1 tbsp rapeseed oil
1 onion , finely chopped
2 carrots , finely diced
2 celery sticks, finely diced
2 garlic cloves , thinly sliced
1 fennel bulb , halved and thinly sliced, fronds reserved
500g carton tomato passata
500ml reduced-salt chicken stock
2 tbsp chopped parsley
broccoli and potatoes or pasta and salad , to serve
400g pack lean turkey breast mince
4 tbsp porridge oat
1 tsp fennel seed , crushed
1 garlic clove , crushed
spray of oil

Steps:

  • Heat the oil in a large non-stick frying pan with a lid, then tip in the onion, carrots, celery, garlic and fennel, and stir well. Cover the pan and cook over a medium heat for 8 mins, stirring every now and then. Pour in the passata and stock, cover and leave to simmer for 20 mins.
  • Meanwhile, tip the mince into a large bowl. Add the oats, fennel seeds and leaves, the garlic and plenty of black pepper, and mix in with your hands. Lightly shape into 25 meatballs about the size of a walnut. Spray or rub a non-stick pan with a little oil and gently cook the meatballs until they take on a little colour. Give the sauce a stir, then add the meatballs and parsley. Cover and cook for 10 mins until they are cooked through and the veg in the sauce is tender. Serve with broccoli and baby potatoes in their skins, or pasta and salad.

1/4 cup plain dried bread crumbs
2 tablespoons whole milk
2 large eggs, lightly beaten
3/4 cup grated Romano
1 pound ground turkey, preferably dark meat
Salt and freshly ground black pepper

1/4 cup extra-virgin olive oil
5 cups tomato sauce, recipe follows
1 pound dried penne pasta
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
2 dried bay leaves
4 tablespoons unsalted butter, optional

Steps:

  • In a large bowl add bread crumbs milk and mix until well combined. Mix in eggs and 1/2 cup Romano cheese and mix well. Add turkey and gently combine, being careful not to overwork the meat. Season with salt and pepper. Shape into golf-size balls.
  • In a large skillet heat the oil over medium high heat. When almost smoking, add meatballs and without moving or turning the meat, allow it to brown for about 3 minutes. Turn meatballs and brown other side. Continue to cook until all sides are golden brown, about 8 minutes total. Add tomato sauce and bring to a boil. Lower heat and allow meatballs to simmer for 5 minutes. Turn off heat and keep warm on stove. Be careful not to overhandle the meatballs since they are soft and fragile.
  • In a large pot, bring to a boil 6 quarts of salted water. Add pasta and cook until al dente, about 8 minutes. Drain pasta in a colander. Do not rinse pasta with water since you want to retain the pasta natural starches so that the sauce will cling to the penne.
  • Remove meatballs from sauce and place in serving bowl. Pour some tomato sauce over meatballs, but leave about 1 cup of sauce in skillet. Place the cooked penne into the skillet with the remaining sauce and toss well. Pour sauced pasta into a large serving bowl. Serve alongside the meatballs.
  • In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 5 to 10 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5-10 minutes. Add tomatoes and bay leaves and simmer uncovered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors. Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce. If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to six months.

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, mix the beef, 1/4 cup parmesan, the breadcrumbs, egg, 1/2 cup basil, the minced garlic and 1/2 teaspoon salt in a large bowl with your hands until just combined. Form into 3/4-inch meatballs (about 20). Grate the tomatoes into a medium bowl; discard the skins.
  • Heat a large nonstick skillet over medium heat. Add the olive oil, then the meatballs. Cook, turning, until browned on all sides, 2 to 3 minutes. Add the sliced garlic and cook until just golden, about 1 minute. Gradually add the vodka, then the grated tomatoes and cream. Bring to a simmer and cook until the sauce thickens and the meatballs are cooked through, 8 to 10 minutes. Season with 1/2 teaspoon salt and a few grinds of pepper.
  • Add the pasta and the remaining 1/4 cup basil to the skillet; toss, adding the reserved cooking water as needed to loosen. Remove from the heat and add the remaining 1/2 cup parmesan; toss.

1/3 cup tomato paste
1/4 cup dry red wine or 1/4 cup tomato juice

1 lb lean ground beef

1/4 cup sliced pitted ripe olives

Steps:

  • Preheat oven to 375°F Cook pasta according to package directions. Drain well.
  • Meanwhile, in a food processor or blender, combine undrained tomatoes, tomato paste, wine or tomato juice, dried oregano, pepper and crushed red pepper. Cover and blend or process until smooth. Set aside.

