The classic and simple grilled cheese sandwich can be reimagined multiple ways just by changing up the bread and cheese.

2 ounces sliced melting cheese (about 2 slices), such as American, Cheddar, muenster, Havarti, Swiss, fontina, Mozzarella, Monterey jack, pepper jack, provolone
2 slices bread, such as white, rye, brioche, sourdough, potato, whole wheat, pumpernickel
1 tablespoon fat, such as mayonnaise, butter or olive, chili or coconut oil

Steps:

  • Oven method (great for a crowd of six or fewer): Put a rimmed baking sheet on the middle rack of the oven and preheat to 450 degrees F. Make one sandwich per person: Sandwich 2 slices of cheese between 2 slices of bread. Spread or brush the outside of the sandwich with 1 tablespoon of fat. Place on the preheated baking sheet and cook until the cheese starts to melt, about 5 minutes. Flip the sandwich and bake until golden brown, an additional 5 minutes.
  • Panini press method (for crispy crunchy sandwich that needs minimal attention): Sandwich 2 slices of cheese between 2 slices of bread. Preheat a panini press to medium heat. Spread or brush the outside of the sandwich with 1 tablespoon of fat and place in the press. Close the top and cook until lightly browned and the cheese is melted, 5 to 6 minutes.
  • Skillet method (fool-proof and low-tech): Sandwich 2 slices of cheese between 2 slices of bread. Preheat a skillet over medium-low heat. Spread or brush the outside of the sandwich with 1 tablespoon of fat and cook until lightly browned, 3 to 4 minutes. Flip the sandwich, and continue cooking until browned and the cheese is melted, 3 to 4 minutes more.

  • 1. Pepper jack and sourdough, brushed with chili oil
  • 2. American and white bread, brushed with butter
  • 3. Swiss and rye, brushed with mayo
  • 4. Cheddar and brioche, brushed with butter

Steps:

  • Heat a pan over medium heat.
  • Completely butter one side of each slice of bread.
  • Place one slice of bread in the pan, buttered side down, sprinkle on the cheese and top with the remaining slice of bread, buttered side up
  • Turn the heat down a notch and cook until golden brown, about 2-4 minutes.
  • Flip and cook until golden brown on the other side, about 2-4 minutes.

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Butter one side of 9 slices of bread, and place butter-side down on a baking sheet. Arrange cheese on each slice of bread. Spread butter on 9 remaining slices of bread, and place them buttered-side up on top of the cheese.
  • Bake in preheated oven for 6 to 8 minutes. Flip the sandwiches, and bake an additional 6 to 8 minutes, or until golden brown.

2 pieces sourdough bread or 2 pieces potato bread
3 slices cheddar cheese (Tillamook or your favorite, but Tillamook is so darned good! Real Cheddar from England would be acc)
2 tablespoons butter

Steps:

  • Cut the slices of cheddar cheese; not too thick, but not skimpy, either; cut one slice in half.
  • Take the two slices of bread and generously butter each of them on one side.
  • Heat up a cast iron skillet over medium heat.
  • Get yourself the cover from a Revereware saucepan, or another cover of about the same size.
  • Place one of the slices of bread, butter side down, in the hot skillet.
  • Spread 2 and a half slices of cheese on the bread, then cover it butter-side-up with the other slice of bread; eat the extra, unused half of the cheese slice.
  • Push the bread down a little with the metal spatula, then cover the whole thing up with the saucepan lid (the idea is to heat the air up underneath the lid and melt the cheese faster as you're also browning the bread).
  • Uncover every minute and check the cooking bread color- you want it golden, not burnt (no matter what Mom says - she likes 'em black for some reason).
  • When it's to the color you like, carefully flip the sandwich over, press down on it with the spatula to squish the bread and cheese together, and re-cover with the saucepan to continue melting the cheese.
  • After about 3-5 minutes of slow cooking, you'll have a wonderfully golden, melty, gooey grilled cheese sandwich!

8 slices sourdough bread
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
4 ounces Brie cheese, rind removed and sliced

Steps:

  • Spread 3 tablespoons butter on 1 side of bread slices. Toast bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, mix together mayonnaise, Manchego cheese, onion powder and remaining 3 tablespoons butter. In another bowl, combine cheddar, Monterey Jack and Gruyere. , To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie. Top with remaining bread slices, toasted side facing inward. Spread mayonnaise mixture on the outsides of each sandwich. 1 piece ciabatta bread, 5 by 10 inches
12 slices Emmentaler Swiss cheese
1 medium vine-ripe tomato, thinly sliced
Coarse salt and freshly ground pepper
1/2 cup fresh basil leaves
4 tablespoons unsalted butter, room temperature

Steps:

  • Preheat a grill pan over medium heat. Using a serrated knife, carefully slice ciabatta horizontally into thirds; reserve top and bottom crust for bread slices.
  • Place bread slices on work surface, crust side down; butter cut side of each slice. Top 1 slice with 6 slices cheese, tomato slices seasoned with salt and pepper, and basil leaves. Top with 6 more slices cheese and then with remaining bread slice, buttered side down. Butter 1 exterior side of sandwich, seasoning with salt and pepper; halve sandwich to fit grill pan.
  • Place sandwich butter side down onto grill pan. Weight sandwich with a large cast-iron skillet; cook until golden, about 3 minutes. Remove from pan, butter exterior side of top bread slice; turn, weight down sandwich, and cook for 3 minutes more. Repeat with remaining sandwich half. Slice sandwiches crosswise into 2-inch pieces.   • Pick the best bread. Will mediocre bread be improved when heated and layered with cheese? Yes, definitely. But using better bread will take your grilled cheese to a whole new level.
  • Butter — or mayo — up! Standard procedure for grilled cheese is to butter the outsides of the bread before placing it in the pan — for more flavor, butter both sides, inside and out.
  • Pre-toast the bread. Grilled cheese is supposed to be quick and fuss-free and this does add an extra step, but it’s well worth the effort and hardly any trouble.
  • Use the right cheese. There’s absolutely nothing wrong with using American cheese — it’s a classic for a reason — but there’s a whole world of cheeses out there just waiting to be melted between two slices of bread.
  • Don’t use too much cheese. Beyond using the right cheese, you want to use the proper amount of cheese. There has to be enough that the sandwich is sufficiently cheesy but not so much that the cheese spills out the sides and creates a mess.
  • Dress up your grilled cheese. Cheese should always be the star of the show, but there’s no reason why fontina or cheddar can’t share the spotlight with a few supporting players.
  • Go low and slow. Think like a barbecue pit master and exercise patience when making grilled cheese. Keep the heat in the medium to medium-low range and adjust it as you cook, ensuring that the bread toasts at the same rate that the cheese melts.
  • Press down for a panini-style grilled cheese. If you own a panini press, by all means use it to make grilled cheese. But if not, you still have options for making your grilled cheese super crispy.
