I'm single and I love finding recipes that are both inexpensive and fast to fix. These little pizza-flavored pockets call for on-hand ingredients and bake in just 10 minutes in the toaster oven.

Ingredients

3 tablespoons tomato sauce
3/4 teaspoon olive oil
1/4 teaspoon onion powder
1/4 teaspoon dried oregano
1/8 teaspoon garlic powder
1 tube (6 ounces) refrigerated flaky buttermilk biscuits
10 slices pepperoni
2 tablespoons grated Parmesan cheese

Steps:

In a small bowl, combine the tomato sauce, oil and seasonings. Cut each biscuit in half. Place 1 pepperoni slice on each half; fold dough over pepperoni and pinch edges to seal. Dip in tomato mixture. , Place in a shallow baking pan coated with cooking spray. Sprinkle with Parmesan cheese. Bake in a toaster oven at 450° for 10-12 minutes or until golden brown.

1 cup mozzarella cheese (shredded)
1/2 cup pepperoni (chopped)
1/2 cup pizza sauce
2 packages refrigerated biscuits
1 tablespoon milk
1/4 cup parmesan cheese

Steps:

For filling; combine cheeses (1/2 of the parmesan), pepperoni and sauce, set aside.
Separate the biscuits.
Flatten to 3" circles.
Place one rounded tablespoon of filling in the center of each biscuit.
bring edges of dough together, pinch edges of dough to seal.
Place, seam side down on greased baking sheet, brush with milk.
Sprinkle with parmesan cheese.
Bake in a 350° preheated oven for 12- 15 minutes or until golden brown.

4 ounces swiss cheese, shredded
3/4 cup mayonnaise
2 tablespoons pesto sauce
2 (10 ounce) packages ready-to-bake refrigerated buttermilk flaky biscuits

Steps:

Preheat oven to 350 degrees.
In bowl, combine pepperoni, cheese, mayo and pesto. Cut each biscuit in half. Place biscuit halves into greased miniature muffin cups, pressing gently to fit cups. Spoon 1 tablespoon of filling into each cup. Bake 20-25 minutes. Serve warm.

1/4 cup shortening, melted and cooled
3/4 cup finely chopped pepperoni
1/3 cup finely chopped onion
1/3 cup finely chopped green pepper
3/4 cup milk

Steps:

Preheat oven to 400 degrees F.
Combine soup mix, flour, and baking powder. Stir in the rest of the ingredients. Drop on greased cookie sheet by teaspoonfuls. Bake for approximately 12 minutes.

Cut each biscuit in half. You will have 24 biscuit halves. Roll each half as big as you can get it with a rolling pin or you could use a glass. Spread each half with pizza sauce, one slice of pepperoni, a pinch of shredded mozzarella cheese and chopped onion. Roll the biscuit half up, tuck in ends and place in baking dish sprayed with cooking oil. I used a 10 inch pie plate to make these. Do this with all 24 biscuit halves. Sprinkle on dried oregano and garlic powder. Drop on some extra pizza sauce with a spoon on the tops of the pizza balls and add about 1/2 cup shredded cheese.
Bake in preheated 400 degree oven for 20 to 25 minutes until biscuits are cooked. Pull off pieces or slice. Makes about 6 servings.