1 cup chopped onions (use frozen to make it easy!)
2 (15-oz) cans tomato sauce
1 cup low-sodium beef broth (see note)
2 teaspoons garlic powder

1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes
10 ounces penne
16 ounces frozen beef meatballs
1/4 cup shredded mozzarella cheese

Steps:

  • Preheat the oven to 375°F.
  • Place the onions, tomato sauce, broth, and all of the seasonings in a 9×13" baking dish. Stir to combine (carefully so the sauce doesn't splash over the sides). Add the penne and press it down into the sauce. It should be completely submerged. If it isn't add a little more broth.
  • Spread the meatballs over the top and lightly press them into the pasta and sauce. They don't need to be completely submerged. If any of the penne pop up above the sauce, press them back in.
  • Cover the pan with foil and bake the pasta for 45 minutes. After the time is up, take the pan out of the oven and remove the foil. Carefully stir the pasta and meatballs. Place the pan back in the oven (uncovered) and bake the pasta for 15 minutes.

⅓ cup barbeque sauce
1 Tablespoon buffalo sauce
1 Tablespoon mustard

Steps:

  • Pre-heat the oven to 400 degrees.
  • In a large bowl, combine the ground turkey with the bread crumbs. It may be easiest to mix this with your hands.
  • Once combined, mix in the minced onion and garlic.
  • Roll the ground turkey mixture into 1 inch balls.
  • Heat stove to medium high heat.
  • Pour your olive oil into a pan or skillet.
  • Once the olive oil begins to bubble at the bottom, place your turkey meatballs in the pan or skillet.
  • Let each side of the pan or skillet cook the meatball until it begins to brown on the outside.
  • Brown the meatballs on all sides, then place them in a pan or baking dish and cook the meatballs at 400 degrees for about 20 minutes.
  • While the meatballs are cooking make the sauce as directed by combining the brown sugar and water until they are fully combined and melted together.
  • Add the orange marmalade, honey, barbecue sauce, buffalo sauce and mustard until it's fully combined.

¼ cup grated Parmesan cheese, divided
2 tablespoons egg substitute

¼ pound lean ground turkey
¾ cup meatless spaghetti sauce

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a baking sheet and a 1-quart baking dish with cooking spray.

1 teaspoon garlic salt
1 cup ketchup
½ cup packed sucralose and brown sugar blend (such as Splenda® Brown Sugar)
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray 20 muffin cups with cooking spray.
  • Mix ground turkey, ground sausage, crackers, eggs, soy milk, onion, 1 teaspoon Worcestershire sauce, Italian seasoning, and garlic salt together in a bowl. Fill each muffin cup 3/4-full with turkey mixture.

2 tbsp. butter
2 lbs. ground turkey
2 cups unseasoned bread crumbs
1/2 cup grated parmesan
1/2 cup yellow onion, grated
2 tbsp. fresh basil, chopped or 2 tsp. dried basil flakes
2 gloves garlic, minced
1/4 cup pine nuts, toasted
1/2 tsp. freshly ground pepper
1/4 tsp. salt
2 large eggs
2 1/2 tbsp. olive oil
3/4 cup dry white wine
4 cups penne pasta, cooked according to directions on package

Steps:

  • 1) Heat 2 tbsp. butter in large skillet over medium-high heat and begin to saute mushrooms. 2) Meanwhile, combine the turkey, parmesan, 1 1/2 cup bread crumbs, grated onion, basil, garlic, pine nuts, salt and pepper in a large bowl and mix well. Mix in eggs. 3) Form the turkey mixture into 20-22 2-inch round balls and lightly roll each in the remaining bread crumbs. 4) Remove mushrooms from skillet and add olive oil. Cook meatballs in two small batches until brown on all sides (about 5 minutes per batch). Add additional oil if neccessary. Remove the meatballs from the skillet and keep warm. 5) Add wine to the skillet and scrape all the browned bits from the bottom. Add the cooked pasta, the mushrooms and the meatballs back into the skillet, reduce the heat and simmer for 3-5 more minutes to warm thoroughly. Serve with grated parmesan.

  • Meanwhile, make the tomato sauce. Place a large frying pan over a medium heat and add a dash of olive oil. Once hot, add the onion and sauté for 5–6 minutes until soft, then add the garlic and cook for a further minute.
  • Stir in the tomato purée and continue to cook for 2 minutes, then add the chopped tomatoes, oregano, balsamic vinegar and a good pinch of salt and pepper.
  • To cook the meatballs, place a frying pan over a medium heat and add a dash of oil. Once hot, brown the meatballs in batches, turning frequently so they colour on all sides.
  • Add an extra teaspoon of oil to the frying pan the meatballs were browned in and gently sauté the courgette spaghetti over a medium heat, tossing occasionally, for 3–5 minutes, until soft but with a slight bite.
  • Divide the courgette spaghetti between serving bowls and top with the meatballs. Sprinkle with Parmesan, if using.
