to 350°.
Slice off top of loaf of bread; set aside. Carefully hollow out loaf within 1 inch of sides and bottom (reserve removed bread for other use).
Brush inside and inside of top of bread with dressing. Line bottom of shell with turkey. Toss together 1/2 cup of cheese, spinach, onion and tomatoes. Spoon over meat. Sprinkle with remaining cheese.
Replace top. Wrap loaf in foil. Bake 1 hour; cool 10 minutes.
Remove from foil and slice into wedges. Can be served hot or cold.

2 cups cooked turkey
2 cups cooked rice
1 cup sliced celery
1 (10 3/4 ounce) can condensed cream of chicken soup
1 (9 ounce) package frozen chopped broccoli, thawed and drained
1 (8 ounce) can sliced water chestnuts, dranied
1 (2 ounce) jar diced pimentos, drained
3/4 cup mayonnaise
2 teaspoons lemon juice
1/2 teaspoon salt
1/8 teaspoon pepper
2 1/2 cups corn flakes (crushed down to 1 cup)
2 tablespoons melted butter

Steps:

Combine all ingredients in a large bowl excpet the topping items.
Spoon into a greased a 2 quart casserole dish.
Combine the topping ingredients and sprinkle evenly over the top.
Bake in a 375 degree oven for 30 to 35 minutes.

This is essentially the stuffing my polish father made when he was chef at the old Westbury hotel in Toronto with some minor changes by me over time. The only problem with it is guests love it so much they usually finish it off and you are left with leftover turkey and no stuffing. I usually make extra in a meatloaf pan for the leftovers.

1 lb ground beef
1 lb pork sausage
1 (8 ounce) package pepperidge farms paxo seasoned stuffing mix
1 large onion, chopped
1/2 green pepper, chopped
2 stalks celery, chopped
2 garlic cloves, chopped
1 cup mushroom, chopped
1/2 cup fresh parsley, chopped
1 egg
1/4 teaspoon fresh ground black pepper
1/4 teaspoon salt
1/4 teaspoon sage
1/4 teaspoon thyme
1/4 teaspoon poultry seasoning

Steps:

Brown beef and pork sausage while mixing together,drain and set aside.
Saute onion, green pepper, garlic, and celery.
In a large bowl mix all ingredients thoroughly (get you hands in there).
Stuff into turkey and roast as you normally would.
