1 tablespoon unsweetened cocoa powder
1 tablespoon white sugar
1 pinch ground cinnamon
¼ teaspoon vanilla extract
¾ cup milk
1 peppermint candy cane

Steps:

  • Stir 2 tablespoons milk, cocoa powder, sugar, cinnamon, vanilla extract together in a mug until well blended.
  • Microwave 3/4 cup milk on high for 2 1/2 minutes in a microwave-safe mug. Pour the hot milk over the cocoa mixture; stir with candy cane.

I have not tried this recipe. I'm posting this recipe for a request from the boards. This recipe is from My Great Recipes. Although peppermint chocolate bonbons sound fancy and complicated, they are one of the simplest confections to prepare. The trick is to purchase real chocolate and then melt it over very low heat. It makes a thoughtful gift when packed in a decorative, reusable tin or box.

1 cup real semi-sweet chocolate chips (6oz)
1/3 cup butter or 1/3 cup margarine
1/4 cup whipping cream
1 cup unsifted powdered sugar
1/4 teaspoon peppermint extract

Steps:

  • Tips: To shape the candies into uniform balls, use a #70 or smaller ice cream or sherbet scoop. For an interesting effect, roll the shaped, chilled candies in cocoa before serving.
  • Mix chocolate chips, butter and cream in a heavy saucepan.
  • Place over very low heat and stir until chips and butter are melted and mixture is smooth and thick. Remove from heat.
  • Beat in the powdered sugar until mixture is smooth again. Stir in the peppermint extract.
  • Cover and chill about 1 or 2 hours until mixture is thick enough to shape or drop into small candy cups.
  • Divide the mixture into 24 portions.
  • Drop into paper bonbon cups or first roll into small balls before placing into cups.

4 ounces sugar
3 ounces sorbitol
2 ounces inverted sugar
1 ounce dextrose powder
1 ounce peppermint extract
1 vanilla bean, split and seeded
5 tablespoons butter
7 ounces 65-percent dark chocolate
7 ounces 38-percent milk chocolate

Steps:

  • In a large pot set over medium heat, add the cream, sugar, sorbitol, inverted sugar, dextrose, peppermint and vanilla seeds, and cook until a candy thermometer inserted in the pot reads 113 degrees F. Cool the mixture to 95 degrees F.
  • In a separate pot, heat the butter, dark chocolate and milk chocolate to melt, then cool the chocolate to 86 degrees F. Using an electric hand mixer, blend the chocolate with a little of the cream mixture. Slowly mix in the remaining cream mixture. Cool to 82 degrees F, then pipe into the bonbon molds and refrigerate until set, about 1 hour 30 minutes.

4 cups confectioners' sugar
1 cup ground pecans or walnuts
1/2 cup plus 2 tablespoons sweetened condensed milk
1/4 cup butter, softened
3 cups semisweet chocolate chips
2 tablespoons shortening

Steps:

  • In a large bowl, combine confectioners' sugar, pecans, milk and butter. Roll into 1-in. balls. Place on waxed paper-lined baking sheets. Cover and refrigerate overnight., In a microwave, melt chocolate chips and shortening; stir until smooth. Dip balls in chocolate; allow excess to drip off. Place on waxed paper; let stand until set. (If balls are too soft to dip, freezer until firm, 3-5 minutes.)

1 cup crushed peppermint or spearmint candies, divided
1 cup semisweet chocolate chips

Steps:

  • In a microwave, melt white chocolate at 70% power; stir until smooth. Stir in 1/3 cup crushed candies. Repeat with chocolate chips and an additional 1/3 cup candies. Alternately drop spoonfuls of chocolate and white chocolate mixtures onto a waxed paper-lined baking sheet., Using a metal spatula, cut through candy to swirl and spread to 1/4-in. thickness. Sprinkle with remaining crushed candies., Refrigerate until firm. Break into pieces. Store between layers of waxed paper in an airtight container.
