PEPPERONI PIZZA LOAF

This savory stromboli starts with frozen bread dough, so it comes together in practically no time. The golden loaf is stuffed with cheese, pepperoni, mushrooms, peppers and olives. 1 loaf (1 pound) frozen bread dough, thawed
2 large eggs, separated
1 tablespoon grated Parmesan cheese
1 tablespoon olive oil
1 teaspoon minced fresh parsley
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon pepper
8 ounces sliced pepperoni
2 cups shredded part-skim mozzarella cheese
1 can (4 ounces) mushroom stems and pieces, drained
1/4 to 1/2 cup pickled pepper rings
1 medium green pepper, diced
1 can (2-1/4 ounces) sliced ripe olives
1 can (15 ounces) pizza sauce

Steps:

  • Preheat oven to 350°. On a greased baking sheet, roll out dough into a 15x10-in. rectangle. In a small bowl, combine the egg yolks, Parmesan cheese, oil, parsley, oregano, garlic powder and pepper. Brush over the dough. , Sprinkle with the pepperoni, mozzarella cheese, mushrooms, pepper rings, green pepper and olives. Roll up, jelly-roll style, starting with a long side; pinch seam to seal and tuck ends under., Position loaf with seam side down; brush with egg whites. Do not let rise. Bake until golden brown and dough is cooked through, 35-40 minutes. Warm the pizza sauce; serve with sliced loaf., Freeze option: Freeze cooled unsliced pizza loaf in heavy-duty foil. To use, remove from freezer 30 minutes before reheating. Remove from foil and reheat loaf on a greased baking sheet in a preheated 325° oven until heated through. Serve as directed.

4 tablespoons prepared pesto
4 slices provolone cheese
4 slices part-skim mozzarella cheese
5 teaspoons olive oil
Marinara sauce warmed, optional

Steps:

  • Spread four bread slices with pesto. Layer with cheeses; top with remaining bread. Spread outsides of sandwiches with oil., In a large skillet over medium heat, toast sandwiches for 3-4 minutes on each side or until cheese is melted. Serve with marinara if desired.

2 (8 ounce) packages grated Parmesan cheese
2 cups shredded mozzarella cheese
1 ½ cups ricotta cheese
4 eggs
1 (3 ounce) package prosciutto, chopped
2 tablespoons chopped fresh parsley
2 (9 inch) prepared pie crusts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cook and stir sausage in a large skillet over medium heat until browned, 5 to 8 minutes. Drain.
  • Mix Parmesan cheese, mozzarella cheese, ricotta cheese, and eggs together in a bowl. Stir in sausage, prosciutto, and parsley.
  • Roll 1 pie crust into an 11-inch circle on a lightly floured work surface. Transfer to a pie plate, leaving a 1/2-inch overhang. Pierce crust all over with a fork. Spread cheese and sausage mixture over crust. Roll second pie crust into a 12-inch circle; place on top. Seal and flute edges. Cut several slits in the top crust to permit steam to escape.
  • Bake in the preheated oven until center is set and crust is browned, about 1 hour.

1 pound any shape pasta (such as penne, farfalle, elbows)
1 pound Italian sausage
1 green bell pepper, diced
½ sweet onion, diced
4 ounces sliced pepperoni, cut into bite-sized pieces
2 ounces sliced black olives
2 ounces cream cheese
1 (24 ounce) jar RAGÚ® Old World Style® Traditional Sauce
2 cups shredded mozzarella cheese
½ teaspoon Italian seasoning

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 9x13-inch baking dish with cooking spray.
  • Bring a large pot of water to a boil and cook the pasta according to package directions.
  • While pasta is cooking, cook the sausage in a skillet over medium heat until just lightly pink. Add green bell pepper and onion to the sausage. Continue cooking until the meat is cooked through. Add the pepperoni, olives, cream cheese, and sauce. Cook over low heat until heated through and cheese has melted.
  • When pasta is done, drain and return to the pot. Stir the sausage mixture into the pasta; stir to coat the pasta.
  • Add half of the pasta mixture to prepared baking dish. Top with half of the mozzarella cheese. Spread the remaining pasta over the cheese and top with the remaining mozzarella cheese. Sprinkle with the Italian seasoning and place a few pepperoni slices on top, if you like.
  • Bake until the cheese has melted and the pasta is heated through, about 15 minutes.

1 fresh pizza dough (, I use s'kat's Easy Pizza Dough, storebought okay)
1 egg, lightly beaten
3 tablespoons fresh tomato sauce (, I use Andrea's)
3 cloves garlic, minced
2 ounces sliced buffalo mozzarella, well drained
12 slices pepperoni
5 leaves fresh basil, crumbled

Steps:

  • Preheat oven to 375.
  • Place pepperonis on tinfoil in oven and bake for about 5 minutes, or until grease begins to come up.
  • Remove, drain, and pat dry.
  • Roll out dough into a rectangular shape.
  • Brush gently with egg.
  • Layer fresh tomato sauce, garlic, mozzarella, pepperoni, and basil onto dough.
  • Roll dough jelly-roll style, place onto baking stone and bake 35-40 minutes.
  • Remove and let cool 5 minutes.
  • Slice and serve.
  • Variations: Saute onions or scallions on stove top and add to filling.
  • Additionally, add mushrooms, pepperoncinis, tomatoes, or kalamata olives.

2 cups plain flour
7 g sachet dried yeast
1 teaspoon sugar
3/4 cup warm water
4 slices mozzarella cheese
15 slices soft salami
1/2 cup tomato sauce
1/2 teaspoon dried oregano leaves
250 g broccoli
1 egg
320 g sliced red peppers
125 g pepperoni salami, in a piece
20 stuffed olives

Steps:

  • Dough:.
  • Make well in sifted flour.
  • Stir in combined yeast, sugar and water.
  • Mix to a firm dough.
  • Knead for about 5 minutes on floured surface until smooth and elastic.
  • Using 3/4 of the dough, roll out to a rectangle large enough to line a greased loaf tin (base measures 9cm x 22cm).
  • Leave 2cm of dough over edge.
  • Filling:.
  • Place layer of mozzarella evenly over dough.
  • Top with rolled up soft salami.
  • Pour over combined tomatoes sauce and oregano.
  • Break broccoli into small flowerets, drop into pan of boiling water, boil 1 minute, refresh under cold water.
  • Arrange broccoli over tomato sauce.
  • Top evenly with beaten egg.
  • Drain peppers well, place over broccoli.
  • Remove skin from pepperoni, slice very thinly, arrange neatly over red peppers.
  • Cut olive in half lengthways, place in a row down centre of the loaf.
  • Roll out remaining pizza dough large enough to cover top of loaf, place on top, join edges with a little water, pinch together.
  • Decorate top with scraps of dough, cut a few slits to allow steam to escape.
  • Bake in moderately hot oven 40 minutes.
  • Remove from tin, place onto an oven tray, bake further 10 minutes to brown sides.
  • Cover top with aluminium foil if it is getting to brown.
  • Allow to become cold before cutting.
