EASY PORK FAJITAS
Dinner is ready in under 15 minutes with this easy pork fajitas recipe. One skillet dinner that you can top with cheese, sour cream and cilantro.

Steps:
- Spray a nonstick skillet with cooking spray.
- Heat the skillet over medium-high heat.
- Add the pork and pepper strips.
- Cook for 3-4 minutes until pork is lightly browned.
- Add the salsa and heat through.
- Wrap the tortillas in paper towels and microwave on high for 30 seconds to warm them.
- Spoon the pork mixture into the warmed tortillas.
- Top with cheese, sour cream and fresh cilantro, if desired.
- Serve with additional salsa.

My family likes to take a break from traditional beef dishes by substituting pork. Since we are big fans of Mexican food, these fajitas are a much-requested menu item.

- Cut pork into 4x1/2x1/4-in. strips; set aside. In a bowl or resealable plastic bag, combine orange juice, vinegar, garlic, oregano, cumin, seasoned salt and hot pepper sauce; mix well. Add pork; cover or close bag and chill for 1-2 hours. , In a skillet over medium heat, cook pork with marinade, onion and green pepper in oil until pork is not longer pink and vegetables are tender; drain., Place about 3/4 cup filling down the center of each tortilla; top with lettuce, tomatoes, salsa and sour cream if desired. Fold in sides of tortillas and serve immediately.

Steps:
- Heat the oil in a large skillet over high heat.
- Add pork, sprinkle with the salt and pepper.
- Cook, and stir constantly for 2 minutes.
- Add peppers, onion, garlic, cumin and fajita seasoning, continue to cook until the vegetables are crips-tender, about 3-4 minutes.
- Stir in the lime juice, and saute for about 2 more minutes.
- To serve, roll 3/4 cup meat mixture in each tortilla and garnish as desired.
- I like to put the meat and tortillas in a platter and bring it to the table, and let everyone make up their own.

Steps:
- If you can not find 3 different colors of peppers, use what you can find, as long as they're sweet peppers.
- Wash and remove the core and seeds from peppers; slice peppers lengthwise into 1/2" wide strips; if you cut them too narrow, they'll go limp before they brown.
- Heat a large heavy bottomed pot for several minutes over high heat; (I use my dutch oven).
- Add oil, swirl to coat bottom of pot.
- Add garlic, then peppers.
- Keep the heat high and stir frequently with a wooden spoon-a spatter-screen is helpful to keep oil contained while it cooks- it should sizzle and snap as it cooks or the heat is too low.
- You want the peppers' skins to get brown patches;cook until tender-crisp.
- Sprinkle with salt, stir and serve.
