These bite-size stuffed peppers are perfect for watching the big game or a quick snack for the kids after school. Ready in just 30 minutes, you can quickly put these together and have them ready for kick-off while you're preparing your drinks or other appetizers. Filled with cheese and pepperoni, these mini peppers become the perfect gluten-free appetizer.

Number Of Ingredients 6

1 (8-oz.) package cream cheese, softened
3 ounces pepperoni, finely chopped (about 2/3 cup)
1/2 cup shredded mozzarella
2 tablespoons chopped fresh basil, divided
3/4 teaspoons kosher salt
12 multicolored baby bell peppers, halved lengthwise, seeds removed

Steps:

  • Preheat oven to 400°. Line a baking sheet with parchment paper.
  • In a medium bowl, stir together cream cheese, pepperoni, mozzarella, 1 tablespoon basil and salt. Fill each of the bell pepper halves with about 1 1/2 tablespoons of the cream cheese mixture.
  • Arrange peppers on prepared baking sheet and bake until cheese is beginning to bubble and brown, 18-20 minutes. Garnish with remaining basil. Let cool slightly before serving.

1 package (8 ounces) cream cheese, softened
1 cup shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
6 bacon strips, cooked and crumbled
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
1 pound fresh jalapenos, halved lengthwise and seeded
1/2 cup dry bread crumbs
Sour cream, onion dip or ranch salad dressing

Steps:

  • Preheat oven to 325°. In a large bowl, combine cheeses, bacon and seasonings; mix well. Spoon about 2 tablespoonfuls into each pepper half. Roll in bread crumbs., Place in a greased 15x10x1-in. baking pan. Bake, uncovered, until cheese is melted and peppers are heated through, 15-20 minutes. Serve with sour cream, dip or dressing.

1 package (8 ounces) cream cheese, softened
1 cup shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
6 bacon strips, cooked and crumbled
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
12 medium jalapeno peppers, stems removed, halved lengthwise and seeded
1/2 cup dry bread crumbs
2 tablespoons ketchup
1/4 cup sliced almonds

Steps:

  • In a large bowl, combine the cheeses, bacon and seasonings. Spoon about 1 tablespoonful into each pepper half. Dip tops of stuffed peppers into bread crumbs. , Place a small amount of ketchup at the end of each popper; top with a sliced almond to resemble a fingernail. Place in a greased 15x10x1-in. baking pan. Bake, uncovered, at 325° for 20-25 minutes or until golden brown. ,

4 ounces sharp cheddar cheese, shredded
4 ounces monterey jack cheese, shredded
6 slices bacon, cooked and crumbled
1/4 teaspoon salt
1/4 teaspoon chili powder
1/4 teaspoon garlic powder
1 lb fresh jalapeno, seeded (halved lengthwise)
1/2 cup dry breadcrumbs
prepared onion dip or ranch salad dressing

Steps:

  • In a mixing bowl, combine cheeses, bacon and seasonings.; mix well.
  • Spoon about 2 Tbs. into each pepper half.
  • Roll in bread crumbs.
  • Place in a greased 15x10x1" baking pan.
  • Bake, uncovered, 300 degrees for 20 minute for spicy flavor, 30 minute for med. and 40 minute for mild.
  • Serve with sour cream or dressing.
  • NOTES : When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands. avoid touching your face. I omit the bacon in this recipe.
