- Press 1/2 teaspoon cracked pepper onto each side of each tuna steak and sprinkle lightly with salt. Heat oil in heavy medium skillet over medium-high heat. Add tuna to skillet and sear until cooked to desired doneness, about 3 1/2 minutes per side for medium. Transfer tuna to plates; tent with foil to keep warm. Add butter and shallots to same skillet. Sauté over medium heat until shallots soften, add mushrooms about 3 minutes. Remove skillet from heat. Add sesame oil, soy sauce and broth, then sherry. Place skillet over high heat and boil until sauce is reduced to 1/3 cup, about 8 minutes. Season with salt and remaining 1/4 teaspoon pepper. Slice tuna and place over prepared polenta.Spoon sauce over tuna. Sprinkle with toasted sesame seeds and chopped chives.

- Preheat oven to 350 degrees F (175 degrees C).
- Put peppers into a large pot with just enough salted water to cover; bring to a boil and cook until the peppers are just tender, about 5 minutes. Drain peppers thoroughly.
- Arrange peppers into a shallow baking dish with cavity-side up.
- Mix rice, tuna, celery, onion, and black pepper together in a bowl; add 1/2 cup plus 2 tablespoons mayonnaise and stir to coat. Spoon the rice mixture into the bell peppers. Pour water into the baking dish around the stuffed peppers. Sprinkle panko bread crumbs over the top of the stuffed peppers.
- Bake in preheated oven until the bread crumbs are browned, about 30 minutes.

- Place the butter in a 1 1/2 quart microwave-safe casserole dish. Place in the microwave and cook on high for 30 seconds. Add the celery, onion, and bell pepper. Stir well. Heat on high, uncovered, for 3 minutes, stirring halfway through the cooking time. If the veggies are still too crisp, cook for another 1-2 minutes. Add the tuna, cream of mushroom soup, chow mein noodles, black pepper, and soy sauce. Stir well then top with the remaining chow mein noodles. Cook in the microwave, uncovered, for 10 minutes on high heat or until the casserole is bubbly in the middle. Serve hot. Alternately, the casserole can be baked at 350 degrees F for 25 minutes or until heated through.
TUNA WITH GINGER-MUSHROOM CREAM SAUCE
I found this recipe on the web a few years back. You can tell its not one of my experiments, no hot peppers. It is one of my favorites and I get rave reviews when I cook it for friends. It works well with mahi mahi as too, though mahi mahi shouldn't be eaten rare. Not health food, but hey, that's what Decadent Saturdays are for.

Steps:
- Heat two tablespoons vegetable oil in a non-stick skillet over high heat.
- Pepper one side of the tuna steaks, place pepper side down and sear for two minutes.
- Turn tuna over and continue cooking, about two minutes for rare, four for medium.
- Transfer tuna to plate and keep warm.
- Add olive oil, green onions, cilantro, ginger and garlic to same skillet and saute about 30 seconds.
- Mix in mushrooms and soy sauce and simmer 30 seconds for shiitake, 1 minute for morels.
- Add half and half and simmer until thickened, about 3-4 minutes.
- Stir in lime juice.
- Spoon sauce onto plates and place tuna steak on top.
- Garnish with cilantro and a slice of pickled ginger.

- Sprinkle the tuna steaks on both sides with two tablespoons of the olive oil, and press in the cracked black pepper and sea salt. Preheat grill.
- Heat the remaining oil in a skillet, and saute the mushrooms until crisp. Toward the end of cooking, add the garlic and cook through. Add the beans and the thyme, and cook for a minute or two over moderate heat.
- Grill the tuna for three to four minutes on each side. (Rare is preferable, but cook the fish more if you want it more done.)
- Slice the tuna steaks on the bias. Arrange the vegetables down the center of an oval serving dish, and put the tuna slices on top. Garnish with lemon quarters and thyme sprigs.

- In large skillet, melt butter over medium-high heat until lightly brown.
- Add mushrooms and saute 4-7 minutes or until lightly browned and tender.
- Stir in Plum sauce, soy sauce, and ground ginger.

- Keep warm.

- Mix the basil, thyme and the black pepper together. Season the tuna with the mixture. In a hot saute pan, add the olive oil and sear the tuna until cooked rare or to desired temperature. Remove the tuna. Then add the bok choy with the wasabi, fish stock and the soy sauce to the hot saute. Reduce the stock by a quarter. Remove from heat and ladle the soy wasabi broth into the bowls and place the cooked tuna on the top of top of the bok choy.

Fusion cuisine gets scoffed at a lot, but it can work beautifully, as this dish, with its Latin and Asian influences, attests. - Heat the star anise and peppercorns in a small, dry skillet over medium-high heat until you can smell the pepper when standing over the pan, about 30 seconds. Remove from the heat and cool. Grind in a spice grinder or mortar and pestle. Combine the soy sauce and 1 tablespoon oil, and brush the mixture on all sides of the tuna. Sprinkle the tuna lightly on all sides with the peppercorn mixture and salt. Let it stand for 15 minutes, or refrigerate for several hours.

- Heat the olive oil in a small saucepan. Add the onion and fry on a low heat for 5 minutes.
- Add the garlic and the mushrooms and cook on a low heat for 5 minutes. The onion should be soft and translucent, not browned.
- Add the mushroom soup and stir. Pour milk into the soup can to fill about 1/4 then add to the pan.
- Add a good splash of white wine (if using) or a good dash of lemon juice instead. Leave to simmer on a low heat for 5 minutes.
- Stir in the tuna and seasoning and heat through. Best served with tagliatelle.
