Steps:
- Combine all ingredients in order, except syrup, in a bowl mixing well. Let batter sit for about 30 minutes for fluffier pancakes.
- While the batter is sitting about 10 minutes before you are ready to cook begin, to heat the griddle or skillet to medium heat and spray with non stick cooking spray.
- Spoon out the batter into about sand dollar size and let it cook on one side until the batter begins to bubble, then flip over and cook until done. This typically just takes 2-3 minutes. It should release fairly easily from the griddle and you can be sure that the bottom is browned.
- Continue until all pancake batter is used.
- Serve topped with chocolate syrup.

PEPPERMINT BOSTON CREAM PANCAKES

- For the pancakes: Preheat the oven to 200 degrees F. Whisk together the pancake mix and baking powder in a large bowl. Add the milk, oil and eggs and stir until completely incorporated and combined. Stir in 1/3 cup of the crushed candy canes.
- Preheat a griddle over medium heat. Spray the griddle with nonstick cooking spray and drop the batter in 1/4 cupful mounds on the hot griddle (using a small ice-cream or cookie scoop helps). Cook until bubbles form and pop in the top of the batter and the underside is golden brown, about 2 minutes. Flip and cook 2 minutes more. Remove to a baking sheet. Keep warm in the oven while you repeat with the remaining batter.
- For the vanilla cream filling: Add the cream cheese to the bowl of a stand mixer fitted with a whisk attachment and whip until smooth. Add the confectioners' sugar and vanilla and beat until smooth and incorporated. Add the heavy cream and whisk on high speed until stiff peaks form.
- For the chocolate sauce: Add the chocolate to a medium bowl. Heat the heavy cream in a small saucepan or in the microwave until just simmering, and then pour over top of the chocolate. Let sit for 1 minute to melt, then whisk until smooth.
- To serve: Place 1 pancake on a serving plate. Spread with a few tablespoons of the vanilla cream. Top with another pancake and spread with another few tablespoons of the vanilla cream. Drizzle generously with the warm chocolate sauce sprinkle with the remaining crushed candy canes.
APPLE BACON CREPES WITH MAPLE CREAM CHEESE FROSTING

- For the frosting: Beat together the butter, cream cheese, confectioners' sugar and maple syrup in the bowl of a stand mixer fitted with a paddle attachment (or use a hand mixer) until smooth and creamy.
- For the apple-bacon filling: Cook the bacon in a medium skillet over medium heat until the fat renders out and the bacon becomes crispy. Scoop out the bacon and place on a paper-towel-lined plate. Add the apples to the bacon fat and cook over medium heat until the apples are tender, 10 to 15 minutes. Add the maple syrup and cinnamon and cook until sticky and caramelized, 1 to 2 minutes more. Remove from the heat and set aside.
- For the crepe batter: Whisk together the cake mix, milk, egg and egg white in a large bowl until smooth. Heat a 10-inch nonstick skillet and spray liberally with nonstick cooking spray. Ladle about 3 ounces of batter into the pan and cook over medium heat until the bottom starts to brown and the top of the crepe begins to bubble, 1 to 2 minutes. Work around the edge of the crepe with a rubber spatula to begin to release it from the pan. Gently flip the crepe over, spraying more nonstick spray as needed. Cook until golden brown and cooked through, 30 seconds to 1 minute longer. Remove the crepe and place on a serving dish. Repeat with the remaining batter.
- To assemble: Spread the filling generously over half of each crepe and top with a few tablespoons of bacon. Fold the tops of the crepe over and sprinkle with confectioners' sugar. Sprinkle additional bacon on top if desired.
POLAR BEAR PEPPERMINT CREAMS

- Sieve the icing sugar into a large bowl. Mix in the egg white, a little at a time - stop adding it when you have a soft dough that feels like plasticine.
- Add 3 drops of the peppermint essence, mix well and taste. Add another drop if it isn't minty enough.
- Roll half the mixture into 15 balls, about the size of cherry tomatoes, then flatten them with your hand to make the bear heads.
- Place on sheets of baking parchment on a large board or tray. Using half the remaining mixture, make blueberry-sized balls and flatten them out onto the heads to make snouts. Add chocolate sweets for the noses.
- Use the rest of the mixture to make the ears. Shape them into tiny balls and press them gently into the top of the heads with your fingertips. Use a cocktail stick to shape the eyes.
- Leave the polar bears to dry for 3-4 hrs, or overnight. Eat within 1 month.

- Sieve the icing sugar into a large bowl. Add a little of the egg white and a few drops of the peppermint essence and mix really well. You want the mixture to come together as a soft dough, so keep adding a little egg white until this starts to happen (you might not need to use all of it). Taste the mixture and add more peppermint essence if desired.
- Divide the mixture into 20 small balls, then flatten them gently with your fingertips into discs.
- Place baking parchment on a large board or tray and space out the discs. Meanwhile, tip the chocolate into a microwavable bowl and heat in 30 second intervals in the microwave until melted, stirring after each blast. Once melted, leave the chocolate to cool for 5-10 mins then carefully dip the peppermint creams in the melted chocolate until they are half coated. Lay them back on the baking parchment to set for 3-4 hours or overnight.

- Start off by making the pastry cream. Boil 1/4 cup of the milk. In a measuring jug, take rest of the milk, egg yolk and vanilla essence, and whisk it thoroughly. Mix cornflour and sugar in a separate container and add to the jug and whisk. Take the pot of boiling milk off the heat and start adding the mixture slowly into the boiling milk, while continuously whisking. The mixture will start thickening up and will become the consistency of the Boston Cream.
- Next, make the chocolate ganache. All you need to do is to take a microwaveable container, add the chocolate chips and cream and put it in the microwave on high for 30 seconds. Then stir it and check for lumps. If it hasn't melted all the way through, put it inside the microwave for an additional 10 seconds. Once all the lumps are removed, add in the butter and stir.
- Make the pancakes next. Mix all the dry ingredients first then add the eggs, butter and milk. WHisk well. The consistency will be smooth yet not watery.
- Heat a non-stick pan on medium heat and put some butter on the pan. Whirl it around the pan and wipe off the excess with a tissue paper. With a ladle, put one ladle of the pancake mixture and cook till bubbles start to appear on the surface. Then flip and took for an addition 1-2 minutes.
