PERANAKAN CUISINE: 5 DISHES YOU HAVE TO TRY - MICHELIN …

From guide.michelin.com
  • Ayam Buah Keluak. A quintessential Peranakan dish, the ayam buah keluak is unique for its use of the seeds of the kepayang, a tall tree native to the mangrove swamps of Malaysia and Indonesia.
  • Babi Pongteh. Usually prepared with pork trotters, belly or any part of the animal with a substantial amount of fat, babi pongteh is a braised pork dish cooked down with taucheo (read: preserved fermented soy bean paste) and gula melaka, a type of sugar that is so named for its roots in Malacca, Malaysia.
  • Laksa. It’s one of our favourite Peranakan dishes for its two vastly different variations – laksa lemak, the version we are most familiar with as Singaporeans and the tangy assam laksa characteristic of Malaysia’s Peranakans.
  • Nonya Chap Chye. Hokkien for “mixed vegetables”, chap chye is a simple stir-fried vegetable dish with its roots in Fujian province. It’s surprising how the mild-looking dish has managed to hold its own among the spicy, sharper flavours of Nonya cuisine.
  • Kueh Salat. If you see a kueh salat in a radioactive-looking green claiming to be all-natural, run. Today, the most natural way to get the green on the custard of a kueh salat is by blitzing up a lotof pandan leaves.

10 PERANAKAN FOOD PLACES IN SINGAPORE TO ENJOY NYONYA CUISINE ...

From eatbook.sg
  • Chilli Padi Nonya Restaurant. Famed for their particularly piquant sambal belacan, Chilli Padi Nonya Restaurant is a favourite among fans of the cuisine.
  • Charlie’s Peranakan Food. While many people enjoy going to restaurants for their Peranakan fix, you can get equally authentic stuff at hawker stalls too!
  • Guan Hoe Soon Restaurant. Guan Hoe Soon Restaurant has been serving Peranakan food since 1953, making it one of the oldest of its kind in Singapore.
  • Molly’s Nonya Cake & Confectionery. When it comes to old-school Nyonya kueh, Molly’s is one name that frequently crops up in conversations.
  • Godmama. The previous entries are cut from the same cloth—they all serve traditional and homely dishes. Godmama, however, serves Peranakan food with a modern twist.
  • Nyonya Pok Pok Kay. Hawker stall Nyonya Pok Pok Kay doesn’t have the extensive menu of the restaurant picks on this list—they only have two dishes on their menu—but that doesn’t mean their Peranakan food is any less tasty.
  • Violet Oon. The exquisite Peranakan and Singaporean fare that Violet Oon serves can be attributed to the restaurant’s namesake, who’s one of the more prominent figures in our local food scene.
  • Ji Xiang Ang Ku Kueh. Ji Xiang Ang Ku Kueh is an obvious place to visit for some good ol’ ang ku kueh, and for good reason. Their Everton Park flagship stall has been making those red tortoise-shaped cakes since 1988, and though they have since opened outlets across the country, fans of the brand insist the kueh is as delectable as ever.
  • Candlenut. As the world’s first Michelin-starred Peranakan restaurant, Candlenut has a high bar to meet. More often than not, however, diners come away raving about how superb the food is.
  • Babas Peranakan. Here’s another affordable Peranakan food option to check out. Hawker stall Babas Peranakan offers cai png with—you guessed it—Peranakan dishes.

PERANAKAN CUISINE - WIKIPEDIA
Nyonya cooking is the result of blending Chinese ingredients with various distinct spices and cooking techniques used by the Malay/Indonesian community. This gives rise to Peranakan interpretations of Malay/Indonesian food that is similarly tangy, aromatic, spicy and herbal. In other instances, the Peranakans have adopted Malay cuisine as part of their taste palate, such as assam fish and beef rendang. Key ingredients include coconut milk, galangal (a subtle, mustard-sc…
