CRISPY PEPPERONI CHIPS
Steps:
- Preheat the oven to 425 degrees F.
- Lay the pepperoni slices in a single layer on a baking sheet and bake for 8 to 10 minutes.
- Remove the pan from the oven and soak up the excess grease by pressing paper towels against the pepperoni chips. Return the pan to the oven and bake an additional 2 to 4 minutes, until the pepperoni slices are very crispy.
- Serve as a snack anytime or use in place of crackers for dipping or for topping with your favorite cheese! They'll stay fresh and crispy for 1 to 2 days if you store them in an airtight container.

Crisp little chips of pepperoni that are an excellent snack with beer or even a glass of wine. They are quite addictive. From World Wide Recipes. UPDATE (10-27-06): I have always purchased Hormell pepperoni, but recently tried an off brand and found that they burned very quickly when I baked them. The length of time for baking will depend on your oven and the pepperoni. You will need to adjust to find the proper time for you...it could be up to 20 minutes.

HOMEMADE PEPPERONI PIZZA
A great recipe for Homemade Pepperoni Pizza that can be adapted to accomodate any topping you like.

- Pizza Base
- Mix salt and yeast together in a jug with the water. Place flour in a bowl, make a well in the centre and add the water mixture along with the oil
- Use a wooden spoon to mix everything to create a wet dough. Put on floured surface and need for 5mins.
- Place in greased bowl and cover with tea towel. Leave at room temperature to rise for 30mins (should double in size).
- Round into pizza base and stab with fork several times.
- Pizza Topping
- Spread tomato puree over the base. Add chopped tomatoes on top then add onion and garlic.
- Sprinkle over cheese and arrange Pepperoni. Season with salt and pepper and sprinkle on basil.
- Cooking
- Place on oiled baking sheets.
- Add topping.
- Cook at 200° for 20mins.

Instead of ordering pizza for your next party, wow your guests with these crispy, caramelized, pizza-flavored cheese chips! Since everybody agrees that the best parts of a pizza are those spots where the cheese sort of drips off and caramelizes onto the pan, getting crispy, crusty, and incredibly delicious, I took those cheesy drips and made chips! - Preheat the oven to 400 degrees F (200 degrees C). Line a 13x18-inch, half-sheet pan with parchment paper.
- Grate provolone and mozzarella cheeses with the larger side of a box grater into a large bowl. Use the smaller side and grate in Parmigiano-Reggiano cheese. Toss with your hands to combine.
- Scoop tablespoonfuls of the cheese mixture into 12 circular piles on the prepared baking sheet, making sure you're getting all three cheeses in each scoop. Top each circle with about ¾ teaspoon pizza sauce, then place a slice of pepperoni on top.
- Bake in the center of the preheated oven until melted and sizzling, 12 to 15 minutes.
- Remove parchment paper and chips to a wire rack to cool. Line the baking sheet with a fresh sheet of parchment paper.
- Repeat Steps 3 to 5 to bake remaining 18 chips.
- Let chips cool to room temperature, 15 to 20 minutes. Remove from the parchment paper and serve.
